1 tablespoon oil
2 dried bay leaves
1 cinnamon stick
1 teaspoon fennel seeds
1 cup chopped onions
1/4 teaspoon ground turmeric (turmeric powder)
1 teaspoon ground coriander (coriander powder)
2 teaspoon garam masala
1/2 teaspoon red chili powder
1/4 cup chopped coriander (cilantro) leaves
Salt to taste
Chopped coriander (cilantro) leaves, to garnish
1 kg pork (shoulder or leg), diced
1/2 cup chopped onions
3 garlic cloves, chopped
1" fresh ginger, chopped
1/2 teaspoon ground turmeric (turmeric powder)
1 tablespoon ground coriander (coriander powder)
1 tablespoon garam masala
1 teaspoon red chili powder
1/4 cup coconut slices
Salt to taste

Steps:

  • Place pork, sliced onions, garlic, ginger, ground turmeric, ground coriander, garam masala, red chili powder and coconut slices (if using) in a pressure cooker. Toss to coat pork in the ground spices. Season with salt. Cover the pressure cooker, and cook for about 5-6 whistles.
  • Alternatively, you can cook pork over the stove top. Place all the ingredients in a large pan. Pour in 1 1/2 cups water. Cook over medium-high heat for about one hour or until pork is tender and cooked through.
  • To make the tempered spices, heat oil in a large frying pan over medium-high heat. Stir fry bay leaves, cinnamon stick and fennel seeds.
  • Add onions, and sauté, stirring occasionally, for about 2-3 minutes or until browned. Add ground turmeric, ground coriander, garam masala and red chili powder. Stir fry for 1 minute.
  • Add enough water (1/2 -3/4 cup) to make thick sauce. Season with salt. Bring to a boil. Reduce heat and simmer for 3-4 minutes.
  • Add cooked pork and chopped coriander (cilantro) leaves. Simmer for another 3-4 minutes.
  • Garnish with more coriander (cilantro) leaves.

1 lb lean pork, cut into 1-inch cubes
2 tablespoons butter
2 tablespoons onions, finely chopped
2 garlic cloves, finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon turmeric
2 tomatoes, seeded and chopped
2 teaspoons tomato puree
1/2 cup water
3 tablespoons coconut cream
1 green chili, seeded and sliced
1 teaspoon paprika
1 teaspoon salt

Steps:

  • Heat a pot and melt the butter.
  • Fry the onions and garlic for 3 minutes.
  • Add the cinnamon, chili powder,coriander, cumin and turmeric, stir and fry for 2 minutes.
  • Add the pork and cook for 3 minutes stirring to coat the meat with the spices.
  • Add the chopped tomato and puree with the water, mix well and add the chopped chili coconut cream and paprika.
  • Cover pot and cook on low heat till the meat is tender, approx 30 minutes.
  • Season with salt to taste.
  • Serve with rice and a vegetable curry for a complete meal.

SRI LANKAN PORK CURRY

3 tablespoons rapeseed or coconut oil
1 teaspoon black mustard seeds
1 cinnamon stick
1 tablespoon cumin seeds
20 curry leaves
2 large red onions - finely chopped
2 teaspoons red chilli powder (or to taste)
3 tablespoons Madras curry powder
1 teaspoon turmeric
2 tablespoons garlic and ginger paste
1 tablespoon tomato paste
1 or more green chillies - cut into thin rings
1 generous tablespoon tamarind pulp
400ml thick coconut milk
900g (2 lbs.) pork leg - fun into large chunks
Water or chicken stock to cover
Salt and black pepper to taste
1 teaspoon garam masala

Steps:

  • Heat the oil over medium high heat in a wok or large saucepan.
  • When hot, add the black mustard seeds and cinnamon stick. When the mustard seeds begin to pop, add the cumin seeds and curry leaves.
  • Stir this all around in the oil for about 30 seconds and then add the chopped onions. Fry the onions until soft and translucent and the pour in the ground spices and garlic and ginger paste.
  • Add the chopped chillies and tomato paste, followed byth the tamarind pulp and coconut milk.
  • Mix all these ingredients well and then add the pork with just enough water or stock to cover.
  • Simmer for about 40 minutes or until the pork is fork tender.
  • Season with salt and pepper to taste and sprinkle with the garam masala to serve.

1 cube chicken bouillon
½ teaspoon garlic powder
¼ teaspoon dried rosemary

1 pound pork tenderloin, cut into strips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat water, dried onion, chicken bouillon, garlic powder, rosemary, thyme, and salt in a microwave-safe bowl for 1 minute in the microwave; let stand until onion is rehydrated and bouillon is dissolved.
  • Heat coconut oil, curry powder, and ground red pepper in a large oven-proof skillet over medium heat, stirring constantly, until oil takes on the color of the curry powder, 5 to 6 minutes.
  • Cook and stir pork tenderloin slices in coconut oil mixture until pork begins to brown. Sprinkle flour over pork; cook and stir until slices cook through; 2 to 3 minutes more.
  • Stir bouillon mixture, coconut milk, and peanut butter into pork mixture; bring to a boil, stirring constantly. Cover skillet with an oven-proof lid and transfer to oven.
  • Cook pork in the preheated oven until tender and sauce is bubbling, about 45 minutes. Remove from oven, remove lid, and rest pork for 10 minutes to allow sauce to thicken.

