1 bunch broccoli (1 1/2 pounds), cut into florets (about 5 cups)
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter, plus 2 tablespoons melted
1 1/2 pounds boneless, skinless chicken breast, cut crosswise into 1/2-inch-thick strips
1 small onion, finely chopped (1 cup)
8 ounces cremini mushrooms, sliced (about 2 1/2 cups)
3 tablespoons unbleached all-purpose flour
3 cups whole milk, room temperature
9 ounces shredded medium-sharp cheddar (3 cups)
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/2 cup sour cream
1 cup panko breadcrumbs
Cooked egg noodles or steamed white rice, for serving

Steps:

  • Preheat oven to 400 degrees. In a large straight-sided skillet, simmer 1/2 cup water over medium-high heat, then add broccoli and a pinch of salt. Cover, reduce heat to medium-low, and cook until crisp-tender, about 6 minutes. Drain well, then transfer to a large bowl; set aside. Wipe out skillet.
  • Pat chicken dry; season with salt and pepper. Melt 2 tablespoons butter over medium-high heat. Add half the chicken and cook, turning once, until browned and cooked through, about 4 minutes. Transfer to a plate. Repeat with remaining chicken; set aside.
  • 3. In same skillet, melt 2 tablespoons butter, then add onion and mushrooms. Cook, stirring occasionally, until tender and starting to brown, 6 to 7 minutes. Add flour and cook, stirring, 30 seconds. Slowly add milk, reduce heat to medium, and cook, stirring constantly, until mixture is thick enough to coat the back of a spoon, about 9 minutes. Add 2 cups cheese, Dijon, Worcestershire, cayenne, and sour cream; stir until combined. Season with salt and pepper. Add cheese sauce to bowl with broccoli, followed by chicken and accumulated juices; toss to combine. Transfer to a 2 1/2-quart baking dish.
  • In a small bowl, combine 2 tablespoons melted butter, panko, and remaining 1 cup cheese. Sprinkle over broccoli-and-chicken mixture. Bake until bubbly and golden, 20 to 25 minutes. Let cool 15 minutes, then serve over noodles or rice.

1 rotisserie chicken (all meat removed and chopped or shredded) (OR use about 1 pound of cooked chicken breasts, shredded or chopped)
10 ounces frozen broccoli florets, steamed-in-bag, excess liquid discarded
2 cans cream of mushroom soup
8 ounces sour cream
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon black pepper
1/4 teaspoon salt (omit if using salted pork rinds)
1 cup shredded cheddar cheese
1/2 cup crushed pork rinds
2 tablespoons melted butter

Steps:

  • Preheat oven to 350F. Gather all your ingredients. Pull meat from chicken and rough-chop or shred. Steam the broccoli in the microwave per the package directions, till tender-crisp (drain excess liquid). With a whisk, mix the soup, sour cream, and lemon juice in a bowl.
  • Spray a casserole dish with non-stick spray. Lay the broccoli and chicken at bottom of dish.
  • Pour the soup and sour cream mixture on top.
  • Sprinkle the seasonings on top. Blend well.
  • Sprinkle cheese and pork rinds on top. Pour melted butter over cheese and pork rinds and bake uncovered at 350F for about 30 minutes or until the topping is slightly browned.

2 boneless skinless chicken breast halve, sliced into bite sized pieces
1 large broccoli, cut into florets
1 cup slivered almonds
1/2 cup Parmigiano-Reggiano, grated
1 cup good chicken stock,
1 cup milk
1/2 cup cream
3 tbsp sherry
a pinch grated nutmeg
1/3 cup butter
4 tbsp flour
salt
freshly ground black pepper, to taste
oil
4 tbsp bread crumbs
2 tbsp butter, melted
1/2 tsp dried parsley

Steps:

