HOW TO COOK THE PERFECT FLANK STEAK
Instructions for how to pan sear the ultimate flank steak. Whether you marinate or use a simple seasoning this recipe for cooking flank steak on the stove is super easy.

Steps:
- Rub the flank steak on both sides with oil and season with salt and pepper. Let the steak rest on the counter at room temperature for 10 minutes.
- Heat skillet or griddle on medium heat. Hover your hand over the skillet or grill a couple of inches to ensure that it is nice and hot.
- Slowly lay the flank steak on skillet or griddle. Let it cook for about 3-4 minutes. Flip the flank steak and cook for another 3-4 minutes or until it reaches your preferred doneness (125F for rare - 130F for medium rare - 135F for medium).
- Take the flank steak off the skillet and let rest for 5 minutes before slicing. Carve the steak into thin slices against the grain.
- Serve.

FLANK STEAK SIZZLED STRIPS
This is sort of a stir fry..steak strips are very quickly fried in a sizzling hot heavy skillet and the addition of balance of ingredients makes a wonderful dish served over cooked noodles or rice. Do try it.

- Cut flank steak in half, lengthwise. Having the meat half frozen makes it easy to cut.
- Cut crosswise into very thin 1/16" slices.
- Season meat with soy sauce and garlic powder. Allow to set about ten minutes.
- Heat oil in heavy skillet over high heat till oil is hazy.
- Toss in a handful of steak strips and very quickly stir a few seconds until meat just begins to lose its color; remove immediately to a dish and cover with foil to keep warm.
- Repeat with balance of meat and continue till all finished and removed to dish.
- Now, toss the onions and green pepper into same skillet and saute a minute.
- Dump in the bouillon and cook a few minutes over high heat; this allows the liquid to reduce somewhat.
- Add salt and freshly ground pepper to taste.
- Turn down heat.
- Toss in steak strips and heat, if necessary, just till meat is hot.
- Do not cook any further! Time is of the essence here--if you let that meat cook longer, you will be serving strips of leather.
- Serve on bed of rice or over broad noodles.
- Serves 4 generously. If you need to stretch it to serve more people, add more onion and pepper.

CROCK POT OR SLOW COOKED FLANK STEAK

- Season the flank steak with salt and pepper and place into a slow cooker. Add the carrot and onion; season with thyme and bay. Pour in the water.
- Cook on High for 4 hours; turn the steak over and press down into the liquid. Continue cooking until a fork easily passes through the meat, about 4 hours more.

NO GRILL FLANK STEAK
A tree limb fell through the Weber kettle and we decided not to replace it. We haven't missed it at all. A hot oven and a cast iron grill pan are much easier for just the two of us. We like flank steak. We cut it into meal-sized pieces and cook it quickly. You don't even need to marinate it.

- Optionally, marinate the steak for the amount of time appropriate for the marinade being used. Marinating is NOT necessary but a choice.
- About 25 minutes before you intend to cook the steak, place the cast iron grill pan in the oven and pre-heat the oven to 450 F
- At this time, also take the steak out of the refrigerator and allow to come to room temperature.
- If you marinated the steak, dry it thoroughly with paper towels. If the steak is wet when it hits the pan it will stew rather than grill.
- Rub the steak on both sides with the olive oil.
- Season to taste. Simply using salt and pepper makes a tasty steak that tastes of pure BEEF. Any dried herb or spice mix may be used.
- Place the steak on the pre-heated grill pan and bake for 5 minutes.
- Flip the steak and bake an additional 5 minutes. This results in a medium rare steak by the time it is done resting.
- Remove from the pan, losely cover with foil, and allow to rest for 10 minutes.
- Slice very thinly perpendicular to the grain. Flank steak will be tough cut any other way, including at an angle as recommended in so many recipes.
- If you have leftovers, slice and reheat briefly in a buttered skillet to make a truly sinful steak sandwich.
TENDER FLANK STEAK
Marinated flank steak cooked on the BBQ. The most tender and flavorful steak! You may want to add a pinch of salt if you are using light soy sauce.

- Whisk soy sauce, Worcestershire sauce, and garlic together in a bowl; pour into a resealable plastic bag. Add the flank steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator 8 hours to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove flank steak from the marinade; shake to remove excess moisture. Discard remaining marinade.
- Cook steak on the grill until beginning to firm and is hot and slightly pink in the center, about 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Slice against the grain of the meat to serve.
