2 tbsp olive oil
2 cloves garlic (minced)
1 tbsp Italian seasoning
1/8 tsp red pepper flakes (optional)
1 tsp fresh basil (chopped)
1/2 tsp salt
1 tsp granulated sugar
56 ounces crushed tomatoes (2 (28-ounce) cans)
salt and pepper

Steps:

  • Heat olive oil in a 3 quart saucepan over medium heat until shimmering.
  • Add garlic and saute for 1 - 2 minutes or until fragrant and golden.
  • Pour in the crushed tomatoes and mix with the garlic. Add sugar, Italian seasoning, pepper flakes, basil and salt. Stir to combine. Continue cooking over medium heat for 8 minutes, stirring occasionally. Remove pan from heat.
  • Stir in additional salt and pepper to taste. Use immediately, freeze or refrigerate covered up to 3 days.

Steps:

  • Heat a medium saucepan over medium-low heat. Add the olive oil to the pan, allowing it to warm for 1 minute, then add the garlic and sauté it for 2 minutes, stirring constantly, until it's golden brown and fragrant.
  • Add the crushed tomatoes, salt, pepper, sugar and crushed red pepper flakes (optional), stirring to combine. Simmer the sauce for 7 minutes, stirring occasionally, then season it with additional salt, pepper or sugar, to taste.

1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.

1 small yellow onion, diced
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed chillies (optional)
1 28 oz can crushed tomatoes
1/4 teaspoon sea salt
1/8 teaspoon black pepper

Steps:

  • Heat oil in a saucepan on medium heat. Add diced onion and cook on a low heat for 3-5 minutes until onions are translucent.
  • Add minced garlic and heat for 1 minute ensuring it does not burn. Add dried oregano, dried basil and crushed chillies and allow to heat for about 30 seconds until fragrant.
  • Add can of crushed tomatoes to the saucepan and stir to combine. (You could use diced tomatoes, but you might want to puree the sauce at the end because it will provide a more watery texture.)
  • Simmer on a low heat for 10 minutes and season with salt and pepper to taste.

  • To balance the flavor and thicken the sauce, add 3 tablespoons of tomato paste and 1 teaspoon of sugar to the canned tomatoes.

Serve over cooked spaghetti, ravioli or other pasta; sprinkle with freshly grated Parmigiano Reggiano cheese. Or chill and serve as a salsa with garlic bread sticks or tostitos.

2 (14 1/2 ounce) cans diced tomatoes
1 (28 ounce) can crushed tomatoes
1 cup diced onion
1 tablespoon dried basil leaves
2 teaspoons italian seasoning
1/2-3/4 teaspoon Equal sugar substitute (to taste) or 2 tablespoons Splenda sugar substitute, granules (to taste)
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • In a saucepan, saute the onions, but do not let them brown.
  • To the saucepan, add the liquid drained from the diced tomatoes. Add the basil, Italian seasonings, sugar (or sugar substitute) and crushed red peppers. Simmer liquid and spices for about 30 minutes or until liquid is reduced by half.