EAST INDIAN PORK VINDALOO



East Indian Pork Vindaloo image

This pork vindaloo is an authentic dish that must be made for an East-Indian wedding. It is spicy and bright red in color. This curry is made with high fat pork and lots of vinegar which means it has a longer shelf life perfect for three to four days to serve at every meal at that wedding.

1 kg Pork
15 Red Kashmiri chilles
10 Garlic cloves
1 inch Fresh ginger
1½ tbsp Cumin seed (jeera)
1 tsp Turmeric
¾ cup Vinegar

Steps:

  • Prepare pork - Cut the meat into large chunks, season generously with salt and pepper - let marinate overnight in the fridge. On the next day, wash and pat dry.
  • Ground masala - Soak the chilies in hot water for 10 minutes. In a blender or food processor - blend together the chilies, garlic, ginger, turmeric, and cumin seed with vinegar. (Do not use water) Pro tip - I like to remove the seeds from the chilies to make them less spicy but it also gives a smoother consistency for the masala paste.
  • Marinate the pork - Add the ground masala to the chopped pork pieces making sure to massage it into the meat so it is all well coated. Let it marinate for 8 hours in the fridge or up to 24 hours. Pro tip - Use an earthen pot, plastic, or glass container to marinate. Do not use a metal container as the vinegar will react with the metal causing oxidization.
  • Cook the vindaloo - Place the vindaloo in a skillet or cook it over medium heat until the pork renders some of the fat. Reduce heat to a low simmer and cook until the meat is fork-tender.
  • Taste and adjust seasoning. If necessary add more vinegar (but not water).

2 lbs lean ground pork (or lamb)
1 tbsp fresh ginger (peeled and grated or 1 tsp dried ginger)
1 tbsp cumin
1 tbsp coriander
1/4 tsp ground cloves
1/4 tsp ground cinnamon
1/8 tsp nutmeg
1/4 tsp black pepper
1/4 tsp cayenne pepper
1 tsp salt
2 tbsp plain yogurt
1 tbsp vegetable oil
1 large onion (chopped)
3 garlic cloves (minced)
1 tbsp fresh ginger (peeled and grated)
2 tbsp cilantro stalks (chopped)
3 tbsp Indian curry paste (not sauce)
400 gl/14 oz canned chopped tomatoes
250ml/ 1 cup water
10g/1 cup black kale/cavolo nero or spinach (chopped)
125ml/1/2 cup light cream/single cream (or coconut milk)
1 tsp garam masala (optional)
2 tbsp cilantro leaves (chopped)

Steps:

  • In a large bowl combine pork, ginger, cumin, coriander, cloves, cinnamon, nutmeg, black pepper, cayenne pepper, salt and plain yogurt.
  • Roll into golf ball-sized meatballs and brown in 1 tbsp of vegetable oil until golden but not cooked all the way through. Remove to a plate and set aside.
  • Discard excessive fat but leave approximately 1 tbsp in the pan. Add onions, garlic, ginger and chopped cilantro stalks and cook over low heat without browning for 10 minutes, stirring occasionally.
  • Add curry paste and stir for a minute, then add canned tomatoes and water, stir to combine, return the meatballs to the pan, and spoon some curry sauce on them to coat them, then turn the heat up and bring to a boil, then turn the heat to low, cover with a lid and simmer for 20 minutes.
  • Add chopped kale and any other vegetables if using and cook uncovered for 10 minutes longer, stirring once in a while to avoid burning. In the last few minutes add light cream and taste for salt, add more if necessary. (I add no salt to this sauce as Patak's curry pastes are quite salty already!)
  • Sprinkle with garam masala and chopped cilantro leaves. Serve with basmati rice, naan and/or lentil dhal for a low carb version.

1/4 cup vegetable oil
2 medium onions (thinly sliced)
6 large cloves garlic (minced)
2 1/2 tbsp white vinegar
2 tbsp grainy mustard
1/2 tsp ground cayenne
1 1/2 tsp ground cumin
1 1/2 tsp ground turmeric
2 tsp kosher salt
1 1/2 cups coconut milk
2 1/2 lbs bone-in pork chops *see note in post (or 1 1/2 lbs boneless pork, cut in 1" pieces)
Small handful cilantro leaves (for serving)

Steps:

  • In a large saucepan, cook onions in oil over medium heat until nicely golden, about 20 minutes, reducing heat if onions start to brown before they're soft.
  • Meanwhile, whisk together the vinegar, mustard, spices and salt in a small bowl.
  • Add garlic to onions and cook 1 minute, then add vinegar mixture and cook a minute more, stirring frequently. Stir in coconut milk.
  • At this point, you can add the pork, cover and simmer on the stove for 1 to 1 1/2 hours, until pork is tender, or add the pork to a pressure cooker, stir in the sauce, and cook on high pressure for 30 minutes. Let the steam release naturally. Top with cilantro.

