Steps:

  • Wash the dry lentils. Place the split red lentils into a sieve or fine-holed colander. Split red lentils are notorious for having debris in them, so be sure to clean well. Rinse under running water and pick out any obvious large pieces of debris.
  • Pour the washed red split lentils into a saucepan for cooking. Add the water to the pan.
  • Bring the water to a boil.
  • Turn down when it reaches boiling point and simmer. Be sure to stir now and then to prevent sticking to the saucepan.
  • Remove the lentils from heat when they're finished. The red split lentils will be cooked in about 25 minutes. You'll know they're done by observation - they turn into a mush or thick puree.
  • Season to taste with salt and pepper.
  • Use them in a dish that calls for lentils. Cooked split red lentils tend to be added to other dishes but can be eaten alone if you like them. Try them with the following ideas: Use them to thicken soups and casseroles. Add them to vegetable or meat curries. Turn them into kofte.

1 cup masoor dal red lentils, picked through for stones
2 cups water
1 onion, diced
4 cloves garlic, thinly sliced
One 1/2-inch piece ginger, peeled and minced
2 medium tomatoes, diced
1 serrano chile, sliced in 1/2, optional
1/2 teaspoon cumin seeds
1/2 teaspoon black mustard seeds
Generous 1/2 teaspoon turmeric powder
1/2 teaspoon paprika or bafaat powder
1 tablespoon vegetable oil
Handful chopped fresh cilantro leaves

Steps:

  • Put the lentils in a strainer and rinse them under running water. Add them to a bowl, cover with water and let soak for 30 minutes. Drain and set aside.
  • In a medium saucepan, combine 2 cups of water, the onions, garlic, ginger, tomatoes, chile, if using, and the lentils. Bring to a boil over medium-high heat. Skim any scum from the surface. DO NOT ADD SALT YET; it will toughen the lentils, thereby lengthening their cooking time. Lower the heat, cover the pot with a lid and gently simmer until the lentils are tender, almost translucent, and almost falling apart, about 30 to 40 minutes.
  • Whisk the lentils, releasing its natural starch, and mash some them so the mixture becomes thick. Add salt, to taste.
  • Tempering oil (bagaar): In a small bowl, combine the cumin and mustard seeds. In another bowl, combine the spice powders. Have all the ingredients ready because this will move very fast!
  • In a small skillet, over a medium-high flame, warm 1 tablespoon vegetable oil. Once the oil is shimmering, add seeds and immediately cover so you don't get covered in spluttering oil and seeds! Add the spices. They should sizzle and bubble a little - that's the blooming and it's exactly what you want. Don't let them burn. The mixture should bloom for about 30 seconds, no more.
  • Pour the oil mixture into the lentils, standing back so you don't get hurt when the mixture splutters again. Stir to combine. Transfer the lentils to a serving dish and garnish with cilantro.

This is so fabulous. Oh my gosh it is delicious and actually not that hard to make. You can find turmeric and garam marsala at any Indian Food store and most Asian food stores. It has a super spicy (not hot but strong flavor) Indian flavor and can be hot depending on how much ground red pepper you put in.

1 1/4 cups red lentils
1 medium onion, chopped fine
1/2-1 hot green chili, finely sliced
2 teaspoons ground cumin
1/2 teaspoon ground turmeric
1 teaspoon finely sliced ginger (or more to taste)
6 cups water
4 -6 boneless skinless chicken breasts
2 1/4 teaspoons salt
1 tablespoon oil
1 teaspoon whole cumin seed
2 -4 cloves garlic
1/2-3/4 teaspoon ground red pepper
2 tablespoons lemon juice
1/2 teaspoon sugar
1/4 teaspoon garam masala

Steps:

  • Combine the lentils, onion, green chili, ground cumin, turmeric, half of the chopped ginger and 6 cups water in a big heavy pot.
  • Simmer and cover leaving lid slightly ajar for 45 minutes.
  • Next add chicken (cut into small pieces) and salt.
  • Bring mixture to a boil and then simmer for another 30 minutes or until the chicken is tender.
  • Next get a small pan out and put the tablespoon of oil in it.
  • When hot, put in the whole cumin seeds.
  • As soon as the seeds begin to sizzle (this just takes a few seconds) put in the remaining ginger and garlic.
  • Saute until garlic is slightly brown.
  • Now put in the red pepper and lift the pan up immediately and dump everything into the pot with chicken and lentils.
  • Finally, add the lemon juice, sugar, and garam marsala.
  • Stir to mix and cook for another 5 minutes or so.
  • You can top each serving with fresh cilantro if desired.