  • Season chicken with salt and pepper, set it aside for 15 minutes.
  • In a bowl combine topping ingredients together. Set aside.
  • Prepare a pan, heat oil then cook the chicken pieces until slightly brown and just cooked around 5 minutes. Remove from pan then set aside.
  • In a pot add boiling water then place broccoli florets, gently simmer for 2 minutes. Drain then rinse with cold running water to stop it from cooking.
  • Using the same pan you used to cook the chicken, add the butter and melt in medium heat. Once melted add the flour and cook while stirring for 1 minute. Gradually pour chicken stock and milk while whisking to make a thick sauce.
  • Add the sherry, nutmeg, half of the cheese, salt and freshly ground black pepper then stir until cheese melts, cook for around 8-10 minutes in low heat.
  • In a casserole combine broccoli, chicken, almonds and remaining cheese.
  • Whip the cream until it forms soft peaks then fold into the prepared cheese sauce. Pour this mixture over the chicken and broccoli. Top with the prepared toppings.
  • Place in a 190C preheated oven and bake for 30-40 minutes. Once cooked remove from oven then serve.

No mayonnaise, no "cream of whatever" soups - just an old fashioned chicken divan recipe that is definitely worth the extra effort. You can substitute chicken thighs for the breasts and use any combination of shredded cheese that you happen to have on hand. You can also substitute any dairy product (i.e. cream) for the milk depending on how decadent you would like to be. The recipe can be doubled or tripled easily and it freezes beautifully. Serve over rice.

2 -4 boneless skinless chicken breasts
1 tablespoon extra virgin olive oil
3 tablespoons butter

3/4 cup chicken broth

  • Preheat oven to 325.
  • Steam broccoli for 5 minutes until crisp-tender. Alternatively, place broccoli in a shallow bowl and cover with plastic wrap. Microwave for 2-5 minutes (depending on the strength of your microwave) until crisp-tender. Drain in colander.
  • In a medium frying pan, saute chicken breasts in olive oil until lightly browned, about 4-5 minutes per side. Remove from heat and drain on paper towls.
  • In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to eliminate the taste of raw flour. Then gradually whisk in chicken broth, sherry and milk or half and half, until incorporated. Bring to a boil and then reduce to a simmer until the sauce is the consistency you desire. Add just a dash of nutmeg. Add 3/4 of the cheese blend and whisk until combined. Add salt and pepper to taste.

2 large, Kosher skinless chicken breasts ( bone can be left in (optional))
1 10 ounce package of frozen broccoli spears (thawed)
1 4 ounce can of mushrooms, reserve the liquid.
3/4 cup Kosher chicken broth
4 tbsp. margarine, divided
3 tbsp. all-purpose flour
1/2 tsp. Kosher salt
1/4 tsp. black pepper
1/3 cup bread crumbs (your choice)
1 tbs. fresh parsley, chopped
1 head broccoli (clean and separate into spears)

Steps:

  • Preheat oven to 350 degrees. In a small saucepan on low heat, melt 3 tbsp. margarine and gradually add the flour, stirring constantly. After 1 minute, slowly add the chicken broth and the liquid from the mushrooms. Stir until this boils and then add the mushrooms. Stir to combine, remove from heat. Set aside.
  • In a shallow 2 quart baking dish, add some vegetable oil. Arrange broccoli spears in dish. Season the chicken with salt and pepper. Add the chicken breast on top of the broccoli. Pour mixture over the chicken and bake for 45 minutes.
  • While this is baking, melt 2 tbsp. of margarine in a small bowl. Add the bread crumbs and the parsley and stir to combine. Sprinkle this over the casserole and bake for about 10 minutes, more. Remove from oven and let rest for a few minutes. before serving.

My mother grew up with a mother who was a Cordon Bleu chef. Her mom (my Granny) loved elevated casseroles and elegance-infused one-pot meals. My mother took this passion with her into her own military family kitchen. My mom is a natural wizard of good flavor and she made this classic recipe her own. What makes this truly a family tradition is the topping of crushed graham crackers instead of standard crackers. The sweetness with the curry is everything! This is my favorite recipe of hers and it always felt like home when she made it, no matter where we were in the world. She made it famous when my dad was a TAC (Training, Advising, Counseling) officer at West Point military academy. She would make a mountain of her chicken divan and the cadets would come over, eat a wheelbarrow of it and fall asleep on the floor. That's why this recipe is now known amongst our family and friends as "Cadet Dinner." Proud to say, our son who is now an active F-16 pilot, calls this one of his favorite dishes, too-so the tradition continues!

