Making homemade Jello-style gelatin is easy once you have the right balance of ingredients, and know the rules of what you can combine. Use this easy recipe and then make your own favorite flavors from scratch!

2 cups fruit juice (or combination fruit puree and juice (See Recipe Notes))
1 tablespoon unflavored powdered gelatin ((See Recipe Notes))
2 tablespoons honey ((can replace with 3 tablespoons (38 g) granulated sugar), or more, to taste)

Steps:

  • Select 4 single-serving heat-safe dishes to hold the JELLO as it sets, and set them aside.

This is even better than the real Jello! using juice in place of water will intensify the flavor even more, for orange jello use orange juice etc --- for sugar-free use a sugar substitute in place of sugar --- you will need to experiment with the the amount of sugar to suit you taste, my family likes it sweet so I use 1 cup you may wish to reduce amount to 3/4 or slightly less --- have fun with this and choose different flavors :)

1 1/2 tablespoons knox unflavored gelatin (1-1/2 envelopes)
1 cup water (cold or room temperature) or 1 cup juice (cold or room temperature)
1 cup boiling water
1 cup sugar
1 (6 g) unsweetened Kool-Aid powdered drink mix (choose any flavor, 1 small envelope)

Steps:

  • Place 1 cup cold water into a heat-proof bowl or cup; sprinkle 1-1/2 tablespoons knox gelatin over the water, then whisk vigorously until combined.
  • Add in boiling water, sugar and Kool Aid; whisk until no granules remain.
  • Refrigerate until firm.

EASY FRUIT-JUICE GELATIN

Skip artificially flavored gelatin in favor of this super-simple homemade version using any fruit juice you like.

4 cups fresh or premade fruit juice (aside from mango, papaya, and pineapple, any kind -- pulpy or not -- will work)
2 envelopes (1/4 ounce each) unflavored gelatin

Steps:

  • Place 1 cup juice in a glass bowl. Sprinkle with gelatin. Meanwhile, bring remaining 3 cups juice to a boil. Pour boiling juice over gelatin-juice mixture, and stir until gelatin dissolves completely. Pour into 5-ounce juice glasses, which make great single servings. Refrigerate until firm, about 4 hours.

Enjoy and old-fashioned favorite. I have loved Knox blocks since I was a kid and was surprised to not see a recipe here. So I thought I would add one. For those who don't know what Knox Blocks are they are the original Jello Jigglers and I think a little more tasty.

3 (3 1/4 ounce) packages Jello gelatin (any flavor)
4 (1 ounce) envelopes unflavored gelatin
4 cups boiling water

Steps:

  • Heat the Four Cups of Water Until Boiling.
  • Combine the Jello and Gelatin together in a bowl.
  • Pour in the water.
  • Stir until completely dissolved.
  • Pour into a glass dish or pan.
  • Put in refrigerator about 2 hours to cool and set.
  • When set cut into squares.
  • How many you get depends on how large you cut them. You can also use cookie cutters for shapes.

POMEGRANATE (OR CRANBERRY) GELATIN

A new flavor of gelatin :) Prep time is for using prebottled pomegranate juice, and does not include chilling time.

2 cups cold pomegranate juice or 2 cups cranberry fruit juice (or juice blend)
1/4-1/3 cup sugar (depending on juice tartness)
1 envelope unflavored gelatin (I use Knox brand)

Steps:

  • Heat 1 cup fruit juice in small saucepan until it just simmers, do not cook for any length of time.
  • Turn off heat and stir in sugar, if using.
  • Place remaining 1 cup cold juice in a medium bowl and sprinkle with gelatin, stir, let sit for 2 minutes and stir again.
  • Add warm juice to cold juice, stir, and pour mixture into an 8 x 8-inch pan.
  • Refrigerate until firm (about 4 hours), and cut into cubes.

CREAMSICLE GELATIN

Mmm.... A delicious and healthy dessert treat. Do not use fresh or frozen fruit for this recipe. The gelatin will not set up. Cook time is time in the refrigerator. This doesn't taste a lot like a creamsicle, but it's delicious all the same, and the coconut really adds to this dessert.

2 (3 ounce) boxes sugar-free orange flavor Jello gelatin
2 cups boiling water
16 ounces low-fat vanilla yogurt
1 (11 ounce) can mandarin orange segments, well drained
8 ounces pineapple tidbits, well drained (unsweetened)
1/2 cup shredded coconut, toasted (optional)
whipped cream (Redi-whip from a can) (optional)

Steps:

  • In a medium bowl, combine gelatin and boiling water. Stir until gelatin is completely dissolved.
  • With a wire whisk, beat in yogurt until mixture is smooth. Refrigerate about 1 1/2 hours or just until slightly thickened.
  • Stir in orange segments and pineapple. Spoon into decorative bowl or individual parfait glasses. Cover and refrigerate 1 more hour or until set. Serve with a little whipped cream and a sprinkle of coconut if desired.

MIKE'S GELATIN GARDEN SALAD

This is my son's adaptation of a old family favorite using Jello and fruits (originally crushed pineapple). We love raw fresh vegetable, eat lots of salads during the hot summer months here in Shasta County, California, so he just started experimenting with ingredients. While this salad is best when everything is most crispy, leftovers keep well in the fridge for several days.

1 (3 ounce) box lime Jell-O gelatin
1 (3 ounce) box lemon Jell-O gelatin
2 cups hot water
1 cup mayonnaise
6 ounces evaporated milk (1/2 large can)
1 pint cottage cheese (curd you prefer)
2 carrots, long shred
1 granny smith apple, thin slice
2 celery ribs, medium chop
3 red radishes, thin slice
1/4 cup sunflower seeds, hulled
1 teaspoon lemon pepper

Steps:

  • Use microwave to heat water.
  • In large mixing bowl, add both boxes dry Jello. Stir in hot water to completely dissolve Jello.
  • Start preparing veggies/fruit/nuts, shred, chop, dice, whatever. About 2 cups works best and assures a bit of crunch in each bite.
  • Then begin stirring into Jello mixture, one at a time, each of your prepared veggies/fruit/nuts.
  • Blend in mayonnaise, blend in evaporated milk, and blend in cottage cheese.
  • Add Lemon Pepper, give another real good stir so everything is well distributed.
  • Can be poured into mold or attractive serving bowl if desired, or leave in mixing bowl. Return combined gelatin salad to fridge, thoroughly chill. Can be turned out onto plate or scooped.

1/2 cup water
1 1/2 lbs red seedless grapes
1/4 cup sugar
1/2 cup water

Steps:

  • Sprinkle gelatin over 1/2 cup water in medium sized mixing bowl.
  • Let sit.
  • Put grapes, sugar and 1/2 cup water into pot and bring to a boil.
  • Reduce heat and simmer 12 minute.
  • Using potato masher, smash the grapes in the pot to get all the juices out.
  • Using a ladle, scoop out the juice into a fine mesh strainer over the bowl of gelatin.
  • Press on the skins to get all the juice out.
  • You should get about 2 cups of juice (+/- 1/4 cup either way should work fine).
  • Pour into a greased loaf pan and chill until firm (3 hours).
  • Cut into cubes and serve with sweet cream if desired.
