Cooking chicken drumsticks in the Instant Pot is an incredibly fast and efficient way to get dinner on the table and they're so tender!

6 chicken drumsticks
1 tablespoon dry rub
1 cup chicken broth or water (adding it hot reduces pressurizing time)
1/4 cup bbq sauce or glaze (if desired)

Steps:

  • Coat the chicken drumsticks with dry rub or seasoning.
  • Pour 1 cup hot chicken broth or water into the bottom of the Instant Pot.
  • Insert the trivet. Place the chicken drumsticks on the trivet. Secure the lid and turn the valve to sealing. Press the pressure cooker button and set the time to 10 minutes.
  • When the time is up, allow it to naturally release pressure for 5 minutes, then release the remaining pressure manually.
  • Brush the drumsticks with glaze or sauce, if desired.

2 chicken legs
1/2 tablespoon seasoned salt (or dry rub)
1 cup water
2 cloves garlic

Steps:

  • Season the chicken legs with the seasoning salt or dry rub.
  • Add water and garlic to the Instant Pot and insert the trivet.
  • Set the chicken legs on the trivet, skin side up.
  • Lock lid. Press the Pressure Cook button and set to 10 minutes. Let pressure release naturally for 5 minutes, then do a quick release of the remaining pressure. When cooking from frozen, cook for 14 minutes with a 5 minute natural release.

6 -8 chicken drumsticks
1/4 cup water
1/2 cup soy sauce
2 tablespoons honey
2 tablespoons brown sugar
2 tablespoons rice wine vinegar
2 garlic cloves, minced
1 teaspoon fresh ginger, minced

Steps:

  • In a bowl, mix the sauce ingredients: water, soy, honey, brown sugar, rice wine vinegar, garlic and ginger until combined.
  • Pour sauce in the instant pot.
  • Add chicken drumsticks and push them down so they are submerged in the sauce (they don't have to be completely covered in the sauce).
  • Cook on high pressure for 10 minutes (MANUAL 10 MINUTES).
  • Let the drumsticks cool for 5 minutes before releasing the steam (Natural Pressure Release 5 min NPR).
  • Release the steam and hit the saute button so the sauce boils and starts reducing.
  • Remove the drumsticks and place them on a cookie sheet lined with parchment paper.
  • Broil the chicken drumsticks for 2 minutes on each side (or more if you'd like). Meanwhile, leave the sauce on the instant pot so it keeps reducing.
  • Remove from the oven and place the chicken drumsticks on a platter. Pour sauce over and serve.

1 tablespoon chili powder
2 cloves garlic, crushed
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic salt
½ teaspoon ground chipotle powder
6 chicken drumsticks
½ onion, sliced and separated into rings
2 tablespoons chopped fresh cilantro

Steps:

  • Combine orange juice, lime juice, lemon juice, chili powder, garlic, cumin, oregano, garlic salt, and chipotle powder in a bowl. Pour into a resealable plastic bag and add chicken drumsticks, onion, and cilantro. Seal the bag and refrigerate for at least 8 hours to overnight, turning the bag frequently.
  • Pour marinade into a multi-functional pressure cooker (such as Instant Pot®). Place the rack inside the pot and place drumsticks on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method for 15 minutes. Release remaining pressure using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
