All the delicious flavors of fajitas in a pasta dish! Steak is cooked with fajita seasonings, pasta and tender, but not overcooked, bell peppers. Sour cream is stirred in to add a creamy element to the pasta dish and ties everything together. Make this recipe is just minutes with your electric pressure cooker.

2 tsp chili powder
2 tsp paprika
2 tsp garlic powder
2 tsp cumin
1 1/2 tsp dried oregano
2 tsp sea salt
1 tsp black pepper
1 large onion
1 1/2 pounds chuck steak
2 Tbsp olive oil
3 and 3/4 cups beef broth
1 pound (16 oz) bowtie pasta (or other pasta of your choice)
1 (14.5 oz) can crushed tomatoes
1 green bell pepper
1 red bell pepper
1 cup sour cream
1/2 cup grated cheddar cheese

Steps:

  • In a small bowl combine the chili powder, paprika, garlic powder, cumin, oregano, sea salt and pepper. Set aside.
  • Slice your onion into thin, half moon slices.
  • Turn your Instant Pot to the saute setting and let it heat up. While it is heating up, cut your steak into thin quarter-inch strips. This way the steak will be distributed evenly throughout the pasta and will cook more tenderly.
  • Add in the beef broth. Add in the pasta. Stir a bit.
  • Add the crushed tomatoes on top, do not stir.
  • Core your peppers and cut them into long slices and then cut the slices in half. This way they will be more evenly distributed throughout the pasta. Pull out a long piece of foil, about 20 inches long. Place the peppers in the middle of the foil. Then fold up the edges of the foil and crimp together to create a foil packet. Place the foil packet on top of the tomatoes. This will cook the peppers to perfect doneness and prevent them from getting mushy.
  • Cover the Instant Pot and secure the lid. Set the valve to sealing. Set the manual/pressure cook button to 4 minutes on high pressure. When the time is up let the pot sit there for about 5 minutes and then move the valve to venting. Remove the lid when you can.
  • Use tongs to remove the foil packet. Carefully open it with hot pads. Stir the peppers into the pot. Stir sour cream into the pot. Stir the other half of the seasonings into the pot.
  • Scoop pasta onto serving plates and sprinkle each serving with 1 Tbsp of grated cheddar cheese.

Instant Pot steak fajitas that are so tender, juicy and filled with incredible flavors!

1 pound (450 grams) steak (rump, top round or flank sliced into long strips)
1 onion (peeled and sliced)
2 tablespoons fajita seasoning
½ cup (125 ml) beef or vegetable stock or water
salt (to taste)
3 bell peppers (red, green and yellow - thickly sliced)
4 tortilla bread

Steps:

  • Add the meat to the pot, followed by the onion and bell peppers (add the bell peppers if you don't mind soft veggies, otherwise add them after pressure cooking), the spices, and ½ cup of liquid (beef or vegetable stock or water, whatever is available).
  • Give everything a quick mix, secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 10 minutes at high pressure. The Instant Pot will take around 6-7 minutes to come to pressure and start cooking. When the cooking program ends, quickly release the steam.
  • Remove the lid, and add the bell peppers if you didn't add them before pressing cooking then cover with the lid again, and let the peppers "steam" for a few minutes. If you already cooked the bell peppers, then skip this step.
  • Then either drain the extra liquid (and retain some) or use a slotted spoon to take out the fajitas.
  • To serve, stuff warmed tortillas with the fajitas and garnish with chopped cilantro leaves and drizzle over with a little bit of the reserved sauce.

1-1/2 pounds beef top sirloin steak, cut into thin strips
1-1/2 teaspoons ground cumin
1/2 teaspoon seasoned salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
2 tablespoons canola oil
2 tablespoons lemon juice
1 garlic clove, minced
1/2 cup water
1 large sweet red pepper, thinly sliced
1 large onion, thinly sliced
8 flour tortillas (8 inches), warmed
Optional toppings: Sliced avocado and jalapeno peppers, shredded cheddar cheese and chopped tomatoes

Steps:

  • In a bowl, toss steak with cumin, salt, chili powder and red pepper flakes. Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown meat in batches and remove. Add water, lemon juice and garlic to cooker; stir to loosen any browned bits. Press cancel. Return beef to cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 20 minutes., Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Remove steak with a slotted spoon; keep warm., Add red pepper and onion to cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. Serve vegetables and steak with tortillas and desired toppings.

2 tablespoons canola oil
1-1/2 pounds beef top sirloin steak, cut into thin strips
1 large onion, julienned
1 large sweet red pepper, julienned
1 garlic clove, minced
1/2 cup reduced-sodium beef broth
2 tablespoons lemon juice
1-1/2 teaspoons ground cumin
1 teaspoon seasoned salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
12 mini flour tortillas (5 inches), warmed
