A versatile coffee cake for breakfast, brunch, dessert. Good for snacks too! This blueberry coffee cake is lightened up with just a sprinkle of Confectioner's sugar instead of a streusel topping.

1 1/2 cups all-purpose flour, reserve 2 tablespoons for tossing blueberries
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
6 tablespoons butter, softened
1 teaspoon vanilla extract
1 large egg
1 large egg white
1 1/3 cups low-fat buttermilk
2 cups blueberries
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 350 degrees
  • Spray 9 inch round baking pan with cooking spray.
  • Combine flour, baking powder, soda, and salt, mix with a whisk.
  • In a separate large bowl, beat butter and sugar until well blended. Add vanilla, egg, and egg white, beating well.
  • Add flour mixture and milk alternately to sugar mixture beginning and ending with flour.
  • Coat blueberries in reserved 2 tablespoons of flour.
  • Spoon half of the batter in pan, top with 1 cup of blueberries. Spoon remaining batter over the blueberry topping. Add another layer of berries. Sprinkle top with turbinado sugar.
  • Bake for 50 minutes or until set. Cool for 10 minutes before removing from pan.

1 cup all-purpose flour
1 cup whole-wheat pastry flour or regular whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup chopped walnuts
1/2 cup packed brown sugar
2 tablespoons butter, at room temperature
2 tablespoons canola oil
2 large eggs
1 teaspoon vanilla extract
1 cup plain nonfat yogurt
1 cup fresh blueberries, or frozen and thawed

Steps:

  • Preheat oven to 350 degrees F. Spray an 8-inch square cake pan with cooking spray.
  • Whisk together the all-purpose and whole-wheat flours, the baking soda and salt. In a small bowl, stir together the granulated sugar, cinnamon and walnuts. In a large bowl, beat the brown sugar, butter and oil until fluffy. If necessary, use the back of a spoon to press out any lumps in the brown sugar. Beat in the eggs, 1 at a time, beating until fully combined. Beat in the vanilla and yogurt.
  • Add the flour mixture in 2 batches, stirring until just combined.
  • Spread half of the batter into the prepared pan. Sprinkle half of the nut mixture over the batter and top with the blueberries, gently pressing them into the batter. Spoon the rest of the batter into the pan, smoothing the top. Sprinkle the remaining nut mixture over the cake, pressing gently. Bake until a wooden toothpick inserted in center comes out clean, about 30 to 35 minutes. Let cool slightly and then unmold and allow to cool completely on a cooling rack. Cut the cake into 2-inch squares.

4 tablespoons unsalted butter, room temperature
1/3 cup maple syrup, room temperature

zest of one lemon

1 1/3 cups fresh wild huckleberries, well picked over (or other berries)
1/2 cup whole wheat pastry flour
4 tablespoons cold unsalted butter, cut 1/4-inch cubes

Steps:

  • Preheat the oven to 350F degrees, rack in the middle. Butter a 1-pound loaf pan, and line with parchment paper. Alternately, you could just butter and flour the pan,.
  • In a medium bowl, whisk together the flour, oats, baking powder, baking soda, salt, thyme, and rosemary. Set aside.
  • In a separate large bowl beat the butter with an electric mixer or by hand - until light and fluffy.
  • Drizzle in the maple syrup and beat until well incorporated, scrape down the sides of the bowl a couple times along the way.
  • Beat in the egg, lemon zest, and vanilla extract, scraping the sides again. Add half of the flour, stir just a bit, now add a splash of the buttermilk, stir again, but not too much.

  • To make the streusel topping, place the flour, butter, maple sugar, thyme and pecans in a food processor and pulse 20-30 times or until the topping is a bit beyond sandy/crumbly. It should be moist-looking - on its way to being slightly doughy.
  • Crumble 2/3 of it over the cake batter, sprinkle the remaining 1/3 cup huckleberries on top of that, and then add the last of the crumble. Barely pat in place with your fingertips.
  • Place the coffee cake in the oven and bake for 45-50 minutes or until the top is golden and a toothpick inserted into the center of the cake comes out clean.
  • Let the cake cool for five minutes and then remove it from the pan to cool on a rack (this way the cake won't steam in the pan as it's cooling.

  • Position a rack in the center of the oven and preheat to 325º. Line an 8x4 or 9x5" loaf pan with a sling of parchment paper. Lightly grease the parchment and exposed ends of the pan. (Lacking parchment, you can generously grease the pan and dust it with flour.)
  • Combine the butter, cream cheese, sugar and lemon zest in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium until light and fluffy, 3 - 4 minutes. Add the eggs one at a time, beating until combined after each addition, and scraping down the sides of the bowl and the paddle as needed. (The mixture may break, and that's ok.) Stir in the vanilla. Sift together the flour, baking powder and salt, then stir into the batter on low speed until just combined. Fold the batter a few times with a rubber spatula, scraping the paddle and bottom of the bowl, to make sure the batter is thoroughly combined, and that any lemon zest clumps are distributed throughout the batter. Gently fold in the huckleberries. Scrape the batter into the pan and smooth.
  • Bake the cake until a tester inserted into the center comes out clean, or with a few moist crumbs attached, 1 1/4 - 1 1/2 hours. Let the cake cool for 10 or 15 minutes, then remove from the pan.
  • While the cake is cooling, whisk together the powdered sugar and lemon juice. Brush all over the top and sides of the cake. Let cool completely, at least one hour.
