2 pounds lean ground beef
2 (1.25 ounce) packages taco seasoning mix
4 cloves garlic, minced
½ teaspoon cayenne pepper
1 tablespoon chili powder
½ cup water
18 (6 inch) corn tortillas
1 (24 ounce) jar salsa
1 cup sliced green onion
1 (16 ounce) container sour cream
1 ½ cups shredded Cheddar cheese
1 ½ cups shredded Monterey Jack cheese

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, then season with taco seasoning, garlic, cayenne pepper, chili powder and water. Simmer for 10 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Grease the bottom of a 9x13 inch baking dish.
  • Place 6 tortillas into the prepared baking dish. Spread 1/3 of the salsa on top of the tortillas. Spread 1/2 of the meat mixture evenly over the salsa. Sprinkle with 1/2 of the green onions. Drop 1/2 of the sour cream randomly over the green onions. Top with 1/2 cup Cheddar and 1/2 cup Monterey Jack cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa, and sprinkle with remaining cheese.
  • Bake in a preheated oven for 30 to 45 minutes or until cheeses are melted.

1 teaspoon canola oil
1 pound ground beef sirloin
2 tablespoons chili powder
Kosher salt
Two 16-ounce jars salsa
1 pound no-boil lasagna noodles
Two 16-ounce packages part skim mozzarella, cut into 1/2-inch pieces
1/2 cup sour cream
1/2 small head iceberg lettuce, shredded
1 large beefsteak tomato, diced
1/2 cup shredded sharp Cheddar
1/2 cup crushed tortilla chips

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Heat the oil in a large skillet over medium-high heat until shimmering but not smoking. Add the ground beef and sprinkle with the chili powder and 1 teaspoon salt. Cook, breaking apart chunks of meat with the back of a spoon, and stirring often, until meat is crumbled and browned, 5 to 6 minutes. Stir in the salsa and 1 cup of water, bring to a simmer and cook until slightly reduced, about 4 minutes. Remove from the heat and set aside.
  • Spread a quarter of the meat sauce over the bottom of a 9- by 13-inch baking dish. Lay a third of the noodles over the sauce, overlapping slightly and breaking them to fit, if needed. Leave a 1/2-inch space around the edges of the baking dish. Top the noodles with another quarter of the meat sauce and a third of the mozzarella. Make another layer with a third of the noodles, a quarter of the meat sauce and a third of the mozzarella. Repeat, making a final layer with the remaining third of the pasta and quarter of the sauce, making sure that the top layer of noodles is completely covered in sauce. Top with the remaining third of the mozzarella.
  • Cover loosely with foil and bake until the cheese is melted and bubbling and the noodles are tender when pierced with a knife, about 1 hour. Remove the foil and cook 15 minutes more. Let rest 10 minutes. Dollop with sour cream and sprinkle with lettuce, tomato, Cheddar and chips.

1/2 cup chopped green pepper
1/2 cup chopped onion
2/3 cup water
1 envelope taco seasoning
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
6 flour tortillas (8 inches)
1 can (16 ounces) refried beans
3 cups shredded Mexican cheese blend

Steps:

  • In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in black beans and tomatoes. Simmer, uncovered, for 10 minutes., Place 2 tortillas in a greased 13x9-in. baking dish. 3 cups shredded monterey jack and cheddar cheese blend, divided
4 1/2 cups salsa
9 no-boil lasagna noodles
sour cream
chopped fresh cilantro

Steps:

  • Cook ground beef in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink; drain and return to skillet.
  • Stir in taco seasoning, corn, and 1/2 cup water.
  • Cook, uncovered, stirring occasionally, 5 minutes or until thickened.
  • Add cream cheese, stirring until melted.
  • Remove from heat, and stir in 1 1/2 cups Cheddar-Monterey Jack cheese.
  • Spread 1 cup salsa evenly in a lightly greased 13- x 9-inch baking dish.

2 tablespoons olive oil
1 small green bell pepper, diced
1 small yellow onion, diced
1 lb ground turkey
⅔ cup water
1 package McCormick® Original Taco Seasoning
1 can black beans, drained, and rinsed
1 cup frozen corn kernels, thawed
1 can fire roasted diced tomatoes, undrained
6 flour tortillas, 8 in (20 cm)
1 can refried beans
3 cups mexican cheese blend, shredded

Steps:

  • Preheat the oven to 350°F (180°C) and grease a 9 x 13-inch (22x33 cm) baking dish with cooking spray.
  • Heat the olive oil in a medium pan over medium-high heat. Add the green pepper and onion and sauté until soft and the onion is translucent, about 6 minutes.
  • Add the ground turkey and break up with a wooden spoon. Cook for another 4 minutes, or until it is no longer pink. Add the water and taco seasoning and bring to a boil. Reduce the heat to medium-low and simmer for 2 minutes.
  • Stir in the black beans, corn and fire-roasted tomatoes. Continue to simmer, uncovered, for 10 minutes, until thickened, then remove the pan from the heat.

  • Cook noodles according to package directions.
  • Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning.
  • In a small bowl, combine egg whites and ricotta cheese.
  • Drain noodles.

I think I got the base for this recipe from "Quick Cooking" magazine by Taste of Home. I've modified the original to make it easier, faster, and a little spicier. It is my teenager's favorite meal.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (4 ounce) can green chilies, drained
1 (15 ounce) can Mexican chili beans, drained
1 (15 ounce) can chopped tomatoes, drained
1 (15 ounce) can refried beans
1 (12 ounce) package shredded cheese, can be mexican mix or any combo you like
8 fat free tortillas

Steps:

  • Preheat oven to 375 degrees.
  • Brown the ground beef in a large saucepan.
  • Drain beef and add packet of taco seasoning and the drained green chilies, chili beans, and tomatoes.
  • Simmer for about 5 minutes.
  • Select cooking dish (s)- For one big lasanga use a 9x13 pyrex dish- Or use two smaller dishes so you can freeze one for later.
  • Spray dish (s) with cooking spray to keep food from sticking.
  • Put one layer of tortillas in the bottom of the dish- Two for the large dish or one for two smaller.
  • Spoon in about 1/3 of the meat mixture, 1/3 of the refried beans, and 1/4 of the cheese- If you really like cheese save more for the top--it makes the top prettier and cheesier.
  • Add another layer of tortillas and then repeat adding the mixture, refried beans, and cheese until you only have two tortillas and 1/4 cheese left.
  • Put the last two tortillas on the top and cover with remaining cheese.
  • Cover with foil and cook for 25 to 30 minutes.
