INSTANT POT MAGIC APPLE CAKE



Instant Pot Magic Apple Cake image

You don't need fancy inserts or special pans to make a sweet and satisfying baked dessert in an instant pot. This easy recipe lets you cook up a warm, spiced apple treat right in the bowl of the machine.

1/4 cup packed dark brown sugar
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Pinch grated nutmeg
6 Honeycrisp apples, peeled and cored, but left whole
One 15.25-ounce box yellow cake mix
8 tablespoons (1 stick) unsalted butter, melted and cooled
3 large eggs
3/4 cup skin-on sliced almonds
Ice cream, for serving
Caramel sauce, for serving

Steps:

  • Whisk together the brown sugar, granulated sugar, cinnamon, allspice, nutmeg and 1 1/2 cups water in a bowl and add to a 6-quart Instant Pot®. Add the apples to the pot. Follow the manufacturer's guide for locking the lid and set to pressure cook on low for 1 minute (see Cook's Note).
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.
  • Break each apple in half using a wooden spoon. Place the cake mix in a bowl and combine with the butter, eggs and 3 tablespoons of the liquid from the pot; the mixture will be thick. Pour it evenly over the apples in the pot. Sprinkle with the almonds. Lock the lid and set to pressure cook on low for 30 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Allow to sit for 15 minutes. Spoon the cake into bowls and top with ice cream and caramel sauce.

2 cups sliced apples (or more) or 2 cups peaches (or more)
2/3 cup sugar
cinnamon or nutmeg
1 lemon, zested and juiced
1 tablespoon flour
2 -4 tablespoons melted butter
1 cup flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 egg yolks
1 tablespoon melted butter
1/4 cup milk

Steps:

  • Preheat oven to 425°F
  • Grease a deep 8" pan or ovenproof dish -- and cover the bottom well with the apples.
  • Sprinkle the fruit with 2/3 cup sugar, cinnamon and the juice and zest of the lemon.
  • Lightly mix in 1 tbsp flour. Set aside.
  • Sift flour. Resift with sugar, baking powder and salt.
  • Beat and add the egg yolks, melted butter and milk.
  • Beat these ingredients with swift strokes until blended.
  • Cover the fruit with the batter.
  • Bake the cake for about 30 minutes.
  • Reverse it on a platter. Cool slightly.
  • Use the egg whites for a meringue if desired.

If you can't decide between apples or peaches - you don't have to! This bread combines the best of both. Recipe is from my What's Cooking in New England Cookbook - a wonderful gift from my cookbook swap partner this year.

1 1/2 cups brown sugar, packed
2/3 cup oil
1 egg
1 cup sour milk (add 1 tbsp. vinegar to milk)
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 cup peach, diced
1 cup apple, diced
1/2 cup nuts, chopped

Steps:

  • Combine sugar and oil. Beat in egg, milk and vanilla. Mix well. Sift flour and baking soda into the egg mixture; beat for 2 minutes. Fold in peaches, apples, and nuts. Pour into 2 greased and floured loaf pans. Bake at 325 degrees for 4-45 minutes.

This recipe was inspired by the fruits of my garden. Apples and the Indian blood peaches rounded with some Indian spices (cinnamon, cardamom and nutmeg) are the flavors of this Indian summer cake.

500 g peaches (if possible indian blood peaches)
1200 g apples, peeled and coarsely grated
5 tablespoons sugar
1 teaspoon ground cinnamon
1/4 teaspoon cardamom powder
1 pinch nutmeg
5 tablespoons water
3 tablespoons cornstarch
3 eggs
3 tablespoons sugar
4 tablespoons flour
1/2 tablespoon baking powder
butter, for the mould

Steps:

  • Cover your baking mould with baking paper and grease it with butter.
  • Wash the peaches, cut in slices and arrange nicely in the mold.
  • Mix the apples, the sugar and the spices together and heat in the microwave until hot.
  • Mix the water with the starch well in a glass and add to the apples mix.
  • Heat again until it thickens.
  • Put this hot mixture on the peaches without moving the slices.
  • Mix eggs with sugar in the bowl until soft. Add the flour and the baking powder to a soft dough.
  • Add the dough on the bowl and cover the fruit.
  • Bake 35 minute at a temperature of 180°C (heat and timing are basing it on convection oven).
  • After cooling down, turn the cake on a plate upside down and remove the baking paper.
