Steps:
- Preheat oven to 425 degrees. Lightly spray 2 jumbo muffin pans (makes 12 quiche baskets).
- Mix melted butter with potatoes. Firmly press potatoes into bottom and up sides of muffin tins to form crust of quiche. (I pressed the bottom of a glass into the potatoes to start forming basket).
- Bake 30-35 minutes, or until lightly browned.
- REDUCE temperature to 350 degrees.
- Sprinkle sausage & cheeses evenly into hash brown cups.
- In small bowl, whisk together eggs, half-and-half, salt and pepper. Pour over sausage and cheeses. Bake 30 minutes or until puffed and set.
- Serve hot.

- In a bowl, mix shredded potatoes, egg, Parmesan cheese, salt and pepper. Divide the mixture in 4 and fill each ramekin with the shredded potato mixture, and press down in the middle to form a nest.
- Crack 3 quail eggs in each nest and season with salt and pepper. Bake for an additional 5 minutes or until eggs are cooked to your preference.

- Wash the potatoes and prick each a few times with a fork. Bake the potatoes until they start to soften but are definitely not completely done, about 20 minutes. Let cool about half an hour. (This can be done a day ahead of time.) Leave the oven on.
- Grate the semi-baked potatoes with a hand-held grater - peel them first if you like, although it’s not necessary. In a medium bowl put the grated potatoes, cheese, salt, pepper, and butter; toss well to combine.
- Spray the mini muffin tin with nonstick spray. Using about 2 tablespoons of the potato mixture for each mini muffin cup, press the potato mixture into the muffin cups, making a well in the center and pushing the potatoes up and over the sides of the cup (they will shrink in the oven).
