INSTANT POT WHITE QUESO DIP

Creamy and cheesy Instant Pot White Queso Sausage Dip made with jalapenos, mild sausage, and White American cheese. This cheese dip is perfect with tortilla chips and pretzels!

1 lb Mild Italian Sausage*
1/2 cup diced jalapenos with liquid
1/2 tsp taco seasoning
1/4 tsp garlic powder
3/4 cup milk
2 tsp cornstarch
3/4 lb of White American Cheese**
1 cup chicken broth

Steps:

  • Set the Instant Pot to SAUTE and add the sausage.
  • Brown and break the down sausage.
  • Add the chicken broth and deglaze the pot once the sausage is cooked. Press CANCEL on the Instant Pot.
  • Add the taco seasoning and the garlic powder.
  • Add the diced jalapenos. If you want smaller bits of jalapenos, a few quick pulses in the blender are all you need.
  • Close the lid and vent.
  • Set to MANUAL/PRESSURE COOK for 4 minutes.
  • Carefully perform a controlled quick release to avoid spurts of liquid and steam from coming from the valve.
  • Open the lid and set the Instant Pot to SAUTE.
  • Add the White American Cheese to the pot and stir to melt.
  • Combine the milk and cornstarch together to create a slurry.
  • Add to the pot and stir to combine.
  • Allow the dip to thicken and serve warm.

1 cup chicken broth, divided
1 large egg
½ pound sweet Italian sausage
2 tablespoons unsalted butter
1 small onion, chopped
2 ribs celery, chopped
1 (8 ounce) can diced water chestnuts, drained
¼ cup chopped fresh flat-leaf parsley
1 teaspoon salt
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon ground black pepper
5 cups plain stuffing bread cubes

Steps:

  • Whisk 1/2 cup broth and egg together in a mixing bowl. Set aside.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add sausage and cook, breaking up with a spoon, for 3 minutes. Add butter, onion, celery, and water chestnuts. Cook 4 minutes more and turn pot off. Add parsley, salt, thyme, sage, and black pepper. Stir to combine. Add bread cubes to pot and pour egg mixture on top. Toss to combine.
  • Close and lock the lid. Select manual and set the timer for 6 minutes; allow 2 minutes for pressure to build. There will be no pressure to release in this step; when timer is up, carefully remove the lid and add remaining broth.
  • Close and lock the lid again. Select manual and set the timer for 5 minutes; allow 2 minutes for pressure to build. Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Remove the lid and transfer dressing to a serving dish.

1 small onion, chopped
1 (14.5 ounce) can diced tomatoes
1 (3.8 ounce) can sliced black olives, drained
¼ cup mild pickled banana peppers, diced

4 cups shredded Monterey Jack cheese

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Crumble sausage into the pot and cook for 3 minutes. Add onion and cook until sausage is browned and onion is soft and translucent, about 5 minutes. Add tomatoes, olives, and banana peppers. Stir to combine. 1 tablespoon olive oil
1 small onion, chopped
1 large jalapeno pepper, seeded and diced
1 teaspoon chili powder
½ teaspoon ground cumin
1 (12 fluid ounce) can or bottle light beer
1 (10 ounce) can diced tomatoes with green chiles
2 cups shredded sharp Cheddar cheese
2 cups shredded Monterey Jack cheese

Steps:

  • Crumble sausage in a large skillet and cook over medium-high heat until no longer pink, about 5 minutes. Drain excess grease.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add olive oil, onion, and jalapeno; cook for 3 minutes. Add chili powder and cumin and cook for 2 minutes more. Stir in sausage, beer, and tomatoes. Close and lock the lid. Select Manual; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Carefully release remain pressure manually. Remove the lid. Add Cheddar and Monterey Jack cheeses; whisk vigorously until melted. Serve immediately.