4 large or 6 small skinless, boneless chicken breasts (about 3 pounds total), thawed if frozen and patted dry

1 tablespoon unsalted butter, plus 3 more tablespoons melted
8 ounces cremini mushrooms, stemmed and diced
One 20-ounce bag frozen broccoli florets, thawed, drained and chopped into bite-size pieces
Two 10.75-ounce cans cream of chicken soup
1 cup mayonnaise
3/4 cup cooking sherry
1/4 cup lemon juice
3 tablespoons curry powder
1 1/2 cups shredded Cheddar
1 cup graham cracker crumbs
1 tablespoon dried parsley
3 cups your favorite cooked rice, for serving

Steps:

  • Preheat the oven to 375 degrees F. Using a little olive oil or cooking spray, coat a 9-by-13-inch baking dish for easy release after baking.
  • Heat the 2 tablespoons olive oil in a large skillet (at least 12 inches in diameter, with a lid) over medium-high heat. Season both sides of each breast with salt and pepper. Once the oil shimmers, place the chicken breasts into the hot skillet all tucked in next to each other (like socks in a drawer!). Brown the first side for about 6 minutes. Flip each chicken breast to the other side for additional browning, another 6 minutes. Add the 1 tablespoon butter to the skillet, pop on the lid and turn the heat down to medium low. Leave it alone for 3 minutes. Make sure the internal temperature of each chicken breast is 165 degrees F, then remove to a plate and let them rest for a minimum of 5 minutes. Set aside.
  • Heat the remaining 1/2 teaspoon olive oil in a small skillet over medium heat. Cook the mushrooms, stirring continuously, until they are a light brown, 3 to 5 minutes. Remove to a plate and set aside.
  • Cut the chicken into bite-size pieces and transfer to a large bowl (at least 6 quarts in size). Add the mushrooms, broccoli, both cans of soup, mayonnaise, sherry, lemon juice and curry powder. Mix together thoroughly, then transfer to your prepared baking dish. Evenly sprinkle the cheese on top and set aside.
  • Combine the graham crackers with the parsley and melted butter in a small bowl. Sprinkle the crumbs evenly over the cheese.
  • Place the casserole on a sheet pan and bake in the oven until the top is browned and the casserole is bubbly, 35 to 40 minutes. Serve over your favorite cooked rice.

2 teaspoons chicken bouillon, I prefer 'Better Than Bouillon' or use 2 bouillon cubes
1 teaspoon fresh ground pepper
1 cup grated cheddar cheese
2 tablespoons butter, melted
1/4 teaspoon kosher salt
3/4 cup plain breadcrumbs

Steps:

  • Preheat oven to 350°F. Coat a 9×13 baking dish with nonstick spray and set aside.
  • In a large bowl combine the chicken and broccoli evenly. Place the mixture into the prepared pan.
  • In a medium bowl whisk together the sour cream, mayonnaise, heavy cream, chicken broth, bouillon, and pepper. Pour the sour cream mixture evenly on top of the chicken and broccoli.
  • Sprinkle the cheese evenly on top.
  • In a medium bowl combine the butter, salt, and breadcrumbs. Evenly sprinkle the breadcrumbs on top of the cheese layer.
  • Bake for 25-30 minutes until warmed through and toasted on top.
  • Serve warm.

1 tbsp minced onion
1 tsp curry powder
1/2 tbsp garlic powder
3/4 tsp salt

8 oz sour cream
8 oz mayo
8 oz shredded cheddar

Steps:

  • Preheat oven to 350 if baking immediately. Or you can prep ahead and keep in the refrigerator for a day or two.
  • In a big bowl combine sour cream, mayo, and spices and mix thoroughly.
  • Add the chicken, broccoli, and 3/4 of the cheese and mix well.
  • Dump into a 9x13 baking dish sprayed with cooking spray. Sprinkle remaining cheese on top.
  • Bake until hot about 35 minutes.

