CHEESE VOLCANO

1/2 Roma tomato
1 jar nacho cheese dip/sauce, preferably chilled
1 bag blue corn chips
Black beans
Diced tomatoes
Pickled jalapeno rings
Red onions
Fresh cilantro sprigs
Broccoli florets
4 teaspoons food-grade sodium citrate (see Cook's Note)
8 cups shredded Mexican blend cheese (the pre-shredded cheese works best because of the anti-caking agents in it)
About 1/2 cup sriracha (use less if this is too spicy, but I liked the heat)

Steps:

  • For the volcano: Use a round plastic crudite platter for the base of your volcano and cut a small hole in it large enough for the hose of a fluid transfer pump to go through. Snake the depositing end of the pump hose through the hole in the platter. Invert a bundt pan over the platter, snaking the hose up through the hole in the bundt. Cut a hole in the center of the tomato half, then insert the tomato cut-side up in the top of the hole in the bundt pan, pulling the hose up through the hole in the tomato and pushing down a bit on the tomato to snugly plug up the hole in the bundt pan with the tube inside.
  • "Paint" or "spackle" the sides of the bundt pan with the cheese, using an offset spatula or rubber gloves. Then layer the chips on top of each other around the bundt, starting flat but angling as you go up, sticking them to the cheese. This creates a volcano look.
  • For the decorations: Arrange your accoutrements however you like. I put a lot of diced tomatoes and beans around the top to make it look like a caldera. I also liked incorporating cilantro stems and broccoli florets at the base of the volcano, as they look like trees.
  • For the cheese sauce: Turn a large slow cooker to low while you prepare the sauce on the stove.
  • In a pot, combine the sodium citrate and 3 1/2 cups water over medium heat and bring to a simmer. Once simmering, add the cheese in handfuls, whisking until incorporated before adding the next handful. Once all the cheese is incorporated and melty, add the sriracha and use an immersion blender to blend to a uniform consistency.
  • Transfer the mixture to the preheated slow cooker. Place the receiving tube of the pump into the cheese sauce and slowly and carefully pump to create "lava." Note: The cheese sauce might splash, so use with caution and put in a safe location.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 1 angel food cake pan for the base cake layer and 1 fluted tube pan (such as Bundt®) for the top cake layer.
  • Combine 1 cake mix, 1 1/3 cup water, 3 eggs, and 1/2 cup melted butter in a large bowl to make base cake layer. Beat with an electric mixer on low speed, about 30 seconds. Increase speed to medium and continue to beat, scraping bowl occasionally, until batter is smooth, about 2 minutes. Pour into prepared angel food cake pan.
  • Combine 1 cake mix, 1 1/3 cup water, 3 eggs, and 1/2 cup melted butter in a large bowl to make top cake layer. Beat with an electric mixer on low speed, about 30 seconds. Increase speed to medium and continue to beat, scraping bowl occasionally, until batter is smooth, about 2 minutes. Pour into prepared fluted tube pan.
  • Bake cakes in the preheated oven until toothpicks inserted into the centers come out clean, 40 to 45 minutes. Cool in pans, about 5 minutes. Invert onto wire racks.
  • Sift confectioners' sugar and cocoa powder together in a large bowl.
  • Combine 1 cup softened butter and vanilla extract together in another large bowl; beat with an electric mixer on low speed until creamy. Gradually beat in sifted sugar mixture until well-blended. Add heavy cream; beat until frosting is well-blended and spreading consistency.
  • Place base cake layer on a large serving platter. Spread a thin layer of frosting on top. Position top cake layer over the base so that holes are aligned. Trim hole at the center of the cakes with a knife so that it is large enough to fit a tall glass or mason jar. Cut off the top with a serrated knife to create a volcano "rim".
  • Spread frosting all over stacked cake. Arrange cake trimmings as "lava rocks" around the base. Refrigerate until frosting sets.
  • Line a baking sheet with aluminum foil.
  • Combine white sugar, light corn syrup, and 1/4 cup water in a small saucepan. Bring to a boil; cook until syrup reaches 310 degrees F (155 degrees C) or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in 2 drops red food coloring and cinnamon flavoring.
  • Pour streams of red syrup carefully onto the lined baking sheet to create candy "lava". Cool until set, about 5 minutes. Peel off the baking sheet and place around the sides and top of the frosted cake.
  • Place marshmallow cream, 1/4 cup water, 1 drop red food coloring, and yellow food coloring in a small saucepan over low heat; cook and stir until marshmallow lava is melted and even in color, 3 to 5 minutes.
  • Place glass or mason jar inside the frosted cake. Add a small amount of dry ice, marshmallow lava, and remaining 1/4 cup water. Dry ice will create a "smoke" effect and cause marshmallow lava to bubble over cake rim.

