1 teaspoon garlic powder, or to taste
½ cup mayonnaise, or more if needed

  • Stir together the Cheddar cheese, pimentos, and garlic powder. Stir in the mayonnaise a little at a time, until the spread reaches your desired consistency. Refrigerate for 2 hours to let the flavor develop.

Our favorite, from Southern Living Homestyle cooking 2002. This makes a lot, I often half the recipe. It freezes well for up to a month. I usually double the pimento. My mom makes it with light velvetta, reduced fat cheeses, lite mayo and splenda and it is still really good.

4 cups shredded mild cheddar cheese
4 cups shredded sharp cheddar cheese
2 cups mayonnaise
2 (4 ounce) jars diced pimentos, drained
3 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Process half of all ingredients in a food processor until cheese mixture is blended.
  • Remove processed cheese mixture to a large bowl.
  • Repeat procedure with remaining half of all ingredients.
  • Serve with assorted crackers, or use as a sandwich spread.

1 pound(s) velveeta cheese
1 pound(s) medium cheddar cheese
1 pound(s) sharp cheddar cheese
1 pint(s) miracle whip salad dressing
8 ounce(s) pimento, drained and chopped
3 tablespoon(s) sugar
*** - salt and pepper to taste

Steps:

  • Grate cheeses or cut into small pieces. Allow to soften at room temperature.
  • Combine all ingredients and blend by using mixer, blender or food processor. (It may be necessary to divide ingredients into two batches unless you have a very large mixing container.)
  • Store leftovers in fridge. Can be frozen. Yields: 2 quarts.

Pimento cheese spread definitely qualifies as comfort food. Mine is an update with ingredients like good sharp Cheddar, pickled jalapeños, and Sriracha. This recipe is inspired by the pimento cheese from a Brooklyn cheese shop that I love called Stinky (what a great name!).

8 ounces cream cheese, at room temperature
3/4 cup good mayonnaise, such as Hellmann's
1 1/2 teaspoons granulated onion (not onion powder)
2 large garlic cloves, grated (see Cook's Note)
1 teaspoon whole celery seed
Kosher salt
3/4 cup canned pickled jalapeño peppers, drained and chopped
1/2 cup chopped scallions, white and green parts (3 to 4 scallions)
1/2 cup chopped roasted red peppers, drained (4 ounces)
4 cups grated sharp white Cheddar, such as 2-year aged Grafton (10 ounces)
1 tablespoon Sriracha
Ritz crackers, corn chips, and/or crudités, for serving

Steps:

  • In a large bowl, combine the cream cheese, mayonnaise, onion, garlic, celery seed, and 1/2 teaspoon salt with a wooden spoon. Add the jalapeños, scallions, red peppers, Cheddar, and Sriracha and combine well. Taste for seasonings and serve with crackers, corn chips, and/or crudités.

We have never gone back to store bought pimiento cheese after this recipe. My aunt's mother-in-law invented this spread and we have been eating it for years.

2 (10 ounce) packages cracker barrell vermont extra-sharp cheddar cheese (this is a white-colored cheese)
1 (8 ounce) package cream cheese, softened
1 (4 ounce) jar pimientos
1/4 cup vinegar
1 tablespoon flour
1 teaspoon lemon pepper
1 teaspoon yellow mustard
1/2 cup mayonnaise

Steps:

  • Bring vinegar to a boil in the microwave.
  • Add flour to vinegar and stir to make a paste.
  • Add softened cream cheese to above mixture and stir thouroughly.
  • Add all other ingredients except cheese to above mixture and mix well.
  • Grate the cheese with manual cheese grater or in your food proccessor.
  • Add cheese into mixture and mix well.
  • Serve on bread as a sandwich or on crackers, wheat thins, etc.
