BUCKEYES I

Buckeyes I image

This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

Time 50m

Yield 30

Number Of Ingredients 5

1 ½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

Time 30m

Yield 5-6 dozen, 60 serving(s)

Number Of Ingredients 5

1/2 cup margarine, softened
3 1/2 cups powdered sugar (approx. 1 lb.)
1 1/2 cups creamy peanut butter (Peter Pan works best)
1 teaspoon vanilla
1 lb chocolate almond bark

Steps:

  • Mix margarine, peanut butter and vanilla together. Add powdered sugar. Roll into balls. Chill for short time in the freezer or refrigerator. Melt bark for dipping in bowl. Insert toothpick into ball and dip in chocolate leaving an area exposed to resemble a "buckeye".
  • Place on waxed paper and continue. When completed go back and "touch" the hole with finger to close the hole. I usually keep these in the freezer until ready to use! The refrigerator will do fine as well.
