4 ounces Irish cream liqueur
Sweetened whipped cream, optional

Steps:

  • Divide coffee and liqueur among 4 mugs; stir. If desired, top with whipped cream and chocolate shavings.

2 tbsp double cream
150ml freshly brewed black coffee
50ml Irish whiskey
½ - 1 tsp brown sugar
pinch freshly grated nutmeg

Steps:

  • Lightly whip the cream just so it's very slightly thickened, then set aside.
  • Pour the hot coffee into a mug or heatproof glass, then add the whiskey and sugar. Stir until the sugar has dissolved. Gently float the cream on the top and sprinkle the nutmeg over the cream. Serve hot.

For coffee nut crisp:
1 large egg white
1/4 cup packed light brown sugar
1/2 teaspoon instant coffee granules, crushed
1 cup walnut pieces (3 1/2 ounces), coarsely chopped if desired
For sauce:
1 cup granulated sugar
1/4 cup water
6 Tablespoons Irish whiskey
1/4 cup heavy cream
1/4 teaspoon salt
2 pints good-quality coffee ice cream

Steps:

  • Make crisps:
  • Preheat oven to 325°F with rack in middle. Line a rimmed sheet pan with a nonstick baking liner, or line it with foil and lightly oil foil.
  • Whisk egg white with sugar, coffee powder, and a pinch of salt in a bowl until blended. Stir in walnuts until coated. Spread mixture into a 10- by 8-inch rectangle in pan.
  • Bake until crisp is dry to the touch, 20 to 25 minutes. Transfer pan to a rack to cool completely.
  • Loosen crisp with a metal spatula and break into small pieces.
  • Make sauce:
  • Bring sugar and water to a boil in a 2-quart heavy saucepan over medium-high heat, stirring until sugar is dissolved. Boil without stirring, but washing down any sugar crystals with a brush dipped in cold water, until syrup begins to turn golden, about 5 minutes. Continue to boil, swirling pan occasionally, until syrup is a deep golden caramel.
  • Remove pan from heat and carefully add whiskey, cream, and salt (mixture will bubble up and steam and caramel will harden).
  • Return pan to heat and simmer, stirring, until caramel is dissolved and sauce is smooth. Cool to warm.
  • Serve sauce over scoops of coffee ice cream then sprinkle with walnut crisp.

3/4 cup butter
3 cups white sugar
3/4 cup evaporated milk
1/3 cup bailey's irish cream
1 tablespoon instant coffee crystals
7 ounces marshmallow cream
2 cups vanilla or 2 cups butterscotch chips
1 teaspoon vanilla extract

Steps:

  • In a small bowl combine Bailey's and coffee crystals. Microwave on high for 10 seconds. or until melted and dissolved.
  • In a medium saucepan, over medium heat, melt butter,evaporated milk, sugar and marshmallow cream. Slowly add the Bailey's coffee mixture; stir well. Boil for 5 minutes
  • Remove from heat and stir in chips and vanilla extract. Stir for approximately 3-4 minutes until smooth. Pour into a foil lined 8x8" pan. Chill to set.

1/4 cup water
2 1/2 cups coffee, freshly brewed
1/4 cup irish cream, Liqueur

Steps:

  • In a small saucepan over medium heat, bring the sugar and water to a boil, whisking constantly. Cook for 3 - 5 minutes or until mixture is syrupy.
  • Whisk in the coffee and cook 3 - 5 more minutes or until the sauce thickens.
