Number Of Ingredients 4
Steps:
- Use only fully ripened, unblemished fruit.
- Wash and remove pits.
- Chop and mash fruit.
- Place in a plastic container or large glass bottle.
- Dissolve sugar in the vodka or brandy.
- Pour over the fruit.
- Cover and let sit in a cool dark place for 4 to 6 months.
- Strain out the fruit and bottle.
- Your peach brandy is ready to drink!

- Rinse the strawberries with clean water: this will reduce the potential of an infection from wild yeast or bacteria on the fruit.
- Remove the green tops from the strawberries: the green tops can add bitterness to the mash.
- Blend the strawberries once the tops have been removed- be careful to remove all rotten berries.
- While blending the berries, add raisins to the mix a little bit at a time- do this until all 1.5 pounds have been blended.
- Dump the blended strawberries from the blender into a clean and sanitized food safe bucket. Use a brewing bucket with gallon marks on it so you can monitor how many gallons of puree you have.
- Once you have collected 2.5 gallons of strawberry puree transfer to your boil kettle.
- Take a specific gravity reading of the mash- you will need to use a brix refractometer as the mash will be too thick for a hydrometer.
- The Strawberry mash should have a specific gravity reading around 1.024 which would yield around 3.5% ABV.

- Rinse the strawberries thoroughly with a hose, using high pressure spray. This greatly reduces the amount of wild yeast and bacteria found on the surface of the fruit.
- Cut the tops off of the strawberries and discard. You don’t want any of the green leaves in your mash because it could cause bitterness.
- Make sure to discard any rotten strawberries because the bacteria and mold on rotten berries could contaminate the mash.
- Add raisins to the strawberries as you blend them until all 1.5 pounds of raisins have been incorporated into the batch.
- Collect strawberry puree into a sanitized bucket, preferably a bucket with a scale on the side which indicates the number of gallons of liquid in the container.
- Once 2.5 gallons of strawberry puree has been collected, transfer puree to a stainless steel boil kettle.
- Add 3 gallons of water to the 2.5 gallons strawberry puree. You should have 5.5 total gallons of strawberry mash at this point.
- Strawberry brandy mash is much too thick to use a specific gravity hydrometer for determining potential alcohol. It could be done, but using a brix refractometer will be much easier (If you don’t have one, you should get one!).
