ITALIAN BBQ CUBE STEAK (RACHEL RAY)
Rachael turns an inexpensive cut of meat into a delicious dinner. The whole family loves this! I serve it with salad and some orzo tossed with parmesan cheese, a little butter, and fresh-ground pepper.

Steps:
- Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Season the steaks with salt and pepper, and sear in the pan (working in batches if need be) until the steaks have a nice crust on the outside, about 3 minutes per side.
- Remove the cooked steaks from the skillet and reserve warm on a plate. Return the skillet to medium-high heat and add the pancetta or bacon, if using. Cook until golden brown and crispy, about 5 minutes.
- Add the onion and garlic to the pan, and cook until tender, about 5 minutes. Add the balsamic vinegar, brown sugar, Worcestershire and tomato sauce to the pan, season with salt and pepper, and bring up to a bubble. Reduce the heat to medium and simmer the sauce until lightly thickened, 3-4 minutes.
- Serve the steaks with a hearty pour of the Italian BBQ sauce and a fresh green salad alongside.

- In a small bowl, combine the basil, garlic powder and pepper. In a large skillet, saute the zucchini, tomatoes, onion and 1 teaspoon spice mixture in 1/2 teaspoon oil until zucchini is crisp-tender. Remove and keep warm. , Sprinkle the remaining spice mixture over cube steaks. In the same skillet, cook steaks in remaining oil over medium heat for 1-2 minutes on each side or until no longer pink. Sprinkle with Parmesan cheese. Serve with vegetables.

ITALIAN CUBE STEAK - YUMMY!
A simple-to-make recipe that's also inexpensive! Makes the house smell wonderful as it cooks, and tastes great on those chilly fall nights. We typically serve this over cooked egg noodles with a tossed green salad, but it would be nice over rice, as well. Enjoy!

- In a large resealable plastic bag, place the cube steak, flour, salt, and pepper. Seal, and shake to coat.
- Heat the olive oil in a large skillet over medium heat, and brown the cube steak.
- Reduce heat to low, and mix in the tomatoes, tomato sauce, onion, and Italian seasoning.
- Cover, and simmer at least 1 hour, stirring once.
- Place the zucchini in the skillet, and coat with the tomato sauce.
- Continue to simmer uncovered 10 minutes, or until zucchini is tender.

FOIL PACKET CUBE STEAK DINNER
This is a very comforting, hearty meal and is so easy to make. My husband's favorite part is the beefy gravy. Note: A few people have commented on the vegetables being undercooked. In response, I have adjusted the cooking time for this recipe. Also, one person commented on the meat being tough. This is probably because cube steak is generally a cheap cut of beef. For better results, I have used and would suggest flank steak.

- Preheat oven to 350 degrees.
- Line a 10 x 13-inch cake pan with aluminum foil, leaving enough extra foil on the long and short sides of the pan to easily seal into a foil packet later.
- Place cube steaks in aluminum foil in one layer.
- Combine condensed soup, milk and dry soup mix thoroughly and spread mixture over the meat.
- Arrange cubed (3/4-inch) potatoes (with or without skin), sliced celery (1/2-inch pieces) and baby carrots evenly over soup layer.
- Sprinkle 1 tbs. water over all vegetables.
- Seal the foil tightly, making sure that steam will not escape the packet.
- Bake for 1 hour and 15 minutes.
- Remove pan from the oven and allow to sit for 5 minutes before opening foil packet. If vegetables are not completely cooked, re-seal the packet and bake for another 15-20 minutes.
- Serve immediately.
- Notes: Instead of cubed steak, I've also used flank steak.

CUBE STEAK PARMESAN
This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
- Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
- Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

Steps:
- Preheat oven to 350 degrees.
- Put oil in skillet, and add cube steaks. Cook until just brown.About 8 minutes.
- Mix the tomato sauce with the basil, oregano, garlic, onion, and mushrooms.Pour over cube steak and put in preheated oven for 20-25 minutes.
- Top with the mozzerella, and then the parmesan cheese. Return to oven til melted. About 5 minutes.
