2 sticks (1 cup) unsalted butter, at room temperature, plus more for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
5 large eggs
1/4 cup heavy cream
2 teaspoons vanilla
One 12-ounce jar strawberry preserves
2 pounds strawberries, trimmed and halved
1 tablespoon lemon juice
Sugar, optional
16 ounces cream cheese, at room temperature
2/3 cup confectioners' sugar
3 1/2 cups heavy cream
1 tablespoon fresh lemon juice
1 teaspoon vanilla

Steps:

  • For the pound cake: Preheat the oven to 350 degrees F. Butter a 9-by-5-inch loaf pan.
  • Whisk the flour, baking powder and salt together in a medium bowl.
  • In a large bowl, combine the butter and sugar, and beat with an electric mixer on high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. After the last egg, continue to beat on high speed for 5 minutes. Beat in the heavy cream and vanilla. Add the flour mixture and beat on low until just incorporated.
  • Spoon the batter into the prepared loaf pan and bake until a wooden pick inserted into the center comes out clean, about 1 hour 10 minutes. Cool the pound cake in the pan for 10 minutes, then turn it out onto a rack to cool completely. (The pound cake can be made up to 2 days ahead; store at room temperature, well wrapped.)
  • For the strawberries: Heat the strawberry preserves in a medium saucepan over medium-high heat until just warm. Add the strawberries and 1/4 cup water, and bring to a simmer; simmer until the strawberries are just beginning to soften, about 5 minutes. Stir in the lemon juice. Add a little sugar to taste if desired. Cool completely. (The strawberries can be made up to 1 day ahead; refrigerate in an airtight container.)
  • For the cream layer: In a large bowl, beat together the cream cheese and confectioners' sugar with an electric mixer until very smooth and light. Add a little bit of the cream, and beat to loosen. Beat in the remaining cream, a little at a time, until the mixture just holds stiff peaks, stopping occasionally to scrape the bottom of the bowl with a rubber spatula. Beat in the lemon juice and vanilla.
  • To assemble the trifle: Cut the pound cake into 1 1/2-inch cubes. Spoon a little more than a quarter of the cream into the bottom of a trifle bowl. Top with a third of the pound cake, followed by a third of the strawberries and their juices. Repeat the layers, starting with cream, then cake, then strawberries. Top with the remaining cream and a few strawberries. Cover and refrigerate at least 4 hours and up to overnight.

1 1/2 cups all-purpose flour
3 tablespoons cornstarch
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, at room temperature
3 large eggs, at room temperature
1/2 cup sour cream, at room temperature
1 teaspoon vanilla extract
6 strawberries, halved
Fresh mint leaves, for serving
1 1/2 cups granulated sugar
3 tablespoons cornstarch
One 3.5-ounce package strawberry-flavored gelatin
2 1/2 pounds fresh strawberries, hulled and halved
1 1/2 cups plain Greek yogurt
1 1/2 cups cold heavy cream
3/4 cup granulated sugar
3 tablespoons brown sugar

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment and spray with baking spray.
  • Sift together the flour, cornstarch, baking soda and salt in a bowl.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the granulated sugar and butter until light and fluffy, 2 to 3 minutes. Add the eggs one at a time, mixing well after each addition. Add the sour cream and vanilla and mix until combined. Add the sifted dry ingredients and mix on low speed until just barely combined.
  • Pour into the prepared baking sheet and bake until the cake is golden and a toothpick inserted in the center comes out clean, 30 to 35 minutes. Set aside and allow to cool completely.
  • For the strawberries in sauce: Put the granulated sugar, cornstarch, gelatin and 1 1/2 cups water in a saucepan. Stir together and bring to a boil. Cook until starting to thicken, then remove from the heat. Put the strawberries in a bowl and pour over the sauce, gently tossing together. Set aside in the fridge and allow the mixture to thicken, stirring occasionally, 10 to 15 minutes.
  • For the sweet yogurt cream: In the bowl of an electric mixer fitted with the whisk attachment, whip the yogurt, cream, granulated sugar and brown sugar on high until smooth and silky.
  • Once the cake is cool, flip out onto a cutting board and remove the parchment. Cut the cake into 1.5-inch cubes.
  • To assemble the trifle, place half of the cake pieces into the bottom of a trifle dish or large glass bowl. Top with half of the strawberries in sauce, then half of the sweet yogurt cream. Repeat the layers of cake, strawberries in sauce and cream. Garnish with fresh halved strawberries and mint leaves. Cover and place in the refrigerator to chill for at least 2 hours.

