AUNT HELEN'S GREEN CONGEALED SALAD
Posted in response to a request. I rec'd this recipe from my aunt in 1971. Prep times are estimates; I don't recall how long it takes to chill the Jello "til thickened."

Steps:
- Dissolve jellow in boiling water; add vinegar; chill til thickened.
- Whip evaporated milk; fold into thickened jello together with remaining ingredients.
- Turn into buttered 8 cup mold and chill til firm.

BEANS-N-GREENS SALAD
TIDBIT: clean your greens in a sink full of cold water. The grit will fall to the bottom of the sink or bowl. Dry greens on paper towels in dish drain board or in a salad spinner. Clean greens, veggies and herbs when you bring them home from the market. As you cook all week long, your produce is ready for you to use, no fuss, no mess, no wasted time.

- Arrange the greens on a large platter or in a salad bowl. Top with beans and red onions.
- In a small bowl, combine garlic, sugar and vinegar. Whisk in oil. Pour dressing evenly over the salad. Dressing may also be made in blender or food processor. Season salad with salt and pepper, serve.

This is Ree's favorite salad to serve at a BBQ. You don't have to stick to these exact ingredients-anything that is green can go in. Switch things up with asparagus, Granny Smith apples or anything else you fancy-as long as it's green!

- For the dressing: Add the spinach, hummus, olive oil, pesto, honey, salt, pepper and lemon zest and juice to a small blender, then blend until smooth.
- For the salad: Add the romaine, kale, peas, Pecorino Romano, basil, cucumber, scallion, avocado and green pepper to a large bowl. Add the dressing and toss to combine. Transfer to a serving platter or bowl.
JAN'S BEG FOR THE RECIPE SALAD DRESSING
My fabulous stepmother, Jan, has made this salad dressing for years, and everyone she serves it to just loves, loves loves it! She can't serve this, without almost everyone at the table begging her for the recipe; thus, the name I blessed the recipe with! :-) This is a bit of a sweet dressing, so it goes particularly well in a green salad, with a sliced fruit (like strawberries). Try a salad of mixed greens, feta cheese, sliced strawberries, and walnuts or pecans, as this makes a beautiful and delicious salad! I have also used it on a number of other types of salads, as well, and it works beautifully with most combinations! The recipe calls for vegetable oil, only because it keeps better in the fridge (when you make a generous amount to keep on hand all through the week, which I highly recommend), but you can also make it with olive oil, or an oil of your choice. I use almost no other salad dressing now! Thank you, Jan, for a real gem!

- Mix all ingredients in salad dressing bottle, and shake well, until well mixed.
- If using a bowl, add all ingredients, except oil.
- Mix with spoon, then whisk in oil.
- Keep chilled in fridge.

Steps:
- Boil jello with 2 C water for 2 minutes. Add pinapple and soft boil for 3 more minutes. Add marshmallows to melt. Cool. Mix with mixer until foamy, add cottage cheese and pecans - mix. Then fold in the stiff whipped cream. Pour into mold and chill.

- Scrub potatoes and boil with skins on until just barely fork tender. I usually cut the large ones in half to speed the cooking process. Time varies but it's usually in the 20-25 minute range based on the size of your spuds. Note - If you cook them to long, you'll have mashed potato salad, so don't do that! Drain, rinse with cold water and drain again. Let potatoes cool until you can handle them, but they are still a little warm. Peel potatoes. Let cool completely and then cut into bite sized chunks.
- Sweet Onion Note - whether or not you can find sweet onion, or need to make do with regular onion, I highly recommend rinsing the onion first, if it's got a strong onion order. Nothing ruins a potato salad like onion that's too strong. Put the chop onion in a fine mesh strainer and rinse with very hot water until the strong onion smell is gone, about 15-20 seconds.
- Combine chopped potatoes, chopped eggs, sliced green onions, chopped sweet onion, chopped radishes and celery and toss gently.
- In medium bowl mix Miracle Whip, salad dressing, mustard, sugar and vinegar until well combined. Taste and tweak with a little more mustard, vinegar or sugar, if preferred.
