OVEN-BAKED CHICKEN WINGS
This is my favorite way to eat oven-baked Buffalo chicken wings. Tons of flavor! Serve with blue cheese dressing on the side.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
- Pat chicken wings dry using paper towels. Season with salt. Place flour in a shallow dish and dredge chicken to lightly coat. Place wings on the prepared baking sheet.
- Bake in the preheated oven until golden and no longer pink in the centers, 40 to 45 minutes.
- While wings are baking, melt butter over medium heat in a medium saucepan. Add hot sauce, red wine vinegar, Worcestershire, honey, garlic powder, and cayenne. Let sauce simmer on low heat until wings are done baking, about 40 minutes.
- Remove wings from the oven and place in a large mixing bowl. Pour sauce over wings; toss until evenly coated. Serve with celery and carrots.

BAKED BUFFALO CHICKEN WINGS
Sticky spiced wings make great finger food or canapés, and this version skips the deep-fried stage so they're healthier

- In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
- Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.
- Combine water, vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary in a large stockpot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for 15 minutes.
- Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
- Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.

PARMESAN CHICKEN WINGS
Another military wife I know shared this delicious recipe with me. Sherry originally found this recipe in an issue of Taste of Home. This is my adaptation of her version. I always have a bag of frozen wings in the freezer for last minute guests and this recipe is great for using them, since no thawing is required.

- Combine first 6 ingredients (cheese through pepper).
- Set the melted butter in a bowl and dip the chicken wing pieces first into the butter, then into the cheese mixture to coat.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

- Be sure wings are thawed and dry them well with paper towels.

- Mix brown sugar, mustard, and soy sauce together in a bowl. Measure 1/4 cup marinade for basting and transfer to a small bowl; cover and refrigerate.
- Place wings in a large resealable bag. Pour remaining marinade over wings, coating well. Seal and marinate wings at least 2 hours and up to overnight.

- Buy your wings. Plan on each guest eating 10-15 wings if main course, or 5-7 wings if served alongside other food as an appetizer. These instructions are for 2 pounds of wings, which should comfortably serve four people, but do not hesitate to multiply or divide the recipe to fit your guest's needs.
- Thaw if needed. If frozen, thaw your chicken wings. You can thaw them by placing your chicken wings in the refrigerator overnight, or in a cold bowl of water on the kitchen counter for 4 hours.
- Cut your wings. When thawed, use a sturdy knife or kitchen shears to cut the wing at each of the joints. This will result in three pieces. Discard the wings tip. Use sterile techniques. When handling raw chicken you need to be clean. Wash your hands after handling raw meat. Bleach your cutting and cooking surfaces when done to prevent cross contamination. Do not allow any produce (or any other food items) to come in contact with the raw chicken, or surfaces that have touched raw chicken. Alternatively, instead of discarding the wing tips, you can save them for making chicken stock.
- (Optional) Marinate your wings. It is up to you, but many chiefs like the extra flavor that a good marinade can add to chicken wings. Common marinade sauces are "Honey Garlic Sauce" or "Hot Sauce", but feel free to try others. If you choose to marinade your wings. - Cut each chicken wing at joints to make 3 pieces.
- Discard wing tips or save for making chicken broth.
- Mix egg, 2 tsp.
- vegetable oil, the soy sauce, sugar, and five spice powder; pour over chicken.
- Cover and refrigerate 1 hour.
- Add water to chicken.
- Stir flour, cornstarch, and baking soda into chicken.
- Heat vegetable oil (1 1/2 inches) in wok (we use a deep fryer) to 350 degrees.

SIMPLE BOIL AND BAKE CRISPY CHICKEN WINGS
This is more of a method than a recipe, but this is how I always make wings now. I find boiling them first helps get rid of more of the fat, and they get crispier in the oven.

- Boil wings in a large pot of water for about 15 minutes.
- Broil wings in oven for about 5-10 minutes per side depending on how your oven works) until nicely browned and crisp.
- I put the bbq sauce in the bottom of a big metal bowl and keep it on the stove near the oven vent so that is warms up a bit.
- Remove the wings from the oven and pat with paper towels to remove more grease if necessary (I bake mine on parchment paper, so that absorbs some of the grease for me).
- Toss wings in bowl with bbq sauce (or any sauce you want) until well covered.
