RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE
It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

- In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
- When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
- Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
- add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
- After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

EASY HOMEMADE SPAGHETTI SAUCE RECIPE
My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

IN SEARCH OF THE ULTIMATE SPAGHETTI/PIZZA/PASTA SAUCE
This may be hard to believe, but the best pasta sauce I ever had was in a small restaurant in San Carlos, Mexico. When we got back home I decided to start experimenting to see if I could duplicate and this is pretty darn close. If you prefer a smooth sauce, substitute tomato sauce for the diced tomatoes. Fresh mushrooms can also be added if desired. Fresh Italian sweet sausage can be used Recipe #362998 or, I highly recommend Kittencal's Recipe #69173 (I wasn't a meatball lover until I tried these.) Next time I make I'm going to try adding diced roasted red peppers. Based on comments of others, the plan is to continue refining this recipe. Steps:
- In large pot combine crushed tomatoes, tomato puree and diced tomatoes.
- Add 1/2 cup of red wine and 1/2 cup water.
- Bring to a boil and reduce heat to simmer.
- Stir in seasonings (salt, pepper, oregano, basil) and grated cheese.
- In frying pan heat olive oil and brown sausage or meat-balls.
- Remove the meat from the pan (saving the drippings) and add to the simmering sauce.
- In the same frying pan sauté the onions and garlic (adding more oil if necessary) until translucent.
- Add onions and garlic to simmer sauce.
- Deglaze the frying pan with 1/2 cup of red wine and add to the simmering sauce.
- Stirring occasionally, simmer for three hours or until of desired consistency.
- To thicken sauce crack the lid and allow to cook down.
- To thin add a little more red wine.
- Serve on spaghetti, ravioli or use on pizza.

SPAGHETTI PIZZA I

- Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
- Combine egg, milk, 1/2 cup of the mozzarella cheese, salt, and garlic salt in a large bowl. Stir in cooked spaghetti; mix well.
- Spread mixture into prepared baking dish. Bake in preheated oven for 15 minutes. Remove from oven and reduce temperature to 350 degrees F (175 degrees C).
- Spread sauce over spaghetti. Sprinkle with oregano, basil, and the remaining 1 1/2 cups mozzarella. Top with pepperoni, return to oven, and bake until cheese is bubbly and beginning to brown, about 30 minutes more. Let stand 5 minutes before cutting.

ULTIMATE PIZZA SAUCE
This pizza sauce recipe was given to me as a wedding present, written on the inside cover of a pizza cookbook. It is thick, saucy, spicy and delicious. I'll never use anything else on my homemade pizzas. I like to double or triple it and put it in Ziploc bags in my freezer.

- In a large skillet, melt butter with the oil. Add the onion, celery and garlic and saute until soft and transparent.
- Add tomato sauce and tomato paste and stir until smooth.
- Add remaining ingredients and bring to slow simmer.

ZAPPA FAMILY SPAGHETTI AND MEATBALLS
I was on a quest for the perfect spaghetti sauce, and thanks to this recipe from the NY Times, I think it's officially over. It tastes just like the sauce my childhood best friend's parents used to make -- they immigrated from Italy and had me over for dinner every Sunday. I didn't have any chuck roasts or beef briskets on hand, so I just let the meatballs simmer in the sauce. I like the thinner consistency because that's how my friend's parents made it, but my boyfriend prefers a thicker sauce -- next time I will cut down on the water. Also, instead of 1 cup of breadcrumbs, I used 4 slices of white bread that I tore into small pieces and then soaked in 1/2 cup buttermilk for 10 min. to form a paste, a tip I learned from the Best Recipe Cookbook.

- Make the meatballs:.
- In a large bowl, mix all ingredients except olive oil by hand, using a light touch. Take a portion of meat in hand, and roll between palms to form a ball that is firmly packed but not compressed. Repeat, making each meatball about 2 inches in diameter.
- In a large, heavy pot heat olive oil over medium-high heat. When it shimmers, add meatballs in batches. Do not crowd. Brown well on bottoms before turning, or meatballs will break apart. Continue cooking until browned all over. Remove meatballs to a plate as each batch is finished. Let meatballs cool slightly; cover and refrigerate until needed.
- Make the sauce:.
- Sprinkle salt and pepper all over pork and beef. Place large pot over medium-high heat; when hot, add olive oil and brown meat. (Or cook meat in same pot used for meatballs, browning in the leftover fat.) Remove meat to a platter. Turning heat under pot to medium, add onions, and cook 3 minutes, stirring. Add garlic, and cook 2 minutes longer. Add tomato paste, and stir: cook until it absorbs fat in pan. Add oregano, basil, red pepper flakes, kosher salt and bay leaf, stirring to combine.
- Add cans of tomatoes and tomato sauce, then 4 1/2 cups water. Stir in sugar, parsley and peperoncini. Return meats to pot with their juices. Bring sauce to a gentle boil. Turn heat down to a simmer, partly cover and leave sauce to simmer 21/2 hours or more, stirring regularly.
- About 20 minutes before serving, add meatballs to pot. Boil spaghetti according to package directions. Drain, return spaghetti to pan and add 3 cups sauce. Toss pasta in pan for a minute to coat with sauce, and place on a large platter. Pour 2 more cups sauce over pasta. Place meat and meatballs on pasta, slicing large pieces. Serve with bowls of remaining sauce and Parmesan.

ULTIMATE PIZZA SAUCE
A pizza and pasta red sauce with sauteed vegetables and tomatoes. Every time I make this dish, I vary it based on available fresh vegetables, so feel free to do the same! Excellent with pizza, pasta, or chicken Parmesan. Freeze sauce if needed. Servings size depends on intended dish.

- Heat oil in a large pot over medium-high heat. Saute carrots and bell peppers, about 5 minutes. Add onion and garlic and saute to desired softness, about 5 minutes.
- Add tomato paste to the pot and distribute evenly. Pour in red wine and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon to deglaze; reduce heat to low. Add diced tomatoes, oregano, salt, and pepper. Simmer for 15 to 20 minutes.
- Blend the red sauce to desired thickness using an immersion blender or food processor. Simmer further for enhanced flavor, at least 1 hour, or until ready to use.
