INSTANT POT SHRIMP | GREEK SHRIMP SAGANAKI



Instant Pot Shrimp | Greek Shrimp Saganaki image

Lovely, easy dish with shrimp, tomatoes, feta, and olives that requires almost no effort. Use frozen shrimp for best results.

2 tablespoons Butter
1 tablespoon Garlic
1/2 teaspoon Red Pepper Flakes (adjust to taste)
1.5 cups onions, chopped
1 14.5-oz Canned Tomatoes
1 teaspoon Dried Oregano
1 teaspoons Kosher Salt
1 pound Frozen Raw Shrimp (21-25 count, shelled)
1 cup crumbled feta cheese
1/2 cup sliced black olives
1/4 cup Chopped Parsley

Steps:

  • Turn your Instant Pot or Pressure cooker to Sauté and once it is hot, add the butter. Let it melt a little and then add garlic and red pepper flakes.
  • Add in onions, tomatoes, oregano and salt.
  • Pour in the frozen shrimp.
  • Set your Instant pot to LOW pressure 1 minute.
  • Once the pot is done cooking, release all pressure immediately.
  • Mix in the shrimp with the rest of the lovely tomato broth.
  • Allow it to cool slightly. Right before serving, sprinkle the feta cheese, olives, and parsley.
  • This dish makes a soupy broth, so it's great for dipping buttered french bread into, or eat over rice, or riced cauliflower.
  • Heat a 10-inch saucepan and when it's hot, add the butter. To the melted butter add garlic and red pepper flakes. Let this sizzle for 10-15 seconds.
  • Add onions, tomato paste, oregano, salt, pepper, and water. Mix until you the tomato paste has dissolved. Cover the skillet and let the sauce cook for 3-4 minutes.
  • Stir in shrimp, feta cheese, and olives. Cook until the shrimp are cooked through for about 2-3 minutes. Garnish with parsley and serve.

A super easy, delicious shrimp (prawn) saganaki recipe for you to recreate this simple and beloved traditional Greek appetizer from scratch in less than 20 minutes!

25 medium prawns
4 ripe, juicy tomatoes, finely chopped
1 red onion, finely chopped
some hot chilli pepper, according to preferance
2 spring onions, sliced (optional)
2 cloves of garlic, chopped
60ml Greek drink Ouzo (1/4 of a cup)
2 tbsps fresh dill or parsley, chopped
200-250g feta cheese, crumbled or cubed (8 oz.)
olive oil
salt and freshly ground pepper
a pinch of sweet paprika (optional)

Steps:

  • To prepare this Greek shrimp saganaki recipe start by peeling and cleaning the shrimps.
  • Continue preparing the sauce. To prepare the sauce for this shrimp saganaki recipe, dice the fresh tomatoes in small cubes and let them strain in a colander, so that no excess water is added to the sauce.
  • Begin with the sauce for the shrimp saganaki. Heat the olive oil over medium-high heat, add the chopped onion and sauté for 1 minute. Stir in the chopped garlic, chilli peppers and season with salt and and pepper. Sauté all the ingredients together for 1 more minute. Add the chopped tomatoes, cover with the lid, bring to the boil and let simmer for approx. 5 minutes, until the sauce thickens a little bit.
  • In the meantime sauté the shrimps for this shrimp saganaki recipe. Season the shrimps with salt and pepper on both sides. Heat a large saucepan over medium heat and add 3-4 tbsps olive oil. Add the shrimps, sauté for 1 minute and deglaze with the ouzo.
  • Pour the sauce in the saucepan along with the shrimps and stir. Top the shrimp saganaki with the crumbled or cubed feta cheese, place the lid on and cook for 2 more minutes, until the feta slightly melts.
  • Garnish the shrimp saganaki with chopped parsley or dill and serve while still hot. Enjoy this traditional Greek shrimp saganaki recipe with a cold glass of ouzo!

It is a delicious dish that I'd only tried in restaurants but when I tried to make it at home I found out I made it as good and delicious. With a small alteration of adding pasta you can turn this dish into a delicious seafood pasta dish.

1 pound medium shrimp, with shells
1 onion, chopped
2 tablespoons chopped fresh parsley
1 cup white wine
1 (14.5 ounce) can diced tomatoes, drained
¼ teaspoon garlic powder
¼ cup olive oil
1 (8 ounce) package feta cheese, cubed
1 pinch salt and pepper to taste

Steps:

  • Bring about 2 inches of water to a boil in a large saucepan. Add the shrimp, the water should just cover them. Boil for 5 minutes, then drain, reserving the liquid, and set aside.
  • Heat about 2 tablespoons of oil in a saucepan. Add the onions; cook and stir until the onions are soft. Mix in the parsley, wine, tomatoes, garlic powder, and remaining olive oil. Simmer, stirring occasionally, for about 30 minutes, or until the sauce is thickened.
  • While the sauce is simmering, the shrimps should have become cool enough to handle. First remove the legs by pinching them, and then pull off the shells, leaving the head and tail on.
  • When the sauce is thickened, stir in the shrimp stock and shrimp. Bring to a simmer, and cook for about 5 minutes. Add the feta cheese and remove from the heat. Let stand until the cheese starts to melt. Serve warm.

This is my husband's creation and it is so good. Make sure to serve it with some nice crusty bread to mop up the sauce. We serve it as a starter but it could easily be a main dish with greek orzo. The fresh herb and real lemon juice make a big difference.

3 lbs extra-large shrimp, uncooked
2 (28 ounce) cans plum tomatoes, peeled
1/4 cup olive oil (GREEK of course)
1 cup dry white wine
2 white onions, sliced thinly
1 -2 fresh garlic clove, chopped
2 teaspoons fresh oregano, chopped
2 lemons, juice of
1 teaspoon lemon zest
1 1/2 cups feta cheese, crumbled

Steps:

  • Peel and butterfly the shrimp.
  • Set shrimp aside.
  • Saute the onions and garlic in 2tsp olive oil.
  • Add tomatoes and wine to onion and garlic and cook for 1/2hour over low heat (the longer the better the sauce.
  • saute shrimp until just barely pink, add to sauce.
  • Add fresh oregano,lemon juice and zest
  • Pour everything into baking dish and crumble the feta on top.
  • Bake 350 for 10-15 minutes.

4 garlic cloves, minced
2 tablespoons chopped fresh parsley
1 cup white wine
1 (14 1/2 ounce) can diced tomatoes (do not drain)
1/4 cup olive oil
1 (8 ounce) package feta cheese, cubed
salt and pepper or cavender's all purpose Greek seasoning
water

Steps:

  • Bring about 2 inches of water to a boil in a large saucepan. Add the shrimp, the water should just cover them. Boil for 5 minutes, then drain, reserving the liquid, and set aside.
  • Heat about 2 tablespoons of oil in a saucepan. Add the onions and cook until the onions are soft, during the last minute stir in minced garlic. Mix in the parsley, wine, tomatoes, 1/2 cup of reserved shrimp water, seasonings and remaining olive oil. Simmer over medium low heat, stirring occasionally, for about 30 minutes, or until the sauce has thickened.
  • While the sauce is simmering, and the shrimp are cool enough to handle, peel off the shells and tails.
  • When the sauce is thickened, stir in the shrimp. Bring to a simmer, and cook for about 5 minutes. Add the feta cheese and remove from the heat. Let stand until the cheese starts to melt.
  • Serve warm over your favorite pasta.
