This glossy teriyaki sauce is easy to make and perfect to have in your fridge to add to stir fries, marinades or even as a dipping sauce with Asian crackers

Yield Makes 1 medium sized jar

Number Of Ingredients 8

85g light brown soft sugar
70ml light soy sauce
1 large garlic clove, crushed
4cm piece ginger, peeled and finely grated
1 tbsp cornflour
1 tbsp rice wine vinegar
sesame seeds (optional)
2 spring onions, finely sliced (optional)

Steps:

  • Pour 350ml water into a small saucepan with the sugar, soy sauce, garlic and ginger. Slowly bring to a simmer, stirring occasionally until the sugar has dissolved. Cook for 5 mins more or until glossy and slightly thickened. Combine the cornflour with 1 tbsp water and quickly whisk through the sauce. Whisk through the rice wine vinegar. If it's still too thick, add a splash more water. Pour into a clean jar and leave to cool at room temperature.
  • Once cooled, will keep in the fridge for up to 1 week. Sprinkle with sesame seeds and spring onions just before serving, if you like.

1 cup water
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
5 tablespoons packed brown sugar
1 -2 tablespoon honey
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Mix all but cornstarch and 1/4c water in a sauce pan and begin heating.
  • Mix cornstarch and cold water in a cup and dissolve.
  • After sauce is simmering, add cornstarch and water mixture, whisking well until sauce thickens.
  • Heat until sauce thickens to desired thickness.
  • Add water to thin if you over-thick it :).

4 boneless chicken breasts
1 tablespoon sesame seeds
marinade
3 tablespoons soy sauce
1 tablespoon water
1 tablespoon sugar
1 tablespoon mirin (Chinese sweet wine)
1/2 cup soy sauce
3/4 cup water
1/2 cup sugar
4 tablespoons mirin (Chinese sweet wine)
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
4 teaspoons cornstarch
2 tablespoons water

Steps:

  • Mix marinade ingredients; soy sauce, water, sugar and mirin.
  • Add chcken and marinade in refrigerator for 30 minutes.
  • Mix 4 teaspoons cornstarch with 2 tablespoons water and set aside.
  • In small sauce pan mix together Teriyaki Sauce ingredients; soy sauce, water, sugar, Mirin, ginger and garlic powder.
  • Bring to a boil.
  • Add cornstarch mixture.
  • Stir until thickened.
  • Brush sauce on chicken and grill or roast (at 350 degrees)f until done (basting several times).
  • Keep sauce warm while chicken cooks.
  • Cut chicken in bite size pieces.
  • Arrange on top of bowl of rice with additional teriyaki sauce and sprinkle with sesame seeds.

2 tbsp toasted sesame oil
6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame seeds , to serve
4 spring onions, shredded, to serve
sticky rice, to serve
steamed bok choi or spring greens, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
  • Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.