5 cups water
1/2 teaspoon ground turmeric
5 tablespoons vegetable oil
1 teaspoon cumin seed
2 -4 garlic cloves, peeled and finely chopped
1 medium onion, peeled and cut into fine slices
1/2 lb cabbage, cored and finely shredded
1 -2 hot green chili pepper, seeded and finely sliced
1 1/2 teaspoons salt
1 medium tomatoes, peeled (or not)
1/2 teaspoon fresh ginger, peeled and finely grated

Steps:

  • Pick over, wash, and drain the lentils.
  • In a heavy-bottomed pot, bring the lentils and water to a boil, skimming off any scum that rises to the top. Stir in the turmeric. Cover pot, with lid slightly ajar, and simmer over low heat for 1 1/4 hours, stirring occasionally.
  • While the lentils are cooking, heat the oil in a frying pan over medium heat. Add the cumin seeds and cook for 3 to 4 seconds, then add the garlic. Once the garlic pieces start to brown, add the onion, cabbage and green chilies. Cook the cabbage mixture, stirring often, until it starts to brown. Stir in 1/4 teaspoon salt. Turn off the heat.
  • After the lentils have cooked for 1 1/4 hours, add and stir in the tomato, the ginger, and 1 1/4 teaspoon salt. Cover and continue to cook for 10 minutes. Add the cabbage mixture. Stir to mix and allow to simmer uncovered for a few minutes to reheat the cabbage.

200g red lentils, washed
900ml water (approx.)
1 tsp of salt
Masala: 1 tbsp ghee or vegetable oil
1 tsp of cumin seeds
1 bay leaf
1 small onion, chopped
1 garlic clove, chopped
2 tomatoes, finely chopped
1 tsp ginger, grated
1 tsp ginger, grated
1 chilli, finely chopped
1 tsp fenugreek leaves
1 tsp of garam masala
Garnish: 1 or 2 whole chillies
Handful of coriander, chopped

Steps:

  • Place lentils in a pan with the salt, cover with the water and bring to the boil.
  • Remove the froth, reduce the heat and put the lid on the pan - leave to simmer for 10 minutes. Check the lentils are cooked by squeezing them between your fingers. Once soft remove from the heat.
  • In a frying pan heat the oil or butter. Using a fork pierce the whole chillies and add to the pan with a bay leaf and the cumin seeds.
  • When the seeds sizzle, remove the chilli and set to one side for your garnish.
  • Add the onion and garlic and fry until lightly browned. Reduce the heat and add the tomatoes, ginger, turmeric, fenugreek and the chopped chilli. Gently let the ingredients cook down for about 10 minutes to make a thick masala paste.
  • Add a ladle full of the lentils (dhal) to the masala paste in the frying pan and stir together, then empty all the contents back into the pan with the lentils and stir. It should have the consistency of a thick soup but if it's too thick just add a little boiling water and remove from the heat. If you prefer it thicker just leave it on the heat to reduce until you get the consistency you want.
  • Check the seasoning and add a little salt if required. Stir in the garam masala, coriander and top with the whole chillies to serve.

1 tbsp olive oil
2 medium onions, finely chopped
1 red pepper, finely diced
2 tbsp tomato purée
200g red lentils
2 ham stock cubes (or vegetable, for a vegetarian version)
chilli flakes, to taste
salt and pepper, to season
crusty sourdough bread, to serve (optional)

Steps:

  • Start by putting the lentils in a sieve and rinsing them under cold water to remove some of the excess starch.
  • Heat the oil in a pot and add in the onions. Turn the heat down to low and leave the onions to gently cook until soft and translucent, about 5-10 minutes.
  • Stir in the tomato purée until all the onions have been coated and cook for about 2 minutes.
  • Next, add in the red pepper and mix in with the onions.
  • In the meantime, dissolve the two stock cubes in a litre of boiling water.
  • Add the red lentils and the ham stock to the pot and stir. Leave the soup to simmer for 10-15 minutes.
  • If you would like to purée the soup, do so now. I like to give it a few quick pulses with my stick blender to remove any large chunks of onion or pepper, but don´t purée it until completely smooth.
  • Season the soup to taste with chilli flakes (if you like a little spice), salt and pepper.
  • Serve hot, with some crusty bread and butter. The soup can also be easily reheated the next day or frozen.
