INSTANT POT® CUBAN PORK TENDERLOIN WITH RICE AND BEANS
This one-pot Cuban pork and rice meal is a quick and easy dinner, making it perfect for the weeknight rush. The flavors of mojo-a garlic-citrus sauce popular in Cuba-are what bring this dish together.

Steps:
- On 6-quart Instant Pot®, select SAUTE; adjust to normal. Heat oil in insert. Add pork; cook 4 to 6 minutes or until pork releases easily from bottom of insert. Stir. Select CANCEL.
- Stir in broth, orange juice, taco seasoning mix, garlic and cumin. Stir in beans and rice.
- Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 12 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.
- Stir in lime juice. Top with cilantro. Serve with salsa.

Steps:
- Prepare yellow rice according to package directions.
- To prepare the black beans, combine the first seven ingredients in a medium saucepan.
- Bring just to a boil, then reduce heat to simmer on a back burner, stirring occasionally.
- Meanwhile, heat olive oil in a heavy skillet over medium-high heat.
- Combine remaining dry ingredients (flour, cumin, oregano, cayenne, onion powder, and garlic powder) in a 1 gallon zipper bag.
- Add pork to bag and shake vigorously to coat.
- Remove pork from bag and add to hot oil.
- Brown on all sides, stirring until done.
- Remove pork to a plate and turn off heat to skillet.
- Pour black bean mixture into skillet to absorb pork drippings, stir gently until combined.
- To serve, put a scoop of yellow rice on each plate, topped with a generous ladle of black beans.
- Top with pork and garnish with lime wedge and sprig of cilantro.
- Serve with crusty bread.

- Select the sauté setting on your Instant Pot; add a good drizzle of oil and the taco seasoning to the pot. When the oil is hot, add the cubed pork, browning it on all sides, working in batches so you don’t overcrowd the pot. Remove the browned pork from the Instant Pot and reserve. (**You aren't fully cooking the pork at this point, just browning it for now.)
- Add the broth, orange zest, orange juice, and garlic to pot; stir in the black beans, rice, and reserved pork. Lock the Instant Pot lid into place; choose the high pressure setting for 5 minutes, bringing the Instant Pot to full pressure.
- When the timer sounds, perform a natural release for 5 minutes; if any pressure remains in the Instant Pot at that point, perform a quick release to remove it. Carefully unlock and remove the Instant Pot lid; stir in the lime zest and juice, along with the cilantro. Serve the pork and rice with sour cream, salsa, and other favorite toppings, as desired.
