CRUSTLESS SPINACH RICOTTA QUICHE
This dish is great, especially if your a fan of spinach like I am. The dill weed adds a nice "spring-like" flavor

Steps:
- Preheat the oven to 350°F.
- Grease a 9" pie dish.
- Steam the fresh spinach until just wilted.
- (Or thaw frozen spinach and steam for about 5 minutes).
- Press the water out of the cooked spinach and set aside.
- Heat the oil in a small skillet and cook the onions until soft but not brown.
- Combine the ricotta cheese, eggs, dill, pepper, and nutmeg in a large bowl.
- Add the prepared spinach, tomatoes, and onions.
- Mix thoroughly and place mixture into the pie pan.
- Sprinkle Parmesan cheese over the top and bake for about 30-35 minutes.
- Let the quiche cool for 5 or 10 minutes before serving.

- Preheat the oven to 350 degrees F (175 degrees C).
- Cut each puff pastry sheet into 9 squares. Roll each square to fit individual 3-inch pie pans. Set puff pastry inside pie pans and place on a rimmed baking sheet. Pour a small amount of ceramic beads into each pie pan.
- Bake in the preheated oven for 5 minutes.
- Meanwhile, whip together eggs, spinach, milk, ricotta cheese, Parmesan cheese, mozzarella cheese, fontina cheese, salt, and pepper.
- Remove pie pans from the oven and remove the ceramic beads. Ladle egg mixture into each pie tin. Bake until light golden brown, about 30 minutes.

- Preheat oven to 425°F. Roll puff pastry to 11-inch square. Transfer to 9-inch diameter glass pie plate. Trim edges. Beat cream cheese in medium bowl until smooth. Gradually beat in half and half and eggs. Mix in remaining ingredients. Pour mixture into prepared crust. Bake until crust is golden brown and filling is set, about 25 minutes. Cool 10 minutes before serving.

- Using a 6cm cookie cutter, cut out pasty, and line small flat bottomed cup cake tin tray with pastry (oil tray 1st). Should be enough for 24 quiche.
- Fry bacon and place in pastry cases, put mozzarella on top of bacon.
- Beat eggs together and add milk, cream, nutmeg, and plain flour. Mix together.
- Pour small amounts of eggs mix into pastry cases until it is up to the top.
- Top with dried chives.
- Bake 20 mins until quiche has risen and looks golden.

Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt.
