TACO SEASONING MIX
I was making taco's the other night and was out of taco seasoning mix and this is what I mixed up. It's lower in sodium than store bought seasoning mix without loosing any of the taste.

TACO SEASONING MIX
This recipe was distributed by a local grocery story 20-plus years ago. It will take longer to assemble the ingredients than it will to put them together. It's really good and I like it just as well, if not better, than the boughten blend. If there were more categories, I would have put this in 'misc' or 'spices;' I put it in 'main dishes' because that what this would be used for. **Picture courtesy of Carmen Gonzales; thanks, Carm! =)

Steps:
- 1. PREP/PREPARE
- 2. Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this taco spice should last 6 - 8 months.
- 3. Gather your ingredients (mise en place).
- 4. Add all of the ingredients to a spice grinder.
- 5. Mix until combined.
- 6. Store in a non-reactive container until needed.
- 7. PLATE/PRESENT
- 8. When mixing with ground beef, pork, or chicken, use about 1 - 2 tablespoons per pound. Enjoy.
- 9. When mixing with ground beef, pork, or chicken, use about 1 - 2 tablespoons per pound. Enjoy.
REALLY GOOD TACO SEASONING
I got this recipe from a magazine (don't know which kind) while waiting for a haircut. It's just like the name suggests. I think this is more flavorful than storebought seasoning. It also has less salt. Use it on chicken, ground beef, or taco meat. The original recipe needed some spice (I like spicy food), so I added chipotle and cayenne pepper. Yum!

TACO SEASONING
I use this recipe all the time and never buy packaged taco seasoning anymore. Mix this recipe half and half with brown sugar and it makes an excellent rub for pork or beef. I use a good handful for one pound of ground beef when making tacos. You can adjust to your liking.

IN A PINCH TACO SEASONING
Put this together (in a pinch) when I was making tacos and realized I was out of taco seasoning packets. Liked it so well, I haven't bought a seasoning packet since. I keep it on hand in my spice rack and use it for more than just tacos.

Steps:
- Mix the red onion with half the lime juice and a pinch of salt in a small bowl, then set aside.
- Heat the oil in a frying pan over a medium-low heat, and crumble in the mince. Cook for 15-20 mins - the mince will release some liquid, but once this has bubbled away, it will sizzle in its own fat. At this point, stir or toss with a wooden spoon so the mince browns and caramelises all over. If the pan becomes too dry, add a drizzle more oil. When the mince is well toasted, sprinkle over the taco seasoning and cook for 2 mins, then stir through the tomato purée and pour over the rest of the lime juice and let it sizzle for another minute. Stir through the black beans and turn up the heat to medium, continuing to cook until everything is hot. Taste for seasoning, then set aside.
- To make the dressing, mix the lime juice with the soured cream and chilli sauce, if using, season, then set aside.
- Scatter a handful of tortilla chips into a bowl, then add a layer of lettuce, then the mince and black beans. Top with the avocado slices, chopped tomato, pickled red onions, along with any juices, and the feta. Drizzle with the dressing, then finally scatter over the coriander. Tuck more tortilla chips around the sides of the bowl, then serve.
