A tasty Indonesian dish combining stir-fried vegetables, prawns, and rice to create a delicious treat in a flavorful sauce!

2 tablespoons vegetable oil, divided
3 eggs, beaten
2 tablespoons dark soy sauce
2 tablespoons ketchup
1 tablespoon brown sugar
1 teaspoon toasted sesame oil
1 teaspoon sweet chili sauce
1 zucchini, chopped
1 carrot, chopped
8 green onions, sliced
1 clove garlic, crushed
2 cups cooked rice
½ pound cooked prawns
2 tablespoons fresh chives, chopped

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium heat. Swirl the beaten egg into the pan so that it coats the surface. Flip the egg after 30 seconds, and cook for an additional 20 seconds on the other side. Remove the egg from the pan and, when cool enough to handle, roll up on a cutting board. Slice the rolled egg to make thin strips and set aside.
  • In a small bowl, combine soy sauce, ketchup, brown sugar, sesame oil, and chili sauce; set aside.
  • Heat the remaining 1 tablespoon oil in a skillet or wok over medium-high heat. When hot, add the zucchini, carrot, and green onions. Stir-fry for three minutes. Add the garlic, rice, prawns, and sauce mixture and mix well.
  • Remove from heat and serve immediately, topped with the egg strips and chopped chives.

Its about time that I share this recipe here with you. I always include this when making a Rijsttafel (an Indonesian dinner consisting of many different dishes) This is originally intended for mussels but I prefer the prawns. The sauce can be made in advance for up to 2 days, keep in the fridge until needed

1 1/2 lbs large shrimp, cleaned and deveined
1 onion, chopped
1 -2 tablespoon sambal oelek (chili paste)
4 garlic cloves
2 teaspoons ground cumin
2 teaspoons ground coriander
8 candlenuts (you can substitute large macademia)
1 teaspoon fish, paste (fish sauce can be substituted)
1 teaspoon ground galangal
2 tablespoons ground nut oil
2 kaffir lime leaves
2 bay leaves
2 cups thick coconut milk
salt, to taste
sugar, to taste

Steps:

  • Put the following into your food-processor: onion, sambal, garlic, cumin, coriander, candle nuts, fish paste, galangal and process until you have a paste.
  • Heat the oil and fry the paste for approx 5 minutes, then add the lime leaves and the bay leaves.
  • Add the coconut milk and bring to the boil, then simmer for 15-20 minutes.
  • Add the prawns and cook until they turn pink, do not overcook them.
  • Taste the sauce and add salt and sugar to your liking.

If you have time for only one stop in Indonesia, Bali should be that stop. It is the island of temples, the island of gods, dances and festivities. This recipe from the Bali Beach Intercontinental Hotel on Sanur Beach, Bali back in the 1960's just says yum to me and I hope you enjoy it.

1 lb medium shrimp, peeled and cooked
1/2 cup ketchup
2 tablespoons lime juice
1 teaspoon Worcestershire sauce
1/2 teaspoon sambal oelek (chile garlic sauce)
3 green onions, finely chopped
6 large basil leaves, finely chopped
2 avocados, cut in half lengthwise, seeds removed
1 lemon, cut into 8 wedges

Steps:

  • In a blender, combine ketchup, lemon juice, Worchestershire sauce, sambal ulek, green onions and basil leaves. Puree until well blended.
  • Pour into mixing bowl and add shrimp. Stir well to coat. Cover and chill.
  • Spoon shrimp cocktail into cold avocado halves. Garnish with lemon wedges. Serve well chilled.
