this is a classic indian masala chai. i would venture to say half a billion people are drinking some version of this every morning. and for good reason -- it is super delicious!

2 cups water
3 -5 cloves
1 cinnamon stick, crushed
2 -3 cardamom pods, crushed
1/4 cup sugar or 1/4 cup sucanat
1 cup milk
2 tablespoons black tea leaves

Steps:

  • put the water on the stove and add spices, bring to boil.
  • cover and let simmer for few minutes.
  • add sugar or sucanat (whole ground sugar cane--like jaggery) and milk, stir.
  • bring back to just barely boiling (watch pot, milk will bubble over).
  • add tea leaves, cover pot, remove from heat.
  • steep for 5 minutes.
  • pour through filter to remove spices and tea leaves.

This version, which is adapted from "Street Food of India" by Sephi Bergerson, is made with black tea, fresh ginger, green cardamom pods, milk and sugar. Make it your own by adding cinnamon, cloves, pepper, fennel or star anise.

4 teaspoons strong black tea leaves, such as Assam, Keemun or English or Irish Breakfast
1 teaspoon coarsely chopped ginger (no need to peel)
2 green cardamom pods, cracked
1/2 cup milk
Sugar, to taste

Steps:

  • Pour 6 cups water, the tea, the ginger and the cardamom into a saucepan. Bring to a boil and cook 3 minutes. Add milk, and sugar to taste, and boil 2 minutes more. Strain and serve.

There's nothing as good as the perfect cup of Masala Chai whether it's in the middle of summer or for cozying up in the winter. Black tea is simmered with warming and fragrant spices and is best served with Parle-G biscuits or cake rusk for dipping.

2 cups water
2 tsp loose leaf black tea (or tea bags)
2 cardamom pods
1 clove
1 inch knob of ginger (chopped into slices)
1/4 tsp black peppercorn (freshly cracked)
1/2 cinnamon stick
1 cup whole milk
2 tsp sugar (or to taste)

Steps:

  • Add the whole spices to a mortar and crush them lightly into smaller pieces.
  • In a small saucepan on high heat, pour in the water and add the spices. Bring the water to a boil and add the tea bags or leaves. Lower the heat to a medium to low setting and simmer for two minutes, or until the tea leaves and spices have released flavor and color. Then, pour in the milk.
  • Method one - Double Boil:Bring the chai to a boil on high heat, so that it starts aerating and bubbling to the top. Remove the pot from heat until the bubbles come down. Replace the pot on the burner and bring the chai back up again to a boil and remove from heat a second time until the bubbles go back down.Method two - Pulling ChaiAlternatively, use a small cup with a handle or ladle to scoop some of the chai and "pull" it while it's simmering. Start by pouring in the chai at a low height and steadily move up higher while continuing to pour the chai back into the pot to create bubbles. Repeat a few times until the chai is bubbly.
  • Continue to simmer the chai until desired consistency and color, about 5-7 minutes. Some of the liquid will have evaporated by now, so the chai will be smooth and creamy. Remove the saucepan from heat.
  • Strain the chai with a sieve into glasses, mugs, or a tea pot. Mix in the sugar according to taste, and serve hot.

This is wonderfully heady and comforting, and perfect with an Indian meal. I've made it as directed, but also have a coffeemaker I use just for tea, and most often make it in that. I'll just put the spices in a coffee filter with the tea, then throw a cardamom pod in each cup when I serve it. It's great cold too (but I prefer it hot, with a little sugar)

2 tablespoons darjeeling tea (see note below)
8 white cardamom pods or 8 green cardamom pods
2 inches cinnamon sticks
4 whole cloves
5 cups cold water
honey or milk, to taste

Steps:

  • Warm your teapot by rinsing it with boiling water.
  • Place the tea& spices in the teapot.
  • Boil the 5 cups of water and pour over the tea& spices.
  • Let steep for 5 minutes, stir, and serve with a cardamom pod added to each cup.
  • Add sugar, honey and/or milk to taste.
  • NOTES:.
  • You can substitute Assam or Ceylon tea for the darjeeling, and can use teabags instead (1 or 2 per cup of water, depending on how strong you like your tea).
  • If using a coffeemaker, 4 teabags for a 10-cup pot seems to work perfectly.

1-inch piece of fresh ginger root
5 cups water
½ stick cinnamon
¼ teaspoon cardamom seeds (ground or crushed)
4 whole cloves
2 teaspoons loose tea or 2 tea bags

Steps:

  • Scrape the ginger root and cut into thin slices or crush with the side of a large knife on a cutting board. Combine all spices with water in a saucepan and bring to a boil. Lower heat to simmer, cover pan and simmer for 45 minutes. Raise heat to return to boiling. Add tea or tea bags, cover pan. Shut off heat immediately. Allow to steep for 3 to 4 minutes. Strain into a warmed teapot and serve. If sweetened tea is desired, sweeten with honey or sugar. Milk can also be added.