2 tablespoons Dutch-process cocoa powder
3/4 teaspoon baking powder

4 tablespoons cold unsalted butter, cut into pieces
3 ounces milk chocolate, roughly chopped
2 large eggs
1/4 cup heavy cream
1 teaspoon vanilla extract
Raw or turbinado sugar, for sprinkling
1 quart strawberries, hulled and halved or quartered if large (about 3 cups) if large
1/4 cup granulated sugar
1 cup heavy cream

Steps:

  • Position a rack in the middle of the oven; preheat to 400 degrees. Line a baking sheet with parchment paper. Make the shortcakes: Whisk the flour, granulated sugar, cocoa powder, baking powder and salt in a large bowl. Using your fingers, rub the butter into the flour mixture until sandy. Add the chocolate. Whisk 1 egg, the cream and vanilla in a glass measuring cup; stir into the flour mixture with a fork to make a shaggy dough (there will be some dry bits). Turn out onto a lightly floured surface; pat flat until 1 1/2 inches thick. Cut into 6 rounds with a knife or cookie cutter, using the scraps for the last cake.
  • Place the rounds on the baking sheet; freeze for 20 minutes. Beat the remaining egg; brush onto the cakes and sprinkle with raw sugar. Bake until firm, about 20 minutes. Transfer to a rack to cool.
  • Meanwhile, make the toppings: Toss half of the strawberries with half of the sugar in a bowl; set aside. Place the other half of each in a saucepan; cook over medium-low heat, mashing with a fork to make a thick puree, about 10 minutes. Cool completely. Whip the cream with a mixer until medium peaks form; swirl in the strawberry puree.
  • Split the shortcakes in half. Layer some of the strawberry cream and reserved fruit on the bottoms; cover with the shortcake tops. Finish with more strawberry cream and the remaining berries.

1 pound fresh or frozen strawberries, hulled if fresh (see Cook's Note)
1/4 cup apple juice
2 to 4 tablespoons honey, maple syrup or agave syrup, as desired
1 teaspoon vanilla bean paste

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Combine the flour, dairy product and 1/4 cup water in a medium bowl and stir with a rubber spatula until a shaggy dough forms. Turn out the dough onto a lightly floured work surface. Lightly flour the dough and pat it out until it is about 1/2 inch thick. Using a spatula or bench scraper, fold the dough in half like a book. Pat it into a 5-by-10-inch rectangle. Flour a sharp knife and cut the rectangle in half lengthwise. Cut each half into four 2 1/2-inch squares, flouring the knife after each cut. Evenly space the biscuits on the prepared baking sheet and bake, rotating the baking sheet halfway through, until light golden, about 25 minutes.
  • Meanwhile, combine the strawberries, apple juice, honey and vanilla in a medium saucepan and bring to a boil over high heat. Reduce the heat to a simmer and cover the pan. Cook until the strawberries are softened, about 5 minutes. Uncover the pan and break up the strawberries with a fork or potato masher. Continue to cook over medium-high heat, uncovered and stirring frequently, until the foam subsides and the mixture has thickened, about 10 minutes.
  • To serve, cut each biscuit in half, spoon in some dairy product and top with the strawberry mixture.

3 cups Kix® cereal
1/4 cup butter or margarine, melted
1 1/2 cups sliced fresh strawberries
9 fresh strawberries, sliced into fans

Steps:

  • In medium bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Stir in yogurt until melted and smooth. Cover; refrigerate about 1 hour 30 minutes or until thickened but not set.
  • Meanwhile, heat oven to 350°F. Place cereal in food-storage plastic bag; crush with rolling pin to make 1 cup. In small bowl, stir cereal and butter until well mixed. Press mixture firmly in bottom of ungreased 8-inch square pan. Bake 10 minutes or until crust is light golden brown. Set aside to cool.
  • Beat gelatin mixture with electric mixer on high speed 7 to 8 minutes or until doubled in volume. Fold in sliced strawberries; pour over crust. Cover; refrigerate about 1 hour or until firm.
  • To serve, cut dessert into squares. Garnish each serving with strawberry fan.

