This is another diabetic recipe from the Diabetes cookbook (DK books in association with Diabetes Australia). I was requested to post by fellow Aussie Zaarite.

150 g self raising flour
2 teaspoons baking powder
75 g margarine
60 g ground almonds
2 eggs
1 orange, juice and zest of, grated
3 drops almond essence
2 pears, peeled, cored, and chopped
blueberries
1 tablespoon demerara sugar

Steps:

  • Preheat oven to 200°C/400°F/Gas 6.
  • Lightly grease a deep 20cm (*in) cake tin and line it with baking parchment.
  • Put the flour, baking powder, margarine, almonds, eggs, orange zest & juice and almond essence in a large bowl and beat them together thoroughly.
  • Fold the pears and blueberries into the mixture. Spoon it into the prepared cake tin and sprinkle with the demarara sugar. Bake for 45-60 minutes or until firm to the touch.
  • Cool the cake in the tin on a wire rack. Stored in an airtight container, it will keep for up to a week.

On our honeymoon, my husband and I had this delicious dessert at Al Covo in Venice. I've tried to re-create the recipe because it was so tasty!

1 ½ tablespoons brown sugar
1 ½ tablespoons white sugar
1 teaspoon cinnamon
1 ¼ cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking powder
½ cup unsalted butter
1 ¼ cups white sugar
3 large eggs
⅓ cup milk
1 teaspoon almond extract
3 pears, peeled and diced
½ cup blueberries
½ cup almonds, chopped

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. Combine 1 1/2 tablespoons brown sugar, 1 1/2 tablespoons white sugar, and 1 teaspoon cinnamon in a small bowl; reserve.
  • Whisk together flour, 1 teaspoon cinnamon, and baking powder in a large bowl. Use an electric mixer to beat the butter and 1 1/4 cups white sugar together in a separate large bowl. Beat until light and fluffy. Beat in eggs, one at a time. Mix in 1/3 of the flour mixture until just combined. Beat in 1/2 of the milk and another 1/3 of the flour mixture. Repeat with the remaining milk and flour. Stir in the almond extract.
  • Gently fold pears, blueberries, and chopped almonds into the batter. Pour into prepared pan. Sprinkle reserved sugar and cinnamon mixture over the cake batter.
  • Bake in preheated oven until a toothpick inserted in the center of the cake comes out clean, 40 to 50 minutes.

1 1/4 cups blueberries, plus more for topping
1/2 cup vegetable oil
1/2 cup no-sugar dairy product, such as Chobani® with Zero Sugar* Vanilla (see Cook's Note)
1 teaspoon pure vanilla extract
2 large eggs
1/2 cup no-sugar dairy product, such as Chobani® with Zero Sugar* Vanilla (see Cook's Note)
One 8-ounce package cream cheese, at room temperature
1 teaspoon pure vanilla extract
1/2 cup confectioners' sugar
1/4 cup blueberry preserves, for topping

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter a 7-by-3-inch round cake pan.
  • Whisk together the sugar, oats, baking powder, salt, baking soda and 1 1/2 cups flour in a large bowl and set aside. Toss the blueberries with the remaining 1 tablespoon flour in a small bowl.
  • Whisk together the oil, dairy product, vanilla and eggs in a medium bowl. Fold the oil mixture into the sugar mixture until just combined. Then gently fold in the floured blueberries.
  • Pour the batter into the prepared cake pan and bake until a toothpick inserted in the center comes out clean, 55 minutes to 1 hour 5 minutes.
  • Cool in the pan on a rack for 30 minutes. Unmold the cake and cool completely on the rack, about 30 minutes more.
  • For the frosting: Meanwhile, beat the dairy product and cream cheese in a large bowl with an electric mixer on medium-high speed until smooth. Beat in the vanilla. Then slowly add the confectioners' sugar, while beating, until completely combined. Refrigerate until ready to use.
  • Slice the cooled cake in half horizontally to make 2 rounds.
  • Put 1 cake round on a cake stand or round serving platter. Evenly spread half the frosting over the top of the cake, spreading all the way to the edge. Dollop half the blueberry preserves in several small drops all over the frosting layer. Top with the remaining cake round and spread the remaining frosting over the top. The sides of the cake will be unfrosted. Dollop the remaining blueberry preserves in the center of the cake. Sprinkle blueberries on top of the preserves. The cake can be served right away or made the night before and refrigerated.

