One of the few tiki drinks to feature amaro-in this case, Campari, the Jungle Bird is made with blackstrap rum, fresh pineapple, Campari, and lime.

Number Of Ingredients 6

1½ oz. blackstrap rum
1 ½ oz. freshly squeezed pineapple juice
¾ oz. Campari
½ oz. freshly squeezed lime juice
½ oz. simple syrup (1:1)
Garnish: pineapple chunk and/or pineapple leaf

Steps:

  • Combine all the ingredients except the garnish in a cocktail shaker filled with ice. Shake until chilled and strain into a double old-fashioned glass over a large ice cube. Garnish with the pineapple chunk or leaf (or both).

ISLAND SHRIMP AND PINEAPPLE SKEWERS WITH RUM BUTTER SAUCE



Island Shrimp and Pineapple Skewers with Rum Butter Sauce image

2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons minced fresh ginger root, plus 2 teaspoons
2 teaspoons minced garlic
1 teaspoon red pepper flakes
16 medium shrimp, shelled and deveined
1/3 pound sliced prosciutto
1 small pineapple, peeled, cored, and cut into 1-inch cubes
2 tablespoons minced shallots
1/2 cup dark rum
6 ounces (1 1/2 sticks or 12 tablespoons) cold unsalted butter, cut into pieces
1/4 teaspoon salt
1/8 teaspoon cayenne
1/2 cup minced fresh cilantro

Steps:

  • Preheat a grill to medium heat.
  • In a bowl, combine the lime juice, oil, 2 teaspoons of the ginger, garlic, and pepper flakes. Add the shrimp and pineapple chunks, toss to combine, and let marinate while the grill heats, about 15 minutes. Remove from the marinade.
  • Wrap the shrimp with the prosciutto. Alternately, thread the pineapple chunks and the wrapped shrimp onto metal or bamboo skewers. Grill until the shrimp are cooked through and the pineapple chunks are marked, 3 to 4 minutes per side. Remove from the grill. (Alternately, the skewers can be cooked under the broiler, turning as necessary to cook evenly and avoid burning.)
  • Make the sauce in a medium saucepan by combining the rum, shallots, and remaining 2 teaspoons of minced ginger. Bring to a boil. Reduce the heat and simmer until reduced to 3 tablespoons in volume, 3 to 4 minutes. With the heat on medium-low, whisk in the butter, 1 tablespoon at a time, adding each piece before the previous one has been completely incorporated. Continue until all the butter is incorporated and the sauce coats the back of a spoon, removing the pan from the heat periodically to prevent the sauce from getting too hot and breaking. Season with the salt and cayenne, and stir. Remove from the heat and transfer to a decorative bowl.
  • To serve, transfer the wrapped shrimp and pineapple chunks from the skewers to a platter. Sprinkle with the cilantro and serve with the rum butter sauce.

ISLAND BIRD: PINEAPPLE-RUM CHICKEN

1 1/2 cups jasmine rice, any brand
1 whole pineapple, cored and peeled
3 tablespoons vegetable oil
1 small yellow onion, diced
2 garlic cloves, chopped
Coarse salt
1/2 teaspoon crushed red pepper flakes
1/4 cup (a 2-ounce nip) spiced rum, such as Captain Morgan's
2 cups chicken stock or broth
4 6-ounce boneless, skinless chicken breast halves
Coarse black pepper
1/4 cup fresh flat-leaf parsley leaves (a generous handful), chopped
2 tablespoons fresh cilantro leaves (a palmful), chopped

Steps:

  • Cook the rice according to the package directions. While it cooks, make the chicken and sauce.
  • Cut the pineapple into bite-size chunks. Heat a medium saucepan over medium-high heat. Add 1 tablespoon of the vegetable oil, once around the pan. Add the onions, garlic, salt, and crushed red pepper flakes and cook for 2 minutes, stirring frequently. Add the pineapple chunks and the juice from the container, no more than 1/2 cup, and stir to combine. Remove the pan from the heat and add the spiced rum. Return the pan to the heat, keeping a little distance in case the pot flames up. You can flame it on purpose, if you want to look cool. Either way, let the alcohol cook away, 1 minute. Add the chicken stock and bring the mixture to a simmer, then cook until it reduces by half and has thickened slightly.
  • While the sauce is simmering, preheat a large nonstick skillet over medium-high heat with the remaining 2 tablespoons of vegetable oil. Season the chicken with salt and pepper and add to the hot skillet. Cook the chicken for 6 minutes on each side. For a smoky taste, grill the chicken on a grill pan or on an outdoor grill.
  • Slice the breasts and return to the large skillet. Pour in the pineapple and sauce and combine with a good shake of the pan. Add the parsley and cilantro to the pan and turn off the heat. Let stand for a minute or two. Serve up the jasmine rice and top with liberal ladles of the Island Bird.
  • You can often find whole pineapples already peeled and cored in pouches or tall plastic containers. Check the fresh produce section.

Steps:

  • Cook the rice by following the package directions; while the rice cooks, make the chicken and sauce.
  • Cut the pineapple into bite-size pieces.
  • Heat a medium saucepan over med-high heat.
  • Add in 1 tablespoon vegetable oil; add in the onions, garlic, salt, and crushed red pepper flakes; cook, stirring frequently, for 2 minutes.
  • Add in the pineapple chunks and the juice from the container (no more than ½ cup); stir to combine.
  • Remove the pan from the heat; add in the spiced rum.
  • Return the pan to the heat, keeping a little distance in case the pot flames up.

1 (3 to 4 pound) pineapple
Nonstick cooking spray
2 teaspoons butter
1/4 cup brown sugar
1/4 cup rum
1 pint light vanilla ice cream

Steps:

  • Cut the top and bottom off of the pineapple, peel and cut it crosswise into 8 rings, about 1/2-inch each. Use a spoon or apple corer to carve out the center core of each ring.
  • Spray a large grill pan with cooking spray and heat over a medium flame. Grill the pineapple, in 2 or 3 batches, for 2 to 3 minutes on each side, until it is nicely brown and grill marks have appeared. (You can also grill this on an outdoor grill sprayed with cooking spray before being heated.)
  • While the last batch of pineapple cooks, heat the butter, sugar and rum in a small saucepan over a low heat, stirring, until the sugar is dissolved and the sauce has thickened slightly, about 2 minutes. Remove the sauce from the heat.
  • Place a pineapple ring on each plate, scoop 1/4 cup of ice cream into the center of the ring, and drizzle about 2 teaspoons of sauce on top.

1 (18 ounce) Duncan Hines Moist Deluxe yellow cake mix
1/2 cup butter
1 cup powdered sugar
2/3 cup coconut rum
4 eggs
1 (6 ounce) package instant vanilla pudding
1/3 cup vegetable oil
1/3 cup water
1 cup crushed pineapple

Steps:

  • Grease and flower a bunt pan.
  • Preheat over to 350°F.
  • Mix together cake mix, 1/3 cup of coconut run, eggs, oil, water, vanilla pudding and drained crushed pineapple in mixer on med speed until smooth. 4. bake for one hour or until cooked through. 5. Glaze:. 6. Place butter, powdered sugar and 1/3 cup of coconut rum in the microwave for 2 minutes or until it boils and all the sugar is dissolved.
  • Leave the cake in the bunt pan.
  • While it is still hot, poke several holes around the cake and pour glaze over all the holes and the whole cake.
  • Let cook completely before you remove.
  • Looks very pretty garnished with strawberries, pineapple rings and other fresh fruit.
