Imagine what would happen if gooey butterscotch cookies and crunchy Cracker Jack had a love child. Caramel corn blondies are born! These are best served the day they are made for the crunchiest texture, but they are still yummy as the popcorn softens. It shouldn't be a problem though, since they take just minutes to throw together.

Yield Makes 24 bars

Number Of Ingredients 8

1 cup (2 sticks) unsalted butter, melted, plus more for pan
1 1/4 cups (packed) dark brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
2 cups all-purpose flour
3/4 cup chopped roasted salted peanuts, divided
3 heaping cups caramel corn with peanuts (such as Cracker Jack)

Steps:

  • Preheat oven to 350°F. Butter a 9x13" baking pan and line with parchment paper, leaving a 1" overhang on both long sides.
  • Whisk brown sugar and 1 cup butter in a large bowl until smooth. Add eggs, one at a time, whisking between additions, until smooth. Whisk in vanilla and salt. Add flour and stir to combine. Gently fold in 1/2 cup peanuts.
  • Scrape batter into prepared pan and smooth top, pushing batter to edges. Sprinkle evenly with caramel corn and remaining 1/4 cup peanuts and press down gently.
  • Bake blondies until golden brown and firm, 25-30 minutes. Let cool on a wire rack. Lift bar out of pan using parchment overhang and cut into 24 squares.

Finally, someone who understands that some vegans get tired of being so healthy all the time. Sometimes you still want guilt-inducing delicious treats. Well this recipe fits the bill. Smells like caramel corn & toasted nuts, tastes like the most decadent coffee cake.... I'm in love.

2 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces firm silken tofu (half a package of the vacuum-packed kind)
1/4 cup rice or 1/4 cup soymilk
1/3 cup canola oil
2 cups sugar (very strict vegans will want to mind your sugar)
2 tablespoons vanilla extract
1 1/4 cups macadamias, partially chopped & partially ground (a few pulses in a food processor for chopped, remove some for this & below, then a few more for grou)
1/4 cup nonhydrogenated margarine (no whey, mind you)
2 tablespoons turbinado sugar or 2 tablespoons other brown sugar
1/4 cup pure maple syrup
1 cup raw macadamias, coarsely chopped (either from first round in the food processor or chopped by hand on a cutting board with a large kni)

Steps:

  • Preheat the oven to 350. Lightly grease a 9x13-inch baking pan.
  • To prepare the dough:.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a blender, whiz the tofu with rice milk until smooth.
  • Add the oil, sugar, and vanilla, and blend again.
  • Pour the tofu mixture into the flour mixture and use a firm wooden spoon to combine everything well.
  • Fold in the macadamias. The batter will be thick and have a cookie dough consistency.
  • Spread in the baking pan and bake for 25 minutes. Meanwhile, prepare the topping.
  • To prepare the topping:.
  • In a saucepan over medium heat, combine the margarine, turbinado sugar, and maple syrup, and heat until the sugar dissolves.
  • Increase the heat to bring to a boil for 1 minute.
  • Stir in the nuts. Remove from heat.
  • Finally:.
  • Remove the blondies from the oven and pour the topping over them.
  • Return to oven, and let bake for 10 more minutes.
  • Let cool completely before serving. The topping should harden to a caramel-like consistency.
  • The cookbook says to cut them into 16 squares or triangles. I got 20 out of the recipe. ENJOY!

2 eggs
2 tsp. vanilla
1 cup chopped walnuts
2 oz. BAKER'S Semi-Sweet Chocolate, chopped
1-1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 pkg. (11 oz.) KRAFT Caramels
3 Tbsp. milk

Steps:

  • Heat oven to 350°F.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Combine sugar, butter, eggs, vanilla, nuts and chocolate in large bowl. Mix flour, baking powder and salt. Add to sugar mixture; mix well. Reserve 1 cup batter for later use; spread remaining batter onto bottom of prepared pan.
  • Bake 15 min. or until firm. Microwave caramels and milk in microwaveable bowl on HIGH 2 to 2-1/2 min. or until caramels are completely melted, stirring after each minute. Pour over baked layer in pan; spread to within 1/2 inch of edges.
  • Spoon reserved batter over caramel layer; swirl gently with knife. Bake 15 to 18 min. or until center is set. Cool completely. Use foil handles to remove dessert from pan before cutting into bars to serve.
