INDIAN YOGURT MARINADE
If you like it cool and spicy, this is a great marinade for chicken, lamb or firm white fish. This marinade recipe makes enough for 2lb of meat, chicken or fish. Marinate red meat or poultry for 2 hours at room temp or 24-48 hours in the fridge. Marinate fish for 30 mins at room temp or 2 hours in the fridge.

Steps:
- Put the pork in a large bowl with the oil, oregano, lemon zest and juice and paprika as well as a good pinch of salt. Toss everything together to combine and leave to marinate for 10 mins.
- Combine the yogurt, garlic and cucumber together in a bowl. Season with salt and set aside.
- Heat the grill to high. Thread the marinated pork and the peppers on four metal skewers, alternating between the pork and peppers as you go. Place on a non-stick baking sheet and grill for 3-4 mins on each side, or until cooked through and golden brown.
- Serve with the lettuce, yogurt mixture and chilli sauce, and flatbreads, if you like.

Steps:
- Combine coriander, cumin, fennel seeds, 1/4 teaspoon salt and 1/4 teaspoon pepper in a spice grinder, and process until finely ground.
- Brush canola oil over tenderloin, and rub with spice mixture.
- Place pork on a roasting pan and let stand at room temperature for 30 minutes.
- Preheat oven to 425 degrees.
- Roast pork at this temperature for 15 minutes or until a thermometer registers 145 degrees.
- Let stand 5 minutes, and slice.
- Squeeze moisture from 1 cup grated english cucumber.
- Combine cucumber, yogurt, lemon rind, 1/4 teaspoon salt, dash red pepper, and minced garlic clove.
- Serve with pork.

- Clean the ribs and trim off any excess fat if needed. Pat-dry with paper towels. Then cut tiny slits in the meat part of the ribs and place them in a large dish (you may need to use two dishes if you don’t have one that is large enough to hold all the rib pieces).
- Combine the garlic, ginger, red & green chilies, Greek yogurt, black pepper, kosher salt, garam masala, ground cayenne (or Kashmiri red chili powder), lemon juice, tandoori color powder, and water in a blender jug. Blend until smooth. Reserve about 1 cup of the marinade and cover and refrigerate. (It’s for making the Tikka Masala Dip later.)
- Pour the remainder marinade in the blender jug over the ribs, and turn them to coat fully with the marinade on all sides. Cover with cling wrap (or the dish cover) and refrigerate for 5-6 hours, or overnight for maximum flavor and best results.
- Remove the ribs from the fridge at least 40 minutes before you plan to cook, and preheat the oven to 200°C/400°. Place a wire rack on top of a baking sheet, then break a large sheet of heavy duty aluminum foil and place it on top of the wire rack.

- Place pork chops in a resealable plastic bag. Combine marinade ingredients and pour over chops. Make sure they are well coated. Seal bag and place into refrigerator for 4-8 hours.