350g self-raising flour , plus extra for dusting
100g butter , cold, cubed
100g caster sugar
1 vanilla pod , seeds scraped
100ml milk , warmed
1 egg , plus a little extra beaten egg for glazing
squeeze lemon juice
1 tbsp icing sugar
227g tub clotted cream
250g strawberry , tickly sliced
strawberry jam (see 'goes well with' for recipe, or buy ready-made)

Steps:

  • Heat oven to 220C/fan 200C/gas 7 and lightly flour a baking sheet. Put the flour, butter, sugar, half of the vanilla seeds and ¼ tsp salt into the bowl of a food processor, then pulse until fine. Tip into a large bowl. Beat the milk, egg and a good squeeze of lemon together, then tip into the bowl and bring together with a knife, using a cutting action, until you have a clumpy dough. Finally bring together with your hands if you need to.
  • Lightly flour the work surface, tip the dough onto it, then quickly shape into a smooth-ish disc. Using a rolling pin, pat out to 2cm thick. Cut out 8 rounds with a smooth 7cm cutter (you'll need to pinch together the trimmings). Glaze just the tops with beaten egg, transfer to the floured sheet, then bake for 10-12 mins until risen and golden, and they sound hollow when tapped on the bottom. Cool on a wire rack.
  • Beat the remaining vanilla seeds and icing sugar into the clotted cream. It will get runnier at first, but keep beating and it will thicken again. To serve, slice the very top from each shortcake to give a flat surface, then spoon over about 1 tsp jam. Top with a good dollop of the vanilla clotted cream and finish with the strawberries.

1 quart strawberry
2 tablespoons brown sugar
1 cup butter
1 1/2 cups sugar
4 eggs
1 1/2 teaspoons vanilla
4 ounces semisweet chocolate, melted
3/4 cup boiling water
1 cup unbleached flour
1/2 cup cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup jam (used wild berry)
1 quart whipping cream
1/2 cup confectioners' sugar
1 ounce white chocolate, melted

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 2 9" round pans.
  • In a small bowl slice 2 cups of strawberries and add 1 Tbsp brown sugar and stir to coat, set aside.
  • In another bowl haul the remainder of the strawberries, half or leave whole.
  • Add the remaining Tbsp of brown sugar and stir to coat, set aside.
  • In a large bowl add sugar and butter, beat at medium high speed until smooth.
  • Beat in eggs and vanilla.
  • Combine flour, cocoa, soda and salt and gradually beat into the egg, butter mixture.
  • Melt the chocolate into the boiling water, or microwave to melt chocolate.
  • Gradually beat into the batter (The batter is thin).
  • Divide the batter pouring it into the two pans.
  • Bake for 30 minutes.
  • Cool in pans for 20 minutes, then remove from the pans and cool completely.
  • In a bowl beat cream and confectioners' sugar until slightly thick at medium speed.
  • Add the melted white chocolate to the cream increase the speed to medium high and beat until stiff peaks form.
  • Put 1 1/2 cup of the cream in a pastry bag fitted with a large star tip, set aside.
  • When cake has completely cooled spread 1/2 the jam on the the top of the bottom layer.
  • Spread the other 1/2 of jam on what will be the bottom of the top layer.
  • Use 2 cups of whipping cream and spread on top of jam of bottom layer of cake.
  • Arrange the strawberry slices evenly over the whipped cream layer.
  • Then place top layer of cake on the cake with the jam side going on top of the strawberries.
  • Use remaining whipped cream spread evenly to cover the cake.
  • Arrange the whole or halved strawberries on the top of the cake leaving about a 1" boarder on the outer edge.
  • Take the pastry bag and pipe rosettes around the edge of cake.
  • Enjoy.

4 -5 cups sliced fresh strawberries
2 (1 ounce) packages strawberry glaze
16 ounces cream cheese, softened
1 cup white sugar
16 ounces Cool Whip
5 -6 fresh strawberries, for garnishing

Steps:

  • Break the angel food cake into small pieces.
  • Cook the glaze following package directions, stir in the sliced strawberries, set aside.
  • Beat the softened cream cheese with the sugar, then fold in the Cool Whip.
  • Place half the cake pieces into the bottom of a large trifle bowl.
  • Spoon 1/2 the cream cheese mixture over the cake.
  • Place 1/2 the strawberry mixture over the cream cheese, then repeat all three layers.
  • Garnish with Cool Whip and whole berries, chill for several hours.
  • Note: This can also be made in a 9x13 pan.