5 cups broccoli florets
1 lb chicken breast, cubed
1/2 tsp sea salt
1/4 tsp black pepper (omit for AIP)
1 tbsp arrowroot starch
2 tbsp avocado oil
2 tbsp avocado oil
3 cloves garlic, minced
1 1/4 cup chicken broth
1 tbsp apple cider vinegar
1/3 cup coconut cream
1/3 tsp sea salt
1 tbsp + 2 tsp arrowroot starch
1 1/2 cup plantain chips (finely crushed, manually or with a food processor)
2 tbsp nutritional yeast
1 tbsp parsley, chopped

Steps:

  • Using a large deep pot, place the broccoli in a large pot with enough water to cover. Bring to a low boil and simmer for 5 minutes or until lightly fork tender. Strain and set aside in a large 9×13″ casserole dish.
  • Season the chicken with salt and pepper and coat with arrowroot starch. Using a large pan, heat the avocado oil over medium heat. Cook the chicken in the pan for 4-5 minutes or until the internal temperature reads 165 F. Set the chicken aside.
  • Clean out the same pot used for the broccoli and heat the avocado oil over medium heat. Saute the garlic until fragrant.
  • Pour in the chicken broth (reserve 1/4 cup on the side), apple cider vinegar, coconut cream, and salt. Stir and bring to a low simmer.
  • Using a small bowl, whisk together the 1/4 cup of broth and the arrowroot starch. Pour into the broth mixture and stir well. Allow to simmer and thicken for 2-3 minutes. Set aside and allow to cool slightly.
  • Preheat the oven to 400 F. Add the chicken to the casserole dish with the broccoli and stir to evenly disperse.
  • Pour the sauce over the chicken and broccoli and top with the finely crushed plantain chips and nutritional yeast.
  • Bake in the preheated oven for 15-18 minutes or until the top is crispy.

5 tbsp all-purpose flour
3 tbsp dry sherry (or chicken broth)
1 cup low-sodium chicken broth
1 cup milk
1 cup heavy cream
1 pinch of freshly grated nutmeg
Freshly ground pepper, to taste
1 bunch of scallions, chopped (about 1 cup)
1 1/2 cups shredded gruyere cheese (about 6 ounces)
1 cooked 3 1/2 Ib chicken, meat removed and cut into chunks, skin, and bones discarded (3 to 3 1/2 cups meat)
1/2 cup sliced or slivered almonds, toasted
1/2 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 F.
  • Grease a shallow 3-quart casserole dish with butter.
  • Boil salted water in a large saucepan.
  • Add 1/2 cup of the cheddar cheese to the broccoli.

Chicken Divan, created and served with great flourish in the Divan Parisienne Restaurant in New York's Chatham Hotel in the early twentieth century, remains one of America's most classic and delicious casseroles, a dish as appropriate to an elegant buffet as on the family supper table. In my own lifetime, the casserole was a specialty at the renowned Locke-Ober restaurant in Boston, and it was there I learned to enhance the dish by adding a few slivered almonds.

1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
1 cup chicken broth

Steps:

  • Steam broccoli florets until tender, about 5 to 7 minutes and drain. Preheat oven to 350 F. Spray or butter a shallow 2 quart or hotel pan and set aside. In a medium-size saucepan, melt the butter over moderate heat, then add the flour and stir for 1 minute. Gradually add the broth and milk and stir until thickened. Season with salt and pepper; add nutmeg, 1/4 cup of the cheese, and the sherry. Stir until the cheese melts, and remove from heat. Arrange the broccoli in the prepared casserole in a single layer; sprinkle the almonds over the top. In a medium-size mixing bowl, beat the heavy cream with an electric mixer until soft peaks form, fold into the cheese sauce, pour evenly oven the chicken and almonds, and bake until bubble and golden brown, about 35 minutes.
