NIHARI (PAKISTANI STEW)
this is a traditional brunch item from Pakistan -- served with Naan bread. this recipe is simple to put together but needs to cook several hours. i sometimes make it with boneless chicken + add a stock cube to get the stewy taste. if using beef - you can ask for "nihari meat" (its a special cut of meat) at your local Halal butcher shop.

Steps:
- Heat oil in a heavy based pot.
- Add meat and fry it a little.
- Add salt, chili powder, turmeric, coriander powder and ginger paste.
- Mix well. Add a little water.
- Dissolve flour in half a cup of water and add this to the meat and bring to boil.
- Grind all the whole spices ( spice mix).
- Put all the ground spices in a fine cotton cloth bundle.
- and add to meat.
- OR grind them till powdery fine and add them to the meat.
- Add 3-4 cups of water; cover and leave to tenderize on very low flame. It can take up to 5 - 6 hours if using chicken and more if using beef.
- When meat has softened remove the bundle of spices and make the curry into desired consistency.
- To Garnish--Fry some onion slices in a little oil until golden brown and add to Nihari.
- Also garnish with fresh coriander, ginger and green chilies.

Steps:
- Preheat oven to 400°F.
- Mix first 4 ingredients with hand or stand mixer on medium until softened and well mixed.
- Add next two ingredients and mix on med-low until just incorporated.
- Add spinach and mix on low until just incorporated.
- Transfer mixture to a small ovenproof dish and sprinkling cayenne on top to taste. Top with cheddar. Bake for 15 - 18 minutes or until bubbling around the edges.
- Remove from oven and allow to set for 5 - 7 minutes before serving. Serve with fried or baked pita wedges and tortilla chips.
YUMMY 4 CHEESE SPINACH DIP
This is a recipe I loosely copied from a restaurant I like to go to... but I have changed a lot of things in it. My friends tend to harass me about bringing this dip, and it never stays around for very long...

Steps:
- In a large mixing bowl mix all the ingredients together really well (leaving 1/3 cup of cheddar for the top).
- Put in greased over ready dish (glass, china, anything but a pan or tin).
- Top with remaining cheddar.
- Bake for 15 minute at 375º.
- Make sure it's bubbling! Remove and let rest for 5 minutes.
- Serve with pita wedges, naan or tortilla chips!
- Have fun with it! If you want more or less or certain things don't hesitate, it's a very flexible recipe!

"KELSEY'S" 4 CHEESE SPINACH DIP RECIPE - (4/5)

Steps:
- Mix parm, romano, cream cheese & garlic powder well. Add chopped veggies. Then add spinach. Mix well. Put into a shallow baking dish so that the dip is no more than about an inch deep. Sprinkle shredded cheddar on top. Bake at 400 degrees for about 20 minutes or until bubbling. Serve with tortillia chips or pita triangles. Delish!
ITALIAN RUSTIC SPINACH BREAD
This is a great treat we've enjoyed for each Thanksgiving and Christmas. It's a recipe I developed when I owned and operated Le Petit Gourmet Food Shop in Milford, CT. The bread was so popular it was difficult keeping up with the demand, especially during the holidays. NOTE: It's extremely important to make the dough with bread flour and NOT all purpose flour. Otherwise, if you don't want to make the dough from scratch, just purchase bread dough at your local supermarket, but do not expect the same results.

Steps:
- Lightly spoon flour into measuring cup and level off.
- In large bowl, combine flour, sugar, salt and yeast.
- Add warm water and oil, mix well with fork.
- Turn dough out onto lightly floured board and knead at least 10 minutes until smooth.
- Spray a bowl with cooking spray and place dough inside, and cover with plastic wrap and cloth towel.
- Let rise in warm place (80-85F) for 30-40 minutes.
- Sprinkle ungreased cookie sheet with cornmeal.
- Punch down dough and cover with inverted bowl, and rest for 15 minutes.
- Divide dough into two loaves.
- Roll out one loaf at a time into approximately 12"x14" and spread spinach mixture evenly all over surface.
- Roll up tightly tucking in sides and set aside on a cookie sheet that is lightly covered with cornmeal. Cover with plastic wrap and cloth towel.
- Let loaves rise for another 30-40 minutes.
- Heat oven to 375°F.
- With a sharp knife cut several deep diagonal slits on top of each loaf.
- Brush tops with beaten egg white.
- Bake for 25-35 minutes or until loaves sound hollow when lightly tapped.
- Cool slightly and serve warm.
- Note: For freezing, cool completely and wrap in aluminum foil. Reheat in oven at 350F for 15 minutes.
- Filling Directions:.
- Place thawed spinach in large frying pan over low flame.
- Mix in the balance of ingredients and continue cooking for 8-10 minutes.
- Cool.
- With your hands, squeeze out as much liquid as you can and set aside.

Steps:
- Preheat oven to 350 F.
- Soften cream cheese in microwave, stir until smooth, add jar of alfredo sauce, Cajun seasoning, Worcestershire sauce, and 1/2 of the shredded cheese. Drain spinach and add.
- Place mixture in 8x8 baking dish, top with remaining shredded cheese. Bake for 20 minutes or until cheese on top is bubbly.
- Cut Naan bread into wedges, place in large mixing bowl and add olive oil, toss until coated. Sprinkle on chili and garlic powder and toss. Place on baking sheet and bake for last 10 minutes with dip.
- Enjoy!
