1 cup dried garbanzo beans or chickpeas
1 medium onion, quartered
1 bay leaf
4 cups water
1/4 cup minced fresh parsley
1/4 cup lemon juice
1/4 cup tahini
4 to 6 garlic cloves, minced
1 teaspoon ground cumin
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/4 cup olive oil
Assorted fresh vegetables

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse the beans, discarding liquid. Transfer to a 6-qt. electric pressure cooker; add onion, bay leaf and water., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 12 minutes. Let pressure release naturally. Drain mixture, reserving 1/2 cup cooking liquid. Discard onion and bay leaf., Place the beans, parsley, lemon juice, tahini, garlic, cumin, salt and cayenne in a food processor; cover and process until smooth. While processing, gradually add oil in a steady stream. Add enough reserved cooking liquid to achieve desired consistency., Cover and refrigerate for at least 1 hour. Serve with vegetables.

400g can chickpeas, drained
80ml extra virgin olive oil
1-2 fat garlic cloves, peeled and crushed
1 lemon, juiced then ½ zested
3 tbsp tahini
mixed crudités and toasted pitta bread, to serve (optional)

Steps:

  • Thoroughly rinse the chickpeas in a colander under cold running water. Tip into the large bowl of a food processor along with 60ml of the oil and blitz until almost smooth. Add the garlic, lemon and tahini along with 30ml water. Blitz again for about 5 mins, or until the hummus is smooth and silky.
  • Add 20ml more water, a little at a time, if it looks too thick. Season and transfer to a bowl. Swirl the top of the hummus with the back of a dessert spoon and drizzle over the remaining oil. Serve with crunchy crudités and toasted pitta bread, if you like.

1 small clove of garlic
1 tablespoon tahini
1 lemon
extra virgin olive oil

Steps:

  • Drain and tip the chickpeas into a food processor.
  • Peel and add the garlic, then add the tahini, a good squeeze of lemon juice and 1 tablespoon of oil.
  • Season with a pinch of sea salt, then pop the lid on and blitz.
  • Use a spatula to scrape the houmous down the sides of the bowl, then blitz again until smooth.

1 (19-ounce) can no salt added chickpeas (rinsed and drained)
1/2 teaspoon salt (or to taste)
1/2 teaspoon freshly ground black pepper
1 to 2 cloves garlic (minced (depending on how garlicky you like things))
3 tablespoons tahini
3 tablespoons lemon juice (from approximately one lemon)
2 tablespoons olive oil
1/2 teaspoon ground cumin (or more to taste)
4 to 8 tablespoons cold water (use more for a looser or thinner consistency)
Olive oil (regular, lemon or chili oil)
Paprika
Ground cumin
Chickpeas (you can reserve a few from your can of chickpeas)
Sesame seeds
Cilantro (chopped)
Parsley (chopped)
Pine nuts
Jalapeno (sliced or minced)

Steps:

  • Remove and discard outer skin of chickpeas. This is not necessary, but I find it gives a smoother consistency to the hummus. You can skip this step if you like or are pinched for time.
  • Place chickpeas, salt, black pepper, garlic, tahini, lemon juice, olive oil, cumin and water (start with about 3 to 4 tablespoons of water) in a high-powered blender and blend, stopping to scrape sides of blender, as necessary, with a rubber spatula.Note: If you like, you can reserve some chickpeas for garnish.
  • With the blender going, slowly drizzle in more water (a tablespoon at a time), as necessary, and blend until you've reached your desired consistency.
  • Transfer hummus to a serving bowl and garnish to taste (if desired) with any of the garnish ideas. Serve and enjoy!Note: Enjoy immediately or properly store in an airtight container in your refrigerator and enjoy within 3 to 4 days.

Also, if you want a looser or thinner consistency, blend in a little more water.Note: As mentioned, start with 3 tablespoons of water and add more later if you want things looser or thinner. It's easier to add than take away. If you didn't peel the chickpeas, it is likely that you will have to add a little more water.
  • Transfer hummus to a serving bowl and garnish to taste (if desired) with any of the garnish ideas. Serve and enjoy!Note: Enjoy immediately or properly store in an airtight container in your refrigerator and enjoy within 3 to 4 days.

3 cups cooked chickpeas, peeled (from 1 to 1 1/4 cup dry chickpeas or from quality canned chickpeas. See recipe notes for more instructions on cooking and peeling chickpeas)
1 to 2 garlic cloves, minced
3 to 4 ice cubes
1/3 cup (79 grams) tahini paste
½ tsp kosher salt
Juice of 1 lemon
Hot water (if needed)
Early Harvest Greek extra virgin olive oil
Sumac

Steps:

  • Add chickpeas and minced garlic to the bowl of a food processor. Puree until a smooth, powder-like mixture forms.
  • While processor is running, add ice cubes, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency.
  • Spread in a serving bowl and add a generous drizzle of Early Harvest EVOO. Add a few chickpeas to the middle, if you like. Sprinkle sumac on top. Enjoy with warm pita wedges and your favorite veggies.

1/4 cup freshly squeezed lemon juice
1/4 cup tahini
1 teaspoon ground cumin
2 cloves garlic
1/2 cup extra-virgin olive oil, plus more for serving
1 teaspoon kosher salt
Smoked paprika, for serving, optional
Vegetable crudite and pita chips, for serving

Steps:

  • Put the chickpeas, lemon juice, tahini, cumin and garlic into a food processor and pulse until smooth. With the motor running, slowly pour in the oil in a steady stream. Add the salt and puree until very smooth. If the mixture is too thick, add some of the reserved chickpea liquid, 2 tablespoons at a time, until the desired consistency is reached.
  • To serve, transfer the hummus to a serving bowl and drizzle some olive oil over the top. Garnish with a sprinkling of smoked paprika if using, and serve with vegetables and pita chips for dipping.
  • Store leftover hummus in an airtight container in the refrigerator for up to 5 days.

  • Peel the skins off of the chickpeas: Lightly squeeze each chickpea between your fingers and the skins will slide right off. Place the peeled chickpeas into a bowl and discard the skins. This is optional, takes about 10 minutes but is highly recommended for a smoother, silkier hummus.
  • Add the chickpeas, olive oil, tahini, lemon juice, garlic, salt and pepper to the bowl of a food processor and pulse until smooth. Stream in more lemon juice or water to thin out. We like a lot of lemon around here so we opt for more lemon juice.
  • Serve in a bowl at room temperature with fresh veggies (my fav) and whole-grain crackers. Pita chips are also delicious with this hummus.
