- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and cinnamon; gradually add to the creamed mixture and mix well. Fold in fruits and nuts. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 8-10 minutes or until lightly browned. Remove to wire racks.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, milk and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Steps:
- In bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
- Then add flour and salt; stir until blended.
- Stir in cherries and walnuts.
- Divide dough into thirds; shape each into 10" (25 cm) long log.
- Wrap and chill until firm, at least 3 hours.
- Cut logs into 1/8th" or 3 mm thick rounds and place about 1 inch (2.5 cm) apart, on parchment lined baking sheets.
- Bake in top and bottom thirds of 325 deg F oven, rotating and switching pans halfway through, just until edges begin to colour, 8-10 minutes.
- These cookies brown even faster than shortbreads, so keep a close eye on them! I start checking early, and they're usually done around the 8 minute mark.
- Let cool on pan for 5 minutes, then transfer to wire rack and let cool completely before storing. Store layered with waxed paper in airtight container for up to 2 weeks, or freeze for up to one month.
- Makes about 12 dozen cookies (less, of course, if you cut them a little thicker).
- These are really delicious cookies, well worth the time it takes to make them!
- Hint: If you want to use red and green cherries do not mix the cherries in same batch, they look better if made separately!
- Note: chill time of 3 hours is not included in prep time.
CHERRY NUT COOKIES
A PRETTY cookie which will make your cookie tray at Christmas look good! The cherry and nut combination in a buttery base is delicious! A rolled type dough which can be made and baked later. These cookies freeze very well for make ahead plans. This basic cookie dough I have tried many times substituting different ad-ins.

- Mix softened butter and sugar until fluffy. Add eggs and vanilla, mixing well.
- Combine flour, baking soda and salt in a separate bowl and add to creamed mixture. Stir in candied cherries and pecans.
- Shape dough into long rolls about 2 inches in diameter. Wrap in wax paper and chill at least 4 hours. (May be made days ahead before baking and stored in refrigerator or freezer. Let dough thaw slightly before slicing.).
- Unwrap and cut into 1/4 inch slices; place on ungreased cookie sheet.
- Bake in a 350 degree oven for approximately 10 minutes.

Mum used to make these biscuits for me all the time as a kid, and they are still so good! I think they may have come from a Women's Weekly cookbook, but they're really simple biscuits to make, use basic ingredients and suit so many tastes... whenever they've been made they always go down a real treat (and they look pretty special to!).

- Preheat oven to 180°C.
- Cream the butter and sugar until light and creamy.
- Add the egg and the vanilla, beating well.
- Sift the flour into the mixture and combine to form a soft dough.
- Drop round teaspoonfuls of mixture into the nuts.
- Roll in balls.
- Place onto lined oven trays (allowing room for spreading) and press half a cherry on top of each biscuit.
- Bake for 15-20 minutes or until golden.
- Allow to cool slightly before removing biscuits from their trays.

- Mix the butter, sugar and vanilla extract with a wooden spoon. stir in the flour, then tip in the pistachios and cranberries - you might need to get your hands in at this stage to bring the mix together as a dough. - Butter and line a 20cm square tin with non-stick baking parchment. In a large bowl, combine the biscuits and nuts, halving any larger nuts. Melt the chocolate, butter and golden syrup in a bowl set over a pan of simmering water, stirring occasionally until smooth and glossy, then pour this over the biscuit and nut mixture.
- Tip the mixture into the tin, then flatten lightly - it doesn't need to be completely smooth. Chill for at least 2 hrs or overnight before cutting into squares.
