HUSH PUPPY MIX

Steps:

• In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 3 batches (4-1/2 cups total)., To prepare hush puppies: In a large bowl, combine 1-1/2 cups mix, corn, onion and egg; stir just until moistened. In an electric skillet or deep-fat fryer, heat 1-1/2 in. of oil to 375°. Drop batter by teaspoonfuls into oil; fry until golden brown. Drain on paper towels. Serve warm.

HUSH PUPPIES

Steps:

• In a medium bowl, mix the cornmeal, flour, baking powder, pepper, salt, sugar, baking soda and cayenne. In another bowl, gently mix the buttermilk, scallions and eggs.
• Whisk the wet and dry ingredients together until just combined, then rest the batter for 10 minutes.
• In a 6-quart stockpot, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 to 360 degrees F. Drop small scoops or rounded tablespoons of the batter into the oil in batches of eight. As soon as the hush puppies start to float, use tongs to rotate and cook until both sides are crisp and light golden brown, 60 to 90 seconds. It helps to put a pasta strainer on top of the hush puppies at this point to keep them submerged. Use a slotted spoon to remove the hush puppies, and transfer to a clean brown paper bag to remove excess grease. Repeat for the remaining batter, about 24 hush puppies total.
• Serve the hush puppies steaming hot.

SIMPLE HUSH PUPPIES

Steps:

• Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
• Whisk milk, egg, and onion together in a bowl. Stir pancake mix, cornmeal, and salt into milk mixture to form a smooth batter.
• Scoop ping pong ball-sized balls of batter using a small ice cream scoop; drop about 5 scoops per batch into the hot oil. Fry until golden brown, 5 to 6 minutes. Remove hush puppies with a slotted spoon and drain on a paper towel-lined plate. Repeat with remaining batter.

HUSH-PUPPY FRIED CHICKEN

Steps:

• Mix the flour and cornmeal together in a paper sack. Place each piece of chicken in the sack and shake thoroughly to coat completely.
• Mix the salt, pepper and buttermilk together. Place the hush-puppy mix in another paper sack. Dip each piece of chicken in the seasoned buttermilk and then drop it into the hush-puppy mix and shake to coat thoroughly.
• Heat vegetable oil to 350*F, and drop each piece of cooked chicken into it. Fry until a rich golden brown. Place in a flat baking dish and place in a 325* oven for an additional 30 minutes. Serve at once, piping hot.
• NOTE: If you cannot obtain hush-puppy prepared mix in your store, substitute the following: 2 cups white corn meal, 2 teaspoons baking powder, 1 teaspoon onion powder, 1/4 teaspoon salt, 4 tablespoons butter. Work all together until it is a fine consistency and then use as the breading mixture as specified in the above recipe. Hush-Puppy prepared mix is a timesaving shortcut.

HUSH PUPPY MUFFINS

Steps:

• Preheat oven to 450 degrees. Grease a 12 cup muffin pan or you can use a mini muffin pan.
• Combine cornmeal, flour, baking powder and salt in a large bowl.
• In a separate bowl, combine egg whites, onion, milk, parsley, oil and pepper.
• Add to dry ingredients stirring just until moistened.
• Spoon into prepared muffin tins.
• Bake for 10-12 minutes or until lightly browned. Remove and cool on a rack for 5 minutes. Serve immediatlely.
