1/2 vanilla bean
2 cups whole milk
2 tablespoons mineral or filtered water
1 pinch ground ginger
1 pinch cinnamon
1 pinch black pepper
1 pinch licorice powder (optional)
3 1/2 ounces bittersweet chocolate, finely chopped
4 teaspoons Scharffen Berger natural cocoa powder
1 to 2 teaspoons sugar
3 tablespoons heavy cream

Steps:

  • Split the vanilla bean in half lengthwise, scrape out the seeds and place the seeds and pod in a medium saucepan. Add the milk, water and spices and bring to a simmer over medium-low heat. Whisk in the chocolate and cocoa powder until melted. Add the sugar to taste and then the cream. Let cool for 45 minutes.
  • To serve, remove the vanilla pod, return to the stove and whisk over low heat until frothy and warm.

4 cups chocolate almond milk
6 ounces bittersweet chocolate, chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1/8 teaspoon cayenne
1/8 teaspoon sea salt
Whipped cream, optional

Steps:

  • Bring the almond milk to a simmer in a large saucepan over medium-low heat (do not boil). Whisk in the chopped chocolate, cinnamon, vanilla, cayenne and salt; whisk until the chocolate has melted. Remove from the heat and whisk vigorously to form foam. Gently pour the hot chocolate into cups. Top with whipped cream if using.

It's also very good with Baileys® Irish cream and mint. Garnish with some mint leaves on top of the whipped cream. Can be cook in a slow cooker as well. Top with whipped cream, caramel, and chocolate chips.

Steps:

  • Whisk sugar, cocoa powder, cinnamon, cayenne pepper, and salt together in a small bowl.
  • Bring milk to a boil in a saucepan, whisking constantly. Whisk in cocoa mixture until dissolved, reduce heat to low, and simmer until flavors combine, about 5 minutes. Remove from heat and stir in vanilla extract.
  • Stir cream into hot chocolate and pour into mugs.

Adapted from a recipe in Better Homes & Gardens Meals for 1 or 2. Sorry, made this last night and it tasted like something was missing and I realized it was the cinnamon. It was in the directions, but I accidentally left it out of the ingredients list. It's been updated now.

2 tablespoons dark brown sugar (or more, to taste)
2 tablespoons unsweetened cocoa powder
3/4 teaspoon ground cinnamon
5 cardamom pods, crushed or 1/4 teaspoon ground cardamom
2 whole cloves
1/4 teaspoon orange zest, grated (or a couple drops of orange oil)
1 dash salt
1/4 cup water
1 3/4 cups milk
1/2 teaspoon vanilla extract
nutmeg (to garnish)

Steps:

  • In a small saucepan, combine sugar, cocoa powder, cinnamon, cardamom, cloves, orange zest, and salt.
  • Blend in water and heat to boiling.
  • Boil gently for 1 minute.
  • Mix in milk and vanilla and heat almost to boiling, but do NOT allow to boil.
  • Remove whole spices, then beat with a mixer until frothy.
  • Pour into mugs, garnish if desired, and serve hot.
