3 cups vegetable oil
2 cups cornmeal
1 cup Amy's Gluten-Free Mix
1 teaspoon baking powder
2 tablespoons sugar
1/2 cup corn kernels
1 tablespoon Cajun seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 (10-ounce) can chunk white chicken, shredded
3/4 cup grated onion
2 cloves garlic, minced
1 small tomato, diced
2 large eggs
3/4 cup milk
1/4 teaspoon Tabasco sauce
Spicy Horseradish Sauce, for serving

Steps:

  • Preheat the oil in a deep fryer or Dutch oven to 340°F. Combine all the remaining ingredients and mix until nice and thick. Being very careful so you don't burn yourself, spoon the puppies into the hot oil, and fry for 4 to 5 minutes, turning the puppies over a few times while they are frying so they are brown on all sides.
  • Transfer to a paper bag to drain. Serve with Spicy Horseradish Sauce.

This recipe works well with variations. While white rice flour makes traditional hush puppies, whole grain gluten-free flours (like brown rice flour or sorghum flour) can be used. The resulting hush puppies are slightly denser and fry up a little darker.

1 cup (5 ounces) gluten-free cornmeal
3/4 cup (3 ounces) white rice flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon seasoned salt or regular salt
1/2 teaspoon baking soda
1/2 teaspoon chipotle powder, optional
1/4 teaspoon xanthan gum
2 quarts vegetable oil
1/2 teaspoon onion powder (or 1 small onion, finely chopped)
1/2 teaspoon garlic powder (or 2 cloves garlic, minced)
1/2 cup milk
1 large egg, beaten

Steps:

  • In medium bowl, whisk together cornmeal, white rice flour, granulated sugar, baking powder, salt, baking soda, chipotle powder (if using), and xanthan gum.
  • Heat oil in a Dutch oven over high heat to 350°F and adjust flame to maintain temperature. Line a rimmed baking sheet with paper towels.
  • In a medium bowl, whisk together onion, garlic, milk, and egg. Pour wet ingredients into dry ingredients and stir together until smooth but some lumps remain. Drop batter, about 2 teaspoons at a time into hot oil until you have a dozen hush puppies. Fry for two minutes and then turn the hush puppies. Fry until deep golden brown, about 2 minutes longer. Remove hush puppies from the oil with a skimmer. Transfer to prepared baking sheet. Repeat with remaining batter. Serve warm.

I love hush puppies, but wanted something lighter than 100% cornbread and without wheat. I also like it spicy. This recipe uses rice flour instead of wheat flour, but it works well with about anything. Consider replacing 1/2 the flour with corn flour.

1 1/2 cups cornmeal
1 cup rice flour
3 teaspoons baking powder
1/4 teaspoon cayenne pepper
3/4 teaspoon black pepper
1 teaspoon garlic powder
3 teaspoons seasoning salt
chives or green onion top
1 medium onion
1 egg
water or apple juice, to make doughy

Steps:

  • Combine dry ingredients in a bowl, break up any lumps.
  • Stir in onions, green onions, and chives.
  • Add egg and blend well.
  • Add liquid until batter is thick enough to form into balls, but not runny.
  • In a large skillet or deep fryer, heat 4" oil to 350°F or 180°C.
  • Form batter into 3/4" to 1" balls and drop into the hot oil (use two spoons to form them with).
  • Do not crowd.
  • Cook until dark golden brown and cooked through, about 2 minutes.
  • Drain on paper towels.
