MINI BUFFALO TURKEY MEATLOAVES

1/4 onion, roughly chopped
3 carrots (1 roughly chopped, 2 grated)
2 cloves garlic
1 1/2 pounds lean ground turkey
1 large egg
1/2 cup panko
1/4 cup whole milk
1/3 cup plus 2 tablespoons Buffalo hot sauce (such as Frank?s RedHot)
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
2 cups finely chopped broccoli florets
4 stalks celery, thinly sliced
1/2 cup blue cheese dressing

Steps:

  • Preheat the oven to 450˚ F. Combine the onion, chopped carrot and garlic in a food processor and pulse until finely chopped; transfer to a large bowl. Add the turkey, egg, panko, milk, 2 tablespoons hot sauce, 1/4 teaspoon salt and a few grinds of pepper. Mix well with your hands. Form into four 3/4-inch-thick oval patties on a rimmed baking sheet.
  • Bake the patties until lightly browned, firm and a thermometer inserted into the centers registers 160˚ F, 20 to 25 minutes.
  • Whisk the melted butter and remaining 1/3 cup hot sauce in a bowl. Brush the tops of the meatloaves with half of the sauce, then return to the oven until the sauce is baked in, about 4 minutes. Remove from the oven and brush with the remaining sauce.
  • Transfer the meatloaves to plates. Toss the broccoli, grated carrots and celery with the blue cheese dressing; serve with the meatloaves.

These meatloaf bites will be the hit of your next dinner; kids love these and they go great with mashed potatoes and and green beans. Any ground meat can be used for these little guys; including turkey,sausage, chicken or beef.

1 c panko breadcrumbs, divided
1 c finely grated parmesan cheese, divided
1 Tbsp olive oil
1 large eggs
1 c diced onion
1 1/2 tsp italian seasoning
1/2 c evaporated milk
1/ tsp pepper
1 tsp ground mustard
1 Tbsp brown sugar
2 lb ground turkey
6 oz mozzarella cheese, low-fat -cut into 12 bite-size pieces
16 oz jar pasta sauce, or your own, heated

Steps:

  • 1. Heat oven to 375^. Spray well a 12 count muffin tin.Set aside. --- Combine 1/2 c. of the panko crumbs and 1/2 c. of thParmesanan cheese with the olive oil in a small bowl, set aside.
  • 2. In a large bowl beat egg until light in color. Add remaining 1/2 c. panko crumbs and 1/2 c. cheese; and remaining ingredients, except the mozzarella cheese and the tomato sauce.Combine well , but do not over mix, so it doesn't get mushy.
  • 3. Divide the mixture in the muffin pan. Place one hunk of cheese in the center of the mixture and enclose it with the meat. Smooth the top over.
  • 4. Sprinkle the reserved breadcrumbs and cheese/olive oil mixture over tops of each cup, press lightly down to adhere. Place muffin tin on foil covered baking sheet to catch any overflow- to keep oven clean.
  • 5. Bake until cooked through about 25-30 minutes. Remove to wire rack for a few minutes. Loosen meatloaf bites with a small kitchen knife. Serve with mashed potatoes or cooked pasta with hot pasta sauce.

Nonstick cooking spray, for the pan
1 1/2 cups regular oats
1 cup whole milk
2 1/2 pounds ground turkey
4 slices bacon, cut into very small bits
3 tablespoons finely minced fresh parsley, plus more for serving
1/2 teaspoon seasoned salt, such as Lawry's
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 cup ketchup, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
  • Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
  • Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
  • Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
  • Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side

2 teaspoon(s) brown sugar, firmly packed
1 teaspoon(s) spicy brown mustard
1 pound(s) ground turkey
1 - egg, slightly beaten
2 tablespoon(s) dry onion soup mix
1/2 cup(s) dry unseasoned bread crumbs
1/2 cup(s) cheddar cheese, shredded
- cooking spray

Steps:

  • Preheat over to 375 degrees. Combine 1/4 cup of the ketchup, brown sugar and mustard in small bowl; set aside. Lightly spray 8x8 inch baking pan with cooking spray; set aside.
  • Mix turkey, egg, soup mix, bread crumbs, cheese and the remaining ketchup in large bowl until well combines. Divide meat mixtue into 4 portions (about 1 cup each) and form into loaves. Arrange in prepared pan.
  • Bake 30 minutes. Remove from oven and evenly top each loaf with ketchup mixture. Bake an additional 20 minutes or to an end temperature 165 degrees in the center. Cool 5 minutes before serving.
  • * You can change up the mustard to take on a different taste. We have enjoyed this with spicy, honey or regular mustard. *

1 cup milk
1 cup Italian seasoned bread crumbs
2 eggs
1 teaspoon salt
¼ teaspoon pepper
¾ pound Colby cheese, cut into 1/2-inch cubes
½ cup ketchup

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
  • Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

1 large egg, lightly beaten
1 cup crushed saltines
1 cup ketchup
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
2 pounds ground turkey
2-1/2 cups shredded cheddar cheese, divided
1/2 cup shredded Parmesan cheese

Steps:

  • Fold an 18-in. square piece of heavy-duty foil in half to make an 18x9-in. strip. Place strip on bottom and up sides of a 5- or 6-qt. slow cooker. Coat strip with cooking spray., In a large bowl, combine the first 6 ingredients. Add turkey, 2 cups cheddar cheese and Parmesan cheese; mix lightly but thoroughly (mixture will be moist). Shape meat into an 8x5-in. loaf; place in center of strip., Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Sprinkle with remaining 1/2 cup cheddar cheese during the last 20 minutes of cooking. Using ends of foil strip as handles, remove meat loaf to a platter. Let stand 15 minutes. , Freeze option: Prepare meat loaf as directed, omitting cheddar cheese over top. Securely wrap cooled meat loaf in foil, then freeze; freeze remaining 1/2 cup cheddar cheese in a freezer container. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Sprinkle with cheese.

½ sweet onion, chopped
1 tablespoon minced garlic
2 pounds ground turkey
1 pound processed cheese (such as Velveeta®), cubed
½ cup crushed buttery round crackers
⅓ cup ketchup
1 egg
1 pinch garlic salt, or to taste
salt and ground black pepper to taste
aluminum foil
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Spray a medium skillet with cooking spray. Add onion and garlic and saute until the onion is tender, about 5 minutes. Set aside to cool.
  • Mix ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, and pepper in a large bowl. Add cooled onion and garlic mixture and mix until well combined. Transfer to the prepared loaf pan. Place the loaf pan on a baking sheet and cover with aluminum foil.
  • Cook in the preheated oven for 1 hour. Remove foil and drain any excess juices from the loaf pan. Top meatloaf with ketchup and cook, uncovered, until no longer pink in the center, about 30 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
