- THE CLOCK’S TICKING. Over-cooking your coffee is one of the most common reasons your brew tastes bitter. Much like tea, coffee gets its flavor from steeping in hot water.
- IN (TOO) HOT WATER. Lots of people bring their water to a boil and get right to brewing. But 212°F is actually too hot for coffee brewing! This is another way that coffee gets over-cooked.
- QUANTITY OVER QUALITY. It’s a sad fact of life—not all coffee is created equal. The problem with cheap coffee? It’s over-roasted to cover up imperfections caused by low-altitude growing and mass harvesting.
- TOO MUCH OF A GOOD THING. Don’t get too carried away with the good stuff. Adding too much coffee relative to the amount of water you use is an easy way to make your coffee taste too strong and in many cases bitter.
- THAT DAILY GRIND. Sometimes when you grind your coffee too finely, you can over-extract and expose the coffee in the process. Much like over-cooking, this leads to a bitter brew.

- Adjust Brewing Time. Have you gotten coffee at a local café that simply wasn’t worth the long wait? The problem might be how long it took for the coffee to be made!
- Clean Up! When we make a cup of coffee, it is so easy to just sit back with the finished product and relax. After all, you did go through quite the process: You had to buy the beans and grind them, then you had to heat water.
- Change Your Water Temperature. Many coffee drinkers like their coffee hot. Like, hot hot. That is part of the appeal, but you should be warned that the desire for really hot coffee could affect the flavor for the worse.
- Perfect Your Coffee Grind Size. As mentioned, coffee is a persnickety culinary pursuit. Each detail of making coffee can affect how bitter it is in the end, and this is not limited to the size of the grind.
- Be Blessed With Less (Coffee) A common misconception is that adding more coffee to what you are brewing will strengthen your cup of coffee, giving you maximum amounts of caffeine.