This wonderfully warming pork curry recipe is as tasty as it looks. It's made with tender strips of pork loin steak and flavoured with fennel, turmeric and coconut milk, with a fresh hit of crunchy green beans.

750 g pork loin steak or fillet (room temperature)
2 tbsp vegetable oil (canola oil) (or coconut oil)
1 tsp fennel seeds (leave out, if preferred)
2 dried red chillies (remove, if preferred)
2 onion (finely diced)
5 cloves garlic (minced)
1 pinch sea salt
1 pinch freshly ground black pepper
1 tsp ground turmeric
400 g canned chopped tomatoes
1 fresh green chilli (chopped)
1 tbsp fresh root ginger (grated)
2 tsp ground cumin seeds (or cumin powder)
1 tsp ground coriander (or coriander powder)
200 g canned coconut milk (low fat, if preferred)
100 g green beans (trimmed)
1 handful fresh coriander (cilantro) (leaves only, chopped)
1 lime

Steps:

  • Place a wide, large saucepan or large frying pan over a medium heat and add the oil. Once hot add the whole fennel seeds and red chillies (if you are using them).
  • Add the onions and sauté until they start to brown. You'll probably need to lower the heat to ensure they brown gently rather than stir fry.
  • Remove the fat from the pork and cut into strips. Season the pork with salt and lots of black pepper and ½ tsp turmeric.
  • Add the tinned tomatoes, green chilli, grated ginger into the pan with the onions and stir over a medium-high heat.
  • Once it starts to simmer, add the remaining turmeric, ground cumin and coriander and stir. Let it reduce and thicken.
  • Add the meat and stir to coat with the sauce. Reduce the heat and cook for 5-10 minuets.
  • Pour in the coconut milk and heat through then add the trimmed beans and cook for a further 5-10 minutes until the beans are cooked.
  • When cooked through, check the seasoning and add the coriander leaves (fresh cilantro leaves), and a squeeze of lime. Serve with plain rice.

6 bone-in pork loin chops (about 1 inch thick)
1 tablespoon/15 mL cumin (ground)
1 tablespoon/15 mL brown sugar
2 dried chilies
1 teaspoon/5 mL whole cloves
1 teaspoon/5 mL coriander seeds
1/2 teaspoon/2.5 mL curry powder
1/2 teaspoon/2.5 mL cardamom powder
1/2 teaspoon/2.5 mL onion powder
1/2 teaspoon/2.5 mL black peppercorns
1/2 teaspoon/2.5 mL mustard seeds
1/2 teaspoon/2.5 mL cinnamon (ground)
1/4 teaspoon/1.25 mL garlic powder
1 teaspoon/5 mL kosher salt

Steps:

  • Gather the ingredients.
  • Place chiles, cloves, peppercorns, mustard and coriander seeds in a spice grinder. Grind until spices are a fine powder. Pour into a bowl and add remaining spices.
  • Place pork chops onto a baking sheet. Take rub and apply all over the front and back of the meat. Let stand at room temperature for up to 20 minutes. If you are making ahead of time, coat with spices, cover with plastic wrap and place into the refrigerator. Let stand for 20 to 30 minutes at room temperature before placing onto​ the grill.
  • To prepare for charcoal grilling, remove the cooking grate and light the charcoal in a charcoal chimney (look for a red, ashen color to the briquettes). You will need enough charcoal to cover half the coal grate, about 2 layers thick. Place cooking grate over hot coals and open vent. Oil grate and place chops onto grill directly over the coals. Grill for 2 minutes per side. Move to the indirect cooking space (where there are no coals) and continue cooking for 4 to 6 minutes per side or until the internal temperature is between 160 and 165 F.
  • Remove from grill and cover with foil. Allow chops to rest for 5 minutes. If using a gas unit, set temperature for medium-high heat and cook 8 to 9 minutes per side or until internal temperature is right. After the meat has had a chance to rest, serve immediately with your favorite side dishes.
  • Enjoy.

1 large onion, peeled and chopped
1 tsp grated root ginger
2 garlic cloves, peeled and crushed
2 tbsp curry paste
900g pork fillet, cubed
400g can chopped tomatoes
150ml pork or vegetable stock
Squeeze of lime or lemon juice
Salt and freshly ground black pepper
Coriander leaves, to garnish

Steps:

  • Heat the oil in a large deep frying pan and fry the onion for 5 mins. Add the ginger and garlic and fry for a further 5 mins. Stir in the curry paste and cook for 1 minute then add the pork and fry over a medium heat, stirring for 2-3 mins, until no longer pink.
  • Add the chopped tomatoes and stock and bring to the boil. Reduce the heat to a simmer and cook for 20-25 mins until the pork is tender and cooked through, stirring occasionally.
  • Add the lime or lemon juice and season to taste with salt and freshly ground black pepper. Serve garnished with coriander leaves.
