Steps:
- In a very large bowl, place the vegetables and the sliced onion.
- Toss with salt and cover with cold water.
- Allow to stand for 1 hour, then drain thoroughly but do not rinse.
- In a 3-quart, non-aluminum saucepan, combine vinegar, sugar and spices.
- Bring to a boil.
- Simmer 5 minutes.
- Pour the vinegar mixture over the vegetables, tossing to coat.
- Allow to stand for 2 hours.
- Transfer to a non-aluminum container and chill in the refrigerator.
- Store for up to 1 month in brine in the refrigerator.

Steps:
- In a large bowl, mix together cucumbers, onions, green bell peppers, garlic and salt. Allow to stand approximately 3 hours.
- In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.
- Drain any liquid from the cucumber mixture. Stir the cucumber mixture into the boiling vinegar mixture. Remove from heat shortly before the combined mixtures return to boil.
- Transfer to sterile containers. Seal and chill in the refrigerator until serving.

Steps:
- In a large saucepan, combine the first eight ingredients. Bring to a boil. Reduce heat; cover and simmer 10 minutes. Cool completely. Place onions and eggs in a large jar; add enough vinegar mixture to completely cover. Cover and refrigerate at least 8 hours or overnight. Use a clean spoon each time you remove eggs for serving. Refrigerate up to 1 week.

HUTTERITE PICKLES RECIPE

Steps:
- Sprinkle salt over cucumbers and red pepper. Mix well. Cover and let stand 3 to 4 hours or overnight. Drain and add diced carrots. For hot pickles add a pinch of pepper flakes before adding the brine. Add chopped garlic and dill to each jar. Add cucumber mix and top with brine. Brine: Boil 5 minutes and pour over cucumbers. Oven seal. 300 degrees for 1/2 - 3/4 hour until cucumbers change color or they rise from the bottom of the jar. Makes 14 pints or 7 quarts
