FRIED RED FISH
Steps:
- In a medium Dutch oven add enough canola oil that fish is submerged by 1-inch of oil, and heat oil to 350 degrees F.
- Cut 3 slices into the flesh of the fish, approximately 2-inches apart, or equal spacing between head and tail.
- Hold fish by the tail and open cuts fully and season with the salt, pepper, paprika, and cumin. Repeat with the other side of the fish.
- Mix flours and cornstarch, liberally dredge fish, except tail. Using tongs, place fish, head first into oil, insuring that fish stays upright.
- Cook for 10 minutes or until fish is done.
BROWN BUTTER PERCH
I love perch. I love everything about them--the sweet, delicate flavor, the striking coloration, and the stubborn fight they put up for their size. The key here is getting the butter to a perfect nutty brown. Technically it's still butter, but something happens when it's toasted like this, and it really does become another ingredient altogether.

- Whisk flour, salt, black pepper, and cayenne pepper in a bowl. Gently press perch fillets into flour mixture to coat, shaking off any excess flour.
- Heat butter in a skillet over medium heat until butter is foaming and nut-brown in color. Working in batches, place filets in skillet and cook until light golden, about 2 minutes per side. Transfer cooked fillets to a plate, squeeze lemon juice over the top, and serve.

PAUL PRUDHOMME'S BLACKENED REDFISH
The chef Paul Prudhomme's recipe for blackened redfish once became a national craze. Mr. Prudhomme dipped redfish fillets in butter, dusted them with ground cayenne and a mix of dried herbs, and seared them in a red-hot iron skillet until a black crust formed. The dish became so popular that the redfish population in the Gulf of Mexico came under threat. You could use fluke, flounder or porgy, instead. Any firm white-fleshed fish will do.

- In a small bowl, combine the paprika, salt, onion powder, garlic powder, cayenne, thyme and oregano. Mix well. Set aside.
- Place a large cast-iron skillet over high heat until very hot, about 10 minutes. It will get smoky, so turn on the exhaust fan and turn off the smoke detector.
- Meanwhile, pour 2 tablespoons of melted butter in each of 6 small ramekins; set aside and keep warm. Pour the remaining butter into a shallow bowl. Dip each fillet in the butter so that both sides are well coated. Sprinkle the spice mix generously and evenly on both sides of the fish, patting it on by hand.
- When the skillet is heated, place the fillets inside without crowding and top each with 1 teaspoon of melted butter. Cook, uncovered, until the underside looks charred, about 2 minutes. Turn the fillets over and again pour 1 teaspoon of butter on top; cook until done, about 2 minutes more. Transfer to warmed plates and repeat with the remaining fish. Serve immediately, with a ramekin of butter on each plate.

- Remove Fins, Scales, and Guts. If you have a whole fish that hasn't been cleaned up at all, the first step is to snip off all the fins with kitchen shears, scale the fish, and then slice open the belly and pull out all the guts.
- Check for Scales. This may sound redundant, since the scales were just removed by you or the fishmonger in step one, but it's worth double checking—scales are literally armor, and even a few can make filleting much more difficult to do.
- Slice Behind the Head. Position the fish with its dorsal (back) side nearest you. Using your knife, slice down through the meaty section right behind where it meets the head.
- Remove First Fillet. Now, with your knife, cut along the back (dorsal side) of the fish, right above where the bones are, moving from the head to the tail.
- Flip Fish and Remove Second Fillet. Now it's time to turn the fish over and do the other side; once again, position it so that the back is nearest you.
- Trim the Fillets, and Remove Pin Bones. The next step is to clean the fillets up and get them ready for cooking. I start by trimming the belly flaps off each one.
