This recipe is from my "Irish Cooking" cookbook. Excellent snack idea! These are so yummy!

Yield 16 breadsticks

Number Of Ingredients 4

8 slices bacon
16 garlic-flavored breadsticks (about 8 inches long)
3/4 cup parmesan cheese
2 tablespoons chopped fresh parsley (optional)

Steps:

  • Cut bacon slices in half lengthwise. Wrap half slice of bacon diagonally around each breadstick. Combine Parmesan cheese and parsley, if desired, in shallow dish; set aside.
  • Place 4 breadsticks on double layer of paper towels in microwave oven. Microwave at HIGH 2 to 3 minutes or until bacon is cooked through. Immediately roll breadsticks in Parmesan mixture to coat. Repeat with remaining breadsticks.

  • Bacon should be cold to make it easier to work with. Take out 3 slices of bacon and put the rest back in the refrigerator. Slice each strip in half, lengthwise.
  • Wrap a strip of bacon around each breadstick by laying flat and rolling from one end to the other. Do not hold up breadstick and try to wrap as they will snap in two. (Trust me!)