Pinch of salt
250g (9oz) butter, diced
350g golden granulated sugar
4 large eggs, beaten
4 large pears, peeled cored and sliced
200g (7oz) blueberries

Steps:

  • Preheat the oven to 190°C/375°F/gas 5. Grease and baseline a 20.5cm round tin.
  • Rub together the flour, salt and butter until they look like breadcrumbs. Add 250g (9oz) sugar and the beaten egg and stir.
  • Spoon half the mix in the bottom of the tin, top with the sliced pears and the blueberries, keeping a few slices of pear and a few blueberries back. Sprinkle with some of the remaining sugar. Spoon over the remaining cake mix.
  • Place the remaining fruit on top pressing down slightly, and finish off the left over sugar.
  • Bake for 1hr to 1hr 10 mins, or until a skewer inserted in the middle comes out clean. Cool and remove form the tin.
  • Serve warm or cold.

  • Cream the butter and sugar together. Beat the eggs lightly with a fork, and gradually mix them in with the butter and sugar.
  • Sift the flour and baking powder into that bowl and fold in carefully.
  • Peel and cube the pears, and mix with the blueberries. Put these on top of the cake mixture, and sprinkle a little more sugar on top.

This is a wonderful combination and so yummy with the oatmeal crisp on top of the fruit. 3 lb barlett pears, pealed, cored & cut into 1/8 inch slices (about 6 pears)
1 pkg (6 ounces) fresh blueberries or 1 1/2 cup frozen blueberries
1 Tbsp lemon or lime juice
2 Tbsp dark brown sugar
2 Tbsp butter
OAT MIXTURE
1/2 c quick oats
1/2 c dark brown sugar, firmly packed
3/4 c all purpose flour (optional)
1 tsp cinnamon, ground
1 tsp nutmeg, ground
1/4 c butter, melted

Steps:

  • 1. Stir oats, 1/2 cup brown sugar, flour, nutmeg & cinnamon into pot. Stir in 1/4 cup melted butter. Set the Ninja to STOVETOP HIGH. Cook uncovered 15 minutes or until oat mixture is golden, stirring occasionally.
  • 2. Remove the oat mixture from pot and spread on a plate. As it cools the mixture will become crisp and harden as it cools.
  • 3. Add remaining 2 tbsp. of butter to pot. Set OVEN to 350 degrees for 20 minutes. Add sliced pears, blueberries, lemon juice and remaining brown sugar. Stir well, cover and cook 10 minutes.
  • 4. Remove lid and cook another 10 minutes until liquid is reduced and pears are tender, stirring occasionally.
  • 5. Remove the pear/blueberry mixture to a bowl and serve with the crisp.
  • 6. We warmed some up tonight and served the Pear Blueberry Crisp over some Vanilla Bean Ice Cream. 4/30/13

1 1/2 cups all purpose flour
1 tablespoon sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch pieces
3 tablespoons (or more) ice water
Filling:
2 pounds firm but ripe pears (about 5 medium), peeled, cored, cut into 3/4-inch pieces
9 tablespoons sugar
2 tablespoons orange juice
Pinch of salt
2 1/4 cups frozen blueberries
6 tablespoons all purpose flour
Walnut-Streusel Topping

Steps:

  • For crust:
  • Blend all purpose flour, sugar and salt in processor. Add chilled butter pieces and cut in using on/off turns until mixture resembles coarse meal. Add 3 tablespoons ice water and process until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate 30 minutes. (Can be prepared 2 days ahead. Keep refrigerated. Let soften slightly at room temperature before rolling out.)
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Fold edges under, forming high-standing rim 3/4 inch above dish sides; crimp edges decoratively. Freeze crust 25 minutes.
  • Preheat oven to 350°F. Bake crust until light golden brown, about 30 minutes. Cool while preparing filling. Maintain oven temperature.
  • For filling:
  • Combine pear pieces, 3 tablespoons sugar, 2 tablespoons orange juice and salt in large nonstick skillet. Cook over medium heat until pears are tender but still hold their shape, stirring often, about 6 minutes. Transfer pear mixture to large bowl; cool to room temperature. Add blueberries, flour and remaining 6 tablespoons sugar to pears; toss gently to blend.
  • Transfer filling to cooled pie crust, mounding filling slightly in center. Sprinkle with Walnut-Streusel Topping. Bake pie until juices bubble thickly, fruit is tender and streusel topping is golden brown, about 1 hour 5 minutes. Cool pie on rack until lukewarm. Cut pie into wedges and serve.
