  • Combine 2 cups leftover mashed potatoes, a heaping 1/3 cup flour, 2 tablespoons milk and 1 tablespoon chopped mixed herbs in a bowl; knead until smooth. Season with salt and pepper. Divide into 4 balls on a floured surface and flatten each into a 3-inch patty. Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat; add the patties and cook until golden brown, 4 to 5 minutes per side, adding more butter to the pan as needed. Season with salt.

A super easy recipe for Irish Potato Cakes also known as Potato Farls. Yukon gold potatoes are mashed with butter and flour then formed into triangles and fried to perfection. These Potato Cakes are incredibly creamy on the inside and super crispy on the outside, making for an exceptional side dish for almost any occasion.

2 pounds potatoes (such as Russets or Yukon gold)
1 cup all-purpose flour
½ teaspoon salt (or to taste)
½ teaspoon black pepper (freshly ground)
3 tablespoons butter

Steps:

  • Prepare potatoes. Make sure all the potatoes are cut into equal size pieces so that they all cook at the same time. Place the potatoes into a large pot and fill it with cold water, enough to fully cover the potatoes. Add about 1 tsp of salt to the water and stir.
  • Boil potatoes. Bring the potatoes to a boil over high heat, then reduce the heat to a medium and cook for about 15 minutes or until the potatoes are fork tender.
  • Drain and add the rest of ingredients. Drain the potatoes. Put the potatoes through a potato ricer, press them through a sieve or simply use a potato masher to get them as fluffy as possible. To the mashed potatoes add the flour, 3 tablespoons of butter, salt and pepper and mix thoroughly until you form a dough.
  • Form into potato farls. Flatten the dough into an 8-inch disk on a lightly floured surface, about 1-inch thick then cut into 8 triangles, like cutting a pizza.
  • Fry potato cakes. Melt remaining 3 tablespoons of butter in a large skillet. Add the potato cakes and cook for about 4 to 5 minutes per side, over medium heat, until gold and crispy.

1 lb yellow potatoes ~ mashed - no butter or milk
4 slice thick bacon - cooked crisp and save the drippings
1 1/2 Tbsp grated onion
kosher salt & fresh cracked black pepper
2 Tbsp flour
1 Tbsp fresh parsely, chopped
sour cream

Steps:

  • 1. If you have an iron skillet, use it for these cakes. Browns nicely. If not any skillet will do. Fry your bacon until crisp and drain. Save the drippings and add some extra if you have it. You just want enough drippings in the pan, that the potatoes won't absorb too much before nicely browned.
  • 2. Mash potatoes ( cool ) and fold in the flour, salt, pepper, bacon, parsley and onion.
  • 3. Get skillet good and hot, but not smoking. Make 4 - 6 patties with the potato mixture and place in hot grease. Re salt and pepper. Fry for 4 - 5 minutes on the first side, can carefully lift around the edge to see if browned enough. Carefully flip to the other side and cook until golden crispy. Drain on paper towels.
  • 4. Serve with sour cream if desired. These cakes are so good! Enjoy them with breakfast, dinner or just a snack.

This side dish is one to bring to the table with pride - it looks as good as it tastes!

1.3kg medium-sized roasting potato , such as King Edwards or Maris Pipers
3 tbsp butter , melted
1 tbsp thyme leaves and 1 thyme sprig
pinch of nutmeg
2 tbsp olive oil
sea salt , to serve

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Peel the potatoes and place them in a pan of cold, salted water. Bring to the boil, simmer for 3 mins and drain. When cool enough to handle, slice a few very neatly. Coat the bottom of a round, ovenproof, non-stick pan with butter, then place a sprig of thyme in the middle. Cover with a slice of potato in the middle, then arrange the rest of the slices over the base of the pan, overlapping the slices in concentric circles. Slice the rest of the potatoes and tip into a bowl, then pour over the rest of the butter, the nutmeg and the thyme leaves and season with salt and pepper. Toss everything together, then tip the seasoned potatoes over the arranged slices and press down gently to flatten. The potato cake can be prepared up to a day ahead and kept covered in the fridge.
  • Cook the cake in the oven below the beef. Every now and then, remove it, press it down with a fish slice and drizzle the surface with a little olive oil. Cook for 1hr-1hr 15mins, until the sides look brown and crispy. Carefully invert the cake onto a serving dish or board, scatter with sea salt and serve cut into wedges.

⅔ cup shortening
2 cups white sugar
2 eggs
¾ cup milk
2 cups all-purpose flour
2 teaspoons baking powder
⅛ teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
2 teaspoons ground nutmeg
2 cups mashed cooked potatoes
1 cup chopped walnuts
1 cup raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking powder, salt, cinnamon, cloves and nutmeg. Set aside.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time. Add the flour mixture alternately with the potatoes and milk. Stir in nuts and raisins.
  • Pour into a 10 inch Bundt pan. Bake in the preheated oven for 90 to 120 minutes, or until a toothpick inserted into the cake comes out clean.

1 lb potatoes
1 onion chopped fine
3/4 c all-purpose flour
1 tsp salt
1/4 tsp pepper
1 egg
1/2 c milk
1/2 c vegetable oil

Steps:

  • 1. Set half of the potatoes aside for later. Peel and cut remaining potatoes into large chunks; place in a saucepan. Cover with cold water and bring to a boil over high heat. Reduce heat to low and cook 15-20 minutes, or until tender.
  • 2. Drain and place in a large bowl. Mash potatoes and set the bowl aside.
  • 3. Now peel and grate reserved potatoes. Stir them into the mashed potatoes.
  • 4. Add onion, flour, salt, and pepper; mix well. Stir in milk and egg to form a batter.
  • 5. In a large skillet, heat oil over medium heat. Drop batter from a tablespoon into the hot oil.
  • 6. Cook 3-4 minutes on each side.
  • 7. Drain on a paper towel.
  • 8. Transfer to your serving dish and serve with applesauce and sour cream. Bet you can't eat just one!