1 tablespoon Italian seasoning
1 tablespoon granulated onion
1 tablespoon parsley flakes
1 tablespoon ground black pepper
1 tablespoon sea salt
Three 5-ounce fresh tuna steaks
Olive oil, for coating
2 tablespoons of your favorite Cajun seasoning
12 gulf shrimp
8 to 10 ounces imitation crab meat, shredded
2 tablespoons mayo
1 teaspoon sriracha or chili sauce of your choice
2 tablespoons mayo
1 teaspoon sriracha or chili sauce of your choice
Vegetable oil, for frying
One 10-inch flour tortilla
1 cup shredded iceberg lettuce
1 ripe avocado, sliced
3 ounces eel sauce (can be purchased at any Asian market)
3 ounces sriracha or chili sauce of your choice

Steps:

  • For the tuna: Mix the paprika, granulated garlic, Italian seasoning, granulated onion, parsley flakes, black pepper and salt in a bowl. Sprinkle and cover both sides of the tuna steaks with the blackened spice mix. (You will have leftover spice mix that you can store for future use. The blackened spice is great on any meat.)
  • Coat a large skillet with olive oil and put over high heat. Sear the tuna on both sides, about 15 seconds. Remove, slice and set aside.
  • For the Cajun shrimp: Fill a saucepan over half full with water and put over high heat. Add the Cajun seasoning and shrimp to the water. Once you start seeing the water come to a boil, the shrimp are done. They only need a few minutes. Drain the shrimp in a strainer and put to the side.
  • For the crab salad: Add the crab, mayo and sriracha to a bowl and mix. Set aside.
  • For the spicy mayo: Add the mayo and sriracha to a bowl and mix. Set aside.
  • For the taco salad bowl: Fill a deep pot with 5 to 6 inches of oil and heat to 350 degrees F. Place a tortilla in the middle of the pot and push down with a ladle to create a bowl shape. Keep the tortilla emerged in the oil until the tortilla turns a golden brown color, 1 to 2 minutes. Once done, flip the tortilla over and fry the other side for an additional 1 to 2 minutes. Remove and set aside. (Alternatively, premade taco bowls can be purchased in any Latin markets.)
  • Arrange the shredded lettuce in the center of a plate. Alternate the avocado and tuna slices around the rim of the plate. Put the shrimp in the center of the bed of lettuce. Drizzle with some of the spicy mayo, eel sauce and sriracha around the rim of plate over the avocado and tuna slices. Place the taco salad shell upside down on top of the lettuce and shrimp. Top the taco salad bowl with a large round scoop of the crab salad and drizzle the remaining spicy mayo, eel sauce, and sriracha over the top of the crab salad and on the sides of the taco salad shell, giving the appearance of an erupted volcano.

This is one of the most delicious pork dishes I've ever eaten-just an absolute eruption of flavor! But it's not why we're calling this volcano pork. That's actually because the marinade I'm using here is loosely based on one from a restaurant named after a famous Indonesian volcano. Serve this over steamed or coconut rice.

1 (2 1/2 pound) boneless pork loin roast, trimmed
¼ cup thinly sliced lemongrass
1 (2 inch) piece fresh ginger, peeled and thinly sliced
3 medium (blank)s Peppers, fresno, raw
1 Pepper, serrano, raw
1 large shallot, sliced
3 cloves garlic, peeled
1 teaspoon ground turmeric
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin
1 pinch cayenne pepper
3 tablespoons brown sugar
2 medium limes, juiced
1 tablespoon soy sauce
3 tablespoons fish sauce
2 tablespoons vegetable oil

Steps:

  • Slice the pork loin across into 1/2-inch thick pieces. Place into a large plastic zip-top bag.
  • Add lemongrass, ginger, Fresno chiles, serrano chile, shallot, garlic, turmeric, pepper, cumin, cayenne, brown sugar, lime juice, soy sauce, fish sauce, and oil to a blender or food processor, and blend on high until smooth.
  • Pour marinade into the bag of pork and massage thoroughly and toss until it's evenly coated. Seal the bag, squeezing out excess air as you do.
  • Transfer to the refrigerate and marinate overnight, or up to 24 hours.
  • Preheat an outdoor grill to high heat. Remove pork from bag, wiping off most of the excess marinade.
  • Cook on the preheated grill until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), 3 to 4 minutes per side.

1/4 cup fish sauce
1/4 cup whiskey
1/4 cup honey

  • Mix the marinade ingredients.

1 tablespoon vegetable oil
2 garlic cloves, finely chopped
2 shallots, finely chopped
1 tablespoon chili sauce (I recommend Sriracha)
1 tablespoon tomato sauce
2 medium tomatoes, cut into eighths (about 8 oz)
3 tablespoons fish sauce
2 tablespoons sugar
3 cups chicken stock
2 tablespoons lime juice (tamarind juice can also be used)
8 ounces fish fillets, cut into small pieces
4 ounces scallops, sliced
4 ounces raw shrimp, peeled and de-veined
12 mussels, scrubbed clean
2 tablespoons dry white wine
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 leaves cilantro, for garnishing (optional)

Steps:

  • Heat oil in a wok.
  • Lightly brown garlic and shallots.
  • Add chili sauce, tomato sauce, chopped tomato, fish sauce and sugar.
  • Blend well, then simmer for 2-3 minutes.
  • Add stock with tamarind juice or lime juice. Bring to a boil.
  • Add seafood and wine to stock. Bring back to boil.
  • Cover and simmer for 3-4 minutes until mussel shells have opened. Discard any that remain closed after cooking.
  • Taste soup and adjust seasoning to your liking with salt & pepper.
  • Garnish with cilantro leaves and serve hot.

  • On a chilled large round plate or platter arrange the scoops of ice cream so that they make a pile in the center of the plate.
  • You may use more ice cream or less, up to you.
  • Next, arrange the brownies along the sides of the ice cream so that it looks like a volcano shape.
  • Next, drizzle the top and down the sides with the 2 sauces.
  • Finally, add the whipped cream directly down the center of the volcano and then all over the sides.
  • Drizzle with more sauce and stick a sparkler or streamer in the middle.
  • Make sure you yell VOLCANO when you serve it.
