3/4 cup all-purpose flour (spooned and leveled)
1 tablespoon sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup low-fat (1 percent) cottage cheese
2/3 cup milk
2 large egg whites
1/2 teaspoon vanilla extract
5 teaspoons vegetable oil

Steps:

  • In a large bowl, stir together flour, sugar, baking powder, and baking soda. Stir in cottage cheese, milk, egg whites, and vanilla.
  • In a large nonstick skillet, heat 2 teaspoons oil over medium. Working in batches, drop cottage cheese mixture by 1/4 cupfuls into pan (2 or 3 at a time).
  • Cook until bottoms are set and tops have small bubbles, about 1 minute. Turn pancakes and cook until just firm in the center, 1 to 3 minutes more. Repeat, using remaining 3 teaspoons oil for the other batches.

3/4 cup flour
1/4 teaspoon salt

  • There is no need to overmix this batter as the lumps will disappear when cooked.
  • Drop onto hot griddle or pan to make pancakes.
  • When bubbling on top, turn to complete.

6 tablespoons butter, melted

Steps:

  • Whip cottage cheese in KitchenAid or similar mixer. Add the flour and eggs and start the mixer again. With mixer on, add melted butter. This should be a thick batter.
  • Test a small amount of batter on grill. Add a small amount of flour if it needs thickening.
  • Cook pancakes until golden, then flip and cook for an additional minute. Do not overcook. These pancakes are moist and should spring back to the touch.
  • Serve plain or with favorite topping.

1/4 cup cottage cheese
2 tablespoons flour
1 teaspoon oil
1 pinch salt

Steps:

  • Separate egg into 2 small bowls. Beat egg white until it forms soft peaks. Set aside.
  • Add remaining ingredints to egg yolk. Beat with an electric mixer until smooth.
  • Stir about 1/2 of the beaten egg white into yolk mixture to soften batter. Fold in remaing egg white until blended.
  • Heat a large oiled skillet over medium heat, about 375*F.
  • Drop batter by spoonfuls into hot skillet and spread with back of spoon to form 3 inch circles. When underside is golden brown and edges begin to dry, turn and brown other side.

Vegetable oil
Accompaniment: Peach and Berry Salad

Steps:

  • Mix cottage cheese, flour, oatmeal, egg yolks, honey, milk, vanilla and cardamom in large bowl. Beat whites in another large bowl until stiff but not dry. Fold whites into cottage cheese mixture in 2 additions.
  • Preheat oven to 200°F. Heat large nonstick skillet over medium heat. Brush with oil. Spoon batter onto skillet by 1/3 cupfuls, forming 4-inch-diameter pancakes. Cook pancakes until bottoms are brown and bubbles form on top, about 3 minutes. Turn; cook until bottoms are brown and pancakes are cooked through, about 4 minutes.
