CREAMY CHILLED BASIL, PEA & LETTUCE SOUP

300g fresh or frozen peas
1 large bunch basil , leaves only
1 head soft lettuce , core removed and shredded
850ml cold vegetable stock
200ml pot crème fraîche

Steps:

  • Cook the peas in boiling water for 3 mins. Drain and cool with cold running water. Put the peas, basil, lettuce, vegetable stock and 3⁄4 of the crème fraîche together in a blender and process until smooth. Do this in two batches. Season, cover and chill for at least 1 hr before serving. Add a swirl of remaining crème fraîche and serve.

Peas, Basil, Parmesan. What's not to love? Very simple italian inspired soup which turns the prettiest shade of green. Wonderful for spring, or any time of year. Very cheap and fast - and tasty! Found in "The Practical Guide to Using Herbs". I suggest using the full amount of olive oil called for, as its a low calorie soup to begin with.

5 tablespoons olive oil
2 onions, chopped
1 stalk celery, chopped
1 carrot, chopped
1 garlic clove, minced
3 1/2 cups frozen peas
3 3/4 cups vegetable stock
1/4 cup parmesan cheese, shredded
1 cup basil leaves, torn
fresh basil, for garnish
salt
pepper

Steps:

  • Heat oil and add onion, celery, carrot and garlic. Cover pan and cook over low heat for 40 minutes, or until veggies are soft. Stir occasionally to prevent sticking.
  • Add peas and stock to the pan. Bring to a boil.
  • Reduce heat and add basil and seasoning. Simmer 10 minutes.
  • Use a food processor or immersion blender to blend until smooth.
  • Return soup to pan and reheat gently until ready to serve.
  • Garnish with cheese and basil.

1 red bell pepper
1 tablespoon olive oil
2 cloves garlic, chopped
1 green onion, chopped
4 cups frozen peas, thawed
2 cups vegetable broth
½ cup chopped fresh basil
salt and freshly cracked black pepper to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Place the pepper onto the prepared baking sheet. Cook under the preheated broiler until the skin of the pepper has blackened and blistered, 5 to 8 minutes. Turn pepper over to blacken all sides. Place the blackened pepper into a bowl and tightly seal with plastic wrap. Allow the pepper to steam as it cools, about 20 minutes. Cut the pepper in half and remove seeds; strip and discard skin from pepper, chop, and set aside.
  • Heat olive oil in a saucepan over medium heat. Stir in the garlic; cook and stir until fragrant, about 30 seconds. Add green onion and roasted red bell pepper; cook and stir for 3 minutes. Stir in peas and cook for another 3 minutes.
  • Pour in vegetable broth, bring to a boil, reduce heat to low, and simmer until peas are tender, about 8 minutes. Stir in basil, remove from heat, and let cool. Pour pea mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return soup to pot over medium heat and cook until heated through; season with salt and cracked black pepper to taste.

2 tsp vegetable oil
1 onion , chopped
800g potato , peeled and cut into small chunks
1l vegetable stock
350g frozen pea
handful mint , chopped

Steps:

  • Heat the oil in a large saucepan, then fry the onion for 5 mins until softened. Add the potatoes and stock, then bring to the boil. Cover and simmer for 10-15 mins until tender, adding the peas 2 mins before the end of the cooking time.
  • Use a slotted spoon to remove a quarter of the vegetables from the pan and set aside. Blend the remaining vegetables and stock in a food processor or using a hand blender until smooth, then stir through the reserved veg, chopped mint and some seasoning. Serve with bread on the side.

1 tbsp rapeseed oil
1 onion , finely chopped
1 large garlic clove , crushed
400g broccoli , chopped into small florets
300g frozen peas
200g chard , chopped
1l low-salt veg stock
½ small bunch of basil , chopped
small bunch of dill , chopped
1 lemon , zested and juiced
2 tbsp pumpkin seeds , toasted

Steps:

  • Heat the oil in a large saucepan. Add the onion and fry for 8 mins until soft and translucent. Add the garlic and cook for 1 min more. Tip in the broccoli, peas and chard, then pour over the stock and bring the mixture to the boil. Reduce the heat to a simmer, cover and cook for 25 mins.
  • Stir through the herbs, lemon zest and juice, then blitz the soup with a stick blender until completely smooth. Ladle into bowls and serve with the toasted pumpkin seeds scattered over the top.

  • Add the vegetable broth, peas, salt, and pepper. Bring to a boil, then reduce the heat to medium-low and cook, uncovered, for 10 minutes.
  • Remove the pan from the heat, then add the basil, Parmigiano-Reggiano, and lime juice. Purée with a stick blender until smooth and creamy. Be patient; you want it as smooth as possible. (If you don’t have a stick blender, let the soup cool slightly and purée it in batches in a blender. Be sure to crack the lid or remove the center cap to allow the steam to escape and cover with a dish towel so it won't splatter.) Taste and adjust the seasoning, if necessary. Ladle the soup into bowls and serve with more basil, if desired. (Alternatively, chill the soup and serve cold.)
  • Note: This soup will thicken as it cools. If necessary, add a bit of water to thin to desired consistency.
