BACON TOMATO PIE

Bacon Tomato Pie image

Each year, I look forward to tomato season so I can make this delicious fresh tomato pie. For vegetarians, it may be made without the bacon with great results. However, using canned or hot-house tomatoes will significantly alter the flavor. Delicious side dish, or as a light dinner. I like to serve with a green salad and fresh multigrain bread.

Time 50m

Yield 8

Number Of Ingredients 9

1 (9 inch) uncooked pie crust
⅓ cup sour cream
2 cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
2 tablespoons snipped fresh chives
2 ripe tomatoes - seeded, juiced, and sliced 1/2-inch-thick
⅛ teaspoon fresh cracked black pepper, or to taste
1 tablespoon chopped fresh basil
4 slices bacon strips, cooked and crumbled

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Arrange pie crust in a 9-inch pie plate.

TOMATO PIE

Tomato Pie image

This classic Tennessee pie might have a cheesy top, but the juicy tomato center keeps it surprisingly fresh. Don't let its simplicity fool you: this pie will be a smash hit in your house, just as it is all over the South.

Provided by Food Network Kitchen

Categories     main-dish

Time 4h30m

Yield 6 servings

Number Of Ingredients 8

3 to 4 ripe tomatoes (about 3 pounds), thinly sliced into 1/4-inch rounds
1/2 small sweet onion, thinly sliced
Kosher salt and freshly cracked black pepper
1 rolled 9-inch pie crust, store-bought or homemade
1 cup freshly grated sharp Cheddar
1 cup freshly grated mozzarella
1 cup mayonnaise
1/2 cup fresh basil leaves, torn, plus small leaves for garnish

Steps:

  • Arrange the tomato and onion slices in a single layer on a paper towel-lined baking sheet and sprinkle with salt. Let sit for 1 to 2 hours.
  • Preheat the oven to 350 degrees F.
  • Fit the pie crust into a 9-inch pie plate and crimp the edges. Prick the bottom and sides with a fork. Line the crust with aluminum foil and fill with pie weights or dried beans. Bake until the edges of the crust are just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is dry and brown, another 15 to 20 minutes. Cool completely.
  • Mix together the Cheddar, mozzarella and mayonnaise in a medium bowl. Season with 1/2 teaspoon salt and a few cracks of black pepper.
  • Transfer the tomatoes and onions to a dry paper towel and pat dry. Liberally season the tomatoes with cracked black pepper. Arrange a third of the tomatoes in a single layer in the pie crust, overlapping slightly. Sprinkle a third of the basil over the tomatoes and top with a third of the onions. Repeat twice with the remaining tomatoes, basil and onions. Spread the mayonnaise mixture over the top of the onions.
  • Bake until the topping is golden brown and bubbling, 30 to 35 minutes. Let cool completely. Garnish with basil leaves. Serve at room temperature.

IMPOSSIBLE BREAKFAST BACON PIE FOR TWO

Impossible Breakfast Bacon Pie For Two image

No need for Bisquick, this single skillet breakfast pie is quick, easy make from scratch and perfect for two.

Categories     Eggs     Cheese     Breakfasts & Brunch     Easy     Bacon     Bacon     Breakfast     Cooking for Two

Time 45m

Yield 2

Number Of Ingredients 24

bacon
onions
pickled jalapenos
monterey jack cheese
whole-wheat flour
salt
butter
baking powder
black pepper
milk
yogurt, low-fat
eggs
bacon
onions
pickled jalapenos
monterey jack cheese
whole-wheat flour
salt
butter
baking powder
black pepper
milk
yogurt, low-fat
eggs

Steps:

  • Cut the bacon crosswise into ½ inch pieces. In an 8 inch (20 cm) oven proof skillet, add the bacon and cook until desired crispness. Drain off excess fat. Distribute the bacon in the bottom of the skillet, top first with diced onions, then with pickled jalapeno peppers and top with shredded cheese. Set aside. Preheat oven to 350℉ (180℃). Add the dry ingredients, flour, salt, butter, baking powder and black pepper into a food processor. Process for 1 minute until thoroughly combined. Add the wet ingredients, milk, yogurt (or sour cream) and two eggs (minus their shells) into the food processor and blend for one more minute. Slowly pour into the skillet on top of the other ingredients. The contents will shift around a bit, this is fine. Bake at 350℉ (180℃) F until pie tests done with knife, about 30 minutes. It is quite good on it's own or served with some sweet chili sauce. If you don't feel like measuring out the dry ingredients, you can use ⅓ cup of Bisquick or other brand baking mix and proceed as normal.

COUNTRY TOMATO AND BACON PIE

COUNTRY TOMATO AND BACON PIE image

Country Tomato and Bacon Pie is comfort food at its finest. Fresh tomatoes with layers of cheese and bacon all baked in a yummy pie crust!

Provided by Brandie @ The Country Cook

Categories     Main Course

Time 1h

Number Of Ingredients 8

2-3 tomatoes (sliced)
1 9-inch deep dish frozen pie crust (baked to package directions)
1/2 cup green onions (chopped)
1/4 cup basil (chopped)
1/2 cup cooked and crumbled bacon
freshly ground black pepper (to taste)
1/2 cup mayonnaise
1 cup shredded cheese (mozzarella or cheddar)

Steps:

  • If using a frozen pie crust, you'll need to let it defrost on the counter for about 10 minutes, then prick the crust with a fork (this keeps the crust from getting too puffy while baking).
  • Then bake it using the instructions on the back of your package (usually 400F degrees for about 10-12 minutes).
  • If using my Wham Bam Pie Crust, you'll prepare as directed, prick the crust with a fork, and then prebake at 400F degrees for about 10-12 minutes.
  • Allow crust to cool slightly.
  • Turn oven down to 350F degrees.
  • Start layering tomato slices on the bottom of the pie.
  • Season with some freshly ground black pepper.
  • Then top with green onions, basil and crumbled bacon.
  • In a bowl, combine mayonnaise with shredded cheese.
  • Spread the cheese mixture on top of your pie.
  • Bake at 350F degrees for about 30-35 minutes (until golden brown).
  • If the the edges of your pie crust are becoming too brown while baking, you may want to put some aluminum foil around the edges of the pie, just covering the crust for the duration of baking.
