Steps:
- Heat oven to 400°F. In 15x10x1-inch pan, place almonds, bread, tomato and garlic in single layer. Bake 5 to 6 minutes or until almonds and bread are lightly toasted. Break bread into bite-size pieces.
- In food processor, place toasted almonds, bread, tomato and garlic. Cover; process, using quick on-and-off motions, until coarsely chopped. Add remaining sauce ingredients. Cover; process, using quick on-and-off motions, until almost smooth. Transfer sauce to small bowl; set aside. Sauce will thicken as it stands.
- In 12-inch nonstick skillet, heat 2 tablespoons oil over medium heat. Sprinkle both sides of chicken with garlic salt; add to skillet. Cook 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Serve chicken with sauce; sprinkle with parsley.

SIMPLE PAN-FRIED CHICKEN BREASTS
This is a dish I came up with to serve with HeatherFeather's Red Wine & Rosemary Sauce over Linguine. This is so simple and extremely easy. I pan-fry the chicken in a skillet, then prepare the sauce in the same skillet. You might get some blackened 'stuff' in the pasta sauce - I strain it first before serving.

Steps:
- Pound the chicken breasts with a meat mallet or a rolling pin, to tenderize the meat and ensure uniform thickness.
- Sprinkle salt and pepper on both sides of the chicken and let sit for 15 minutes or so.
- Heat a skillet over med-high heat, and add olive oil.
- When pan is sufficiently heated, sear chicken breasts over high heat.
- Allow about 2 minutes (until lightly browned) before turning to other side.
- Optional: Before serving, sprinkle grated cheese on chicken and broil for approx 5-10 mins (until cheese is melted).
- Serving suggestions: Serve this over pasta, or as chicken sandwich with fresh tomatoes, lettuce and mustard/mayo.
- Personally I love this with fried rice too.
ROMESCO CHICKEN
This recipe was a handout at my local Sam's Club this weekend. It tasted wonderful and the only sodium coming from the green olives. Top the dish off with some freshly shaved Parmesan cheese for a low, sodium, low fat meal. The wine pairing they suggest is a Chardonnay.

- Chop the tomatoes and red onion, add the olive oil to a saute pan, when warm add the chopped tomato, onions and garlic.
- Cook until the vegetables are soft, put the mixture into a food processor; add the red wine vinegar and olives, pulse until blended but still maintains texture.
- For the chicken, over medium high heat heat the 1 teaspoon olive oil in saute pan, season the chicken with seasoning blend and add to pan.
- Saute the chicken for 3 to 4 minutes on each side or until internal temperature reaches 165 degrees.
- Plate each breast and individual serving plates and top with about 2 tablespoon of the blended sauce mixture.
- Serve with a green salad, fresh bread and wine for a delicious meal.
GRILLED CHICKEN WITH HOMEMADE ROMESCO SAUCE

- Heat oven to 400° F. Line a baking sheet with parchment or a silicone baking mat.
- Place peppers, tomatoes, garlic and almonds on the baking sheet and roast for 40 minutes, checking every 10-15 minutes to rotate peppers and tomatoes so that all sides get blistered, and to remove almonds and garlic once they are done (about 10-15 minutes in).
- Place peppers and tomatoes in a bowl and cover with foil or plastic wrap. Let sit for 10 minutes to steam (this makes them easier to peel).
- Gently peel skins away from peppers and tomatoes. Discard skins and pepper seeds and stem. Squeeze garlic from the cloves.
- Place all ingredients for the sauce in a high powered blender, such as a Vitamix, and blend until smooth.
- While vegetables are roasting, marinate chicken. Make sure chicken is an even thickness so that they cook more evenly. You may have to lightly pound them into even thickness. Sprinkle chicken breasts with salt, pepper and garlic powder on both sides. Add Worcestershire sauce, balsamic vinegar, and olive oil, and turn chicken to coat. Marinate in the refrigerator until you're ready to cook it.
- Heat a grill or grill pan over medium-high heat (about 400°F.) Cook chicken for about 5 minutes per side, then turn heat to low and/or move chicken to top rack of the grill and continue cooking until the internal temperature reaches 165° F and juices run clear, about 10-20 minutes, depending on the thickness of the chicken.
- Serve each chicken breast topped with Romesco sauce.

- Preheat the oven to 400 degrees.
- In a small dish, combine the spice rub ingredients. Rub the mixture over the chicken breasts to coat. Place the chicken breasts on a baking sheet and drizzle with olive oil.

BAKED CHICKEN WITH SPANISH ROMESCO SAUCE
Romesco sauce, the Spanish version of pesto, is a fantastic everyday sauce to have on hand. In addition to this chicken, you could try it as a dip, as a sauce on pizza, stirred into a Mediterranean-inspired pasta, or spread on crostini and topped with olives. Its versatility makes it a star in the kitchen.

- Preheat oven to 375°F (190°C). Oil a rectangular baking pan with the olive oil. Place pepper halves, tomato halves and garlic on the pan in a single layer. Bake in oven for 30 minutes or until soft. Remove from oven; cool pan on rack.
- Season skinless boneless chicken thighs with lemon juice. Bake in another pan in oven for 45 minutes or until thoroughly cooked, juices run clear when pierced with a knife and the internal temperature of each chicken thigh reaches 165°F (74°C).
- Toast almonds by placing in a dry skillet over medium heat. Stir or toss frequently until fragrant and lightly golden. Finely chop in a food processor or blender.
- To make Romesco Sauce add cooled vegetables with any roasting liquid, 6 pieces torn fresh whole grain baguette, vinegar, salt and pepper to food processor bowl and process until sauce has a pudding thick consistency. Add more bread if needed. Taste and adjust salt and vinegar as needed.
- To serve, spoon a generous portion of sauce on top of baked chicken pieces. Garnish with flat leaved Italian parsley.

- Slice the chicken breasts horizontally almost completely in half, leaving the halves attached down a long side, then open out like a book to ‘butterfly’.

- Remove the chicken from the refrigerator one hour before you start cooking, coat liberally with oil and season with sea salt.
- To make the romesco, preheat your oven grill. Put the tomatoes on a tray and cook under the grill for 5-8 minutes, until they dehydrate and start to colour. Place the olive oil in a pan and fry the chillies over medium-high heat, turning until blackened (about 30 seconds), then remove. Halfway through cooking the first side, turn the chicken 45 degrees, creating a crisscross pattern. Turn the chicken over to finish cooking. The chicken will take 12 to 15 minutes, depending on the size. Remove from the grill, put on a plate, cover with foil and allow the bird to rest in a warm place for 10 minutes.
- Drizzle a little extra olive oil into the juices on the resting plate and add the lemon juice, a grind of fresh pepper and the herbs. Mix together and spoon this dressing over the chicken. Serve immediately with the romesco.
